someone's frames. LIGHTER AND HEALTHIER These are recipes chosen from the main index that are lighter and healthier. Others can be made lighter with minimal alterations as indicated by the suggestions in the parentheses. These are changes I have tried and which do not compromise the integrity of the recipe. You will also find some tips and suggestions throughout the page. I am not a nutritionist nor have I researched fat percentages or nutritional values in these recipes. I have done a lot of reading, enough to know what works for me and my family. I believe the most important concepts are moderation and portion control. Splurge occasionally, eat what you enjoy, but moderate the intake of calories and fatty foods. Keep in mind that lower fat does not necessarily mean lower cholesterol. If you are on a restricted diet, consult your doctor and nuritional experts. INDEX

What should we have for dinner? (my do's and don'ts for menu planning)
I try not to duplicate ingredients. If I start with Crostini with Gorgonzola, I won't serve Risotto with Gorgonzola; or if I start with a cherry tomato pizza, I won't serve a main-course chicken with tomatoes.
I try to think about varying flavors (arugula, fennel, and radicchio salad with raisins) and colors (mixing different colored cherry or heirloom tomatoes or bell peppers).
I like to start with a first course, whether it's soup, a salad, a tart, pasta, a pizza, or even a couple of small plates. (I love firsts!)
I like to balance heavy and light dishes, richness, and intensity of flavor throughout the meal. If I start with a soup, I serve a substantial main, but if I start with a pizza, I'll serve a light main. If I've done pasta as a first, I won't have as much starch with my main course; if I've served a fairly substantial meal, I'll serve a lighter dessert like fresh fruit sorbet or ice cream and a cookie. If one course has been heavy on the butter and cream, the next will be light; if I have one highly flavored or spicy course, the next will be refined.
I always, always, always take seasonality into consideration. If it's summer, I'll celebrate it, whether with tomatoes, basil, or peaches. In winter, I like to use all those heartwarming, stick-to-your ribs comfort foods like butternut squash and Brussels sprouts, turnips, rutabagas, and parsnips.

    The blueberry muffins I opened had been in my food storage room for four years and after making them, they tasted as fresh as if the mix had been put in the can yesterday. When mixing, there were some soft lumps in the batter that didn't stir in easily. However, after baking the muffins, the lumps disappeared. Cooked and ready to eat...
    On the second batch, I ran the mix though a sifter which quickly got rid of the lumps in the mix before I added any water. With the lumps sifted out, this second batch of muffins mixed up in a matter of seconds. The whole family really loved these muffins. They were fluffy and melted in our mouths. They have a light vanilla flavor and in my opinion are good enough that they don't need butter to make them good. Honey Wheat Bread And Roll Mix Dry Mix...
    We made both rolls and loaves with the Honey Wheat Bread And Roll Mix. The recipe suggests using only 6 cups of mix to make three loaves of bread. The instructions on the can doesn't mention that it was designed for 4-1/2" X 8-1/2" pans. If you have 5"X9" bread pans, use 7 cups of the mix instead to make three larger loaves, or 10 cups mix for a larger pan 4 loaf batch. Computing yeast and water requirements for these different sized batches, for each cup of mix you'll need 3/8 cup water and 1 teaspoon (1/3 tablespoon) yeast. Freshly Baked From The Mix...

    Let's face it- sometimes vegan cooking can be a bit time consuming - but there are ways to make a nourishing dinner that is time consuming and frustrating to make. An essential ingredient, pasta. can work wonders. Pasta is tasty, fast and economical, too! Coordinate your dinner and you can have it on the table in a mere 15 minutes!
    Hot Pasta Tips:
    Never skimp on water because the pasta needs to be able to "move around" while it is cooking, otherwise it will stick together - and be a mess to work with. A good standard to follow is to use about five quarts of water for each pound of pasta.
    Be sure to use a pot large enough to accomodate five quarts of water. A seven or eight quart pot should do the job. In addition, never fill the pot to the brim with water as you need to leave room for the boiling lest you boil half of the water all over your stove top!
    Contrary to popular belief, you do not have to add oil to cooking pasta. If you use enough water and stir the pasta occasionally while it is cooking, your pasta will not stick together. This helps you reduce calories as well.
