    Back to Haiti Society In the mid-1980s, the Haitian government estimated that the average daily nutritional consumption level in the country was 1,901 calories per person, including 41.1 grams of protein. These figures represented 86 percent and 69 percent, respectively, of the World Health Organization's recommendations for adequate nutrition. In rural areas, the average person consumed about 1,300 calories, including 30 grams of protein per day. A national survey in 1978 showed that 77 percent of children in Haiti were malnourished. Anemia was also a common problem among children and women. Infant and child health were poor. The infant mortality rate was 124 per 1,000 live births in 1983. A quarter of all registered deaths occurred among infants who were younger than one year old; half of all deaths occurred among children under five. Most of these deaths resulted from infectious diseases, especially diarrheal illnesses. Malnutrition and acute respiratory illness also presented serious problems for infants and children. For adults, malaria was among the more serious problems; some 85 percent of the population lived in malarial areas. Tuberculosis and parasitic infections continued to be serious health hazards, and typhoid fever was endemic. Poor sanitation contributed to poor health indicators. In 1984 less than 20 percent of the population had toilets or latrines. Only one-fourth of the rural population had access to potable water. Life expectancy at birth was forty-eight years in 1983, and the general mortality rate was 17 per 1,000 population.

2500 years ago, Hippocrates, the "Father of Medicine", said to his students, "Let thy food be thy medicine and thy medicine be thy food". Moses Maimonides, the great 12th century physician, repeated the Hippocratic statement when he said, "No illness which can be treated by diet should be treated by any other means". In essence, Hippocrates and Maimonides were insisting that their students practice nutrient therapy This type of medical therapy is being used by doctors today, but only by a minority. It is more likely to be applied by nutritionists who have studied the specialist subject of nutrition in depth. There is little training in nutrition at medical schools and unless a doctor has pursued the study of nutrition out of choice, he or she is unlikely to be sufficiently informed to advise about optimum nutrition. In 1968 one of the great minds of this century, twice Nobel prize winner Linus Pauling, coined the term

  • Admission to the School of Graduate Studies
  • Applications are accepted for the MS in Clinical Nutrition at any time during the year. Guidelines for applying are found in the Graduate Catalog, on the ETSU Web site at www.ETSU.edu and can be obtained by contacting the AHSC Program Director. Dietetic Internship applications are accepted once per year in mid-February. The American Dietetic Association and the Commission on Accreditation for Dietetics Education set this deadline in conjunction with the national computer matching process. Applicants will be notified of admission status in April for the Dietetic Internship Program. Students who are not applying for the internship program may be admitted and begin graduate course work at the beginning of any semester. Internship or Practicum The dietetic internship requires an additional 18 credits in supervised practice/practicum settings. Students complete these under the guidance of registered dietitians at 16 different clinical, community and food systems management sites. The internship didactic course work begins in mid-July and ends the following May and the practicum rotations are in fall and spring semesters. Students in the internship will be responsible for costs related to clinical rotations including but not limited to: 1) liability insurance; 2) transportation; 3) professional membership fees and 4) required medical screenings. This program is offered with the support of James H. Quillen College of Medicine. For more information about the program, please contact the Program Director at 423/439-7532 or 423/439-7537.
