    Pasta or Pizza Sauce with Fresh Tomatoes
    1 Tbs oil
    1 onion, diced
    2 cloves garlic, minced
    12-14 Roma tomatoes (about 1.5 pounds) peeled and diced
    1 small can (4 oz?) tomato paste
    1 Tbs or so Italian herbs
    1 Tbs sugar
    1 tsp salt
    1/4 tsp pepper
    Bring a pot of water to boil and carefully put the tomatoes in for a few minutes, then drain. This makes the peels just slide right off.
    Saute the onion and garlic in the oil until soft. Add everything else and simmer for 30 minutes. If it looks a bit thicker than you'd like, add a bit of water. I've made this before with canned diced tomatoes but not yet fresh. I'm just at the simmering point as I write this and have already added a bit of water. I think alot of the juices ran off the cutting board when I was dicing them. The garden is loaded with Romas right now so if this turns out well, I think I'll make a quadruple or more batch tomorrow and freeze it in pizza-sized portions for this winter.

Come out, come out, wherever you are, and bring your munchkins-your 12-and-under set, that is. Food writer, industry consultant, and educator Lynn Fredericks returns to The James Beard Foundation this month, encouraging adults and children to join forces in the kitchen and "use their noodles," both literally and figuratively. "What would you make for a four-year-old who calls a green grape 'too spicy'?!" Susan Brenna asks in an article in Newsday about eating with children. Fredericks has some ideas. "The key to my menus with children is to come up with good-for-you twists on old standards, with a surprising side dish that challenges their palates," Fredericks advises. In her family cooking classes at the New School and Peter Kump's New York Cooking School, she has enticed even the most finicky to prepare and sample blue cornbread, Chicken Goober Stew (the use of peanut butter in this Nigerian dish seems to intrigue kids), Thai-inspired turkey meatball soup, and banana crumble. Fredericks is also author of the recently published Cooking Time Is Family Time

    Many people think of pizza when they think of oregano, for a good reason. Oregano has a strong natural affinity for tomatoes. And it is an indispensable element of Italian cooking.
    Every herb and spice is distinctive in the particular phytochemicals it contains. Natural plant substances, called phytochemicals, have been shown to have cancer-fighting properties. Hundreds of phytochemicals have been identified, each highly specialized in the way it can protect health.
    A recent U.S. Department of Agriculture study shows that oregano offers the most antioxidant activity of all herbs examined: 42 times more antioxidant activity than apples, 30 times more than potatoes and 12 times more than oranges. Oregano contains quercetin, which has strong antioxidant properties and may be especially protective against breast, ovarian and endometrial cancers.

    Pasta Pizza
    A fun pizza, with ingredients and flavors on a flavorful "pasta crust!"
    Ingredients ounces Italian turkey sausage Nonstick cooking spray green bell pepper, chopped cup sliced cremini or white mushrooms cup chopped onion cloves garlic, minced teaspoons Italian seasoning teaspoon dried oregano leaves tablespoons reduced-sodium tomato sauce ounces thin spaghetti, cooked and kept warm egg whites, beaten tomato, sliced of 3-ounce can pitted ripe olives, rinsed, drained and halved (optional) cup (3 ounces) shredded reduced-fat mozzarella cheese tablespoons finely chopped fresh basil or parsley Cook sausage in small skillet until browned. Drain well; crumble and set aside. Spray large nonstick skillet with cooking spray. Heat over medium heat until hot. Add bell pepper, mushrooms, onion, garlic, Italian seasoning and oregano; cook and stir 5 to 8 minutes or until vegetables are tender. Stir in tomato sauce. Combine vegetable mixture, sausage and spaghetti in large bowl; mix in egg whites. Spray same large nonstick skillet with cooking spray. Heat over medium heat until hot. Add spaghetti mixture to skillet; pat into even layer with spatula. Cook, covered, about 5 minutes or until browned on bottom. Loosen bottom and side of pasta with spatula; invert onto large plate. Slide pasta back into skillet. Arrange tomato slices and olives on top of pasta; sprinkle with cheese. Cook, covered, about 5 minutes or until cheese is melted. Sprinkle with basil. Serve immediately.
