Happy New Years!! I hope everyone had a great new year's celebration, and I give out my wishes for another good year.
For this article I would like to talk about what we must pass on to future generations and what should be renewed now that we have entered a new century. What Japanese cooking have neglected and what should be revived would be focused and hopefully we can carry it out at Ajiiichii.
Home cooking and Expert cooking
Having talked about being not wasteful in cooking(December 1999) which played an important role in improving Japanese cooking, now the emphasis is on home cooking. Home cooking is the basis for all cooking, because it is where basic cooking aspects were reconsidered and refined.
Ajiichii is famous for its home cooking taste which it serves. I would not doubt that, since the experts are making home style cooking with their skills. Home cooking by definition are meals that people ate when they were growing up that used, to the full extent, the natural ingredients that were original to the region and them cooked in the old traditional way. Recipes like nikujaga(braised beef and potatoes) and imo-no-nikkorogashi (braised potatoes) are popular examples of traditional home cooking.

My mother was SuperMom. She cooked most everything we ate from scratch, hung the laundry outside on a clothesline because it smelled better than drying it indoors, and made a lot of my clothes herself. There were always homemade cookies in a tin in the kitchen, and she was the best Room Mother for all my classes in grade schoolno store-bought cupcakes at our class parties! When I got older and needed less of her attentive care, she got a job as cook (and eventually assistant manager) of a preschool, taking care of sixty or seventy kids belonging to other people. When I left home I had some adapting to do. I quickly got used to the smell of clothes dried in the dryer. I never had the patience to learn to sew, possibly because it wasn't that hard to get Mom to do my sewing and mending on my visits home. However, since having her cater my meals and snacks from hundreds of miles away just wasn't very practical, I did eventually learn to be a pretty good cook. I have a huge collection of recipes that I've picked up over the years. A lot of them are my mother's. Some are from other relatives, some clipped from magazines, newspapers and cookbooks, and a few are my own creations. Here are some of my favorites. Try them, share them, but if you would, please give credit to the creator (or to the person I borrowed it from, as the case may be). Enjoy!

GRILLED GREEN BEAN AND RED ONION SALAD
SALAD 1 1/2 lb. green beans, trimmed 2 tbsp. olive oil Light the grill. Toss the green beans with the oil. When the coals turn gray, use tongs to set the beans in a single layer on the grill. Cook them for about 4 minutes, turning them often. The beans should char in spots, but do not let them burn all over. They are cooked when they look slightly wilted. Remove the beans from the grill and return them to the mixing bowl. Cover the salad tightly and refrigerate for several hours or dress it and serve right away. DRESSING 1/4 c. fresh lemon juice

Her university education is in Food Science and Nutrition from Brigham Young University . GLOSSARY
Chelow - This basic rice dish is served with nearly every Iranian meal. Fragrant, long-grained varieties (basmati makes a good substitute) are cooked with saffron, roghan (ghee, or clarified butter), and yogurt to produce a dome with a rich, golden crust. The crust, called the tah dig, chelow is not served at a meal, often its place will be taken by a polow, a more elaborate version in which the rice is layered with meats, vegetables, and fruits such as sour cherries. This dish has descendants across the globe, whose relationship can be traced through etymology: The medieval Persian pulaw became the Turkish pilav, the American pilaf, the Russian plov, the Indian pulao, and even, via Africa, the Caribbean perloo.

The Chinese Year of the Goat begins on February 1. Although I've lived in the United States for many years, I still hold to Chinese New Year traditions and host a party each year. After all the hubbub of the Western holidays has faded, it's nice to have one more chance to gather with friends and family to enjoy good company, well-wishing, andmost of alla delicious feast. Food is integral to a healthy, happy new year in Chinese tradition, and certain foods are considered especially auspicious: Chicken stands for prosperity and joy, while dumplings represent togetherness and heavenly blessings. Pork and beef symbolize wealth and strength, while vegetables and tofu bring harmony and prosperity. Noodles stand for a long, happy life, while shrimp represents happiness and good fortune. A whole fish symbolizes surplus and prosperity, and sweet rice cake brings safety, good fortune, and a sweet New Year. I try to include most of those foods in my New Year's celebration. But instead of working in the kitchen for days as my mother did, I enlist the help of guests. They may choose to bring a dish like the ones featured here, or they can pitch in to help make dumplingsa customary social warm-up for the feast to come.

Monday, February 7, 2005; 12:00 PM Wed., Feb. 9, is an important day in the lunar calendar, observed by many countries throughout Asia. It is New Year's Day, marking the beginning of the Year of the Rooster (4703 on the lunar calendar). Although it varies by country, the celebration, which includes New Year's Eve (Tues, Feb. 8), encompasses centuries-old traditions that affect the household, the family and the kitchen. Food plays an important part in the festivities, no matter where New Year's is celebrated. Chinese culinary expert Grace Young will be online to take your questions and comments about the Lunar New Year, and its many food traditions. Author of "The Wisdom of the Chinese Kitchen," Young is on tour promoting her most recent title, "The Breath of a Wok," and teaching Chinese New Year cooking classes at Sur La Table locations around the country.

The New Year brings with it countless resolutions that are often set aside as quickly as the Christmas tree. But, New Year's resolutions don't have to be a lesson in futility. It's as simple as making choices that fit within your lifestyle. If you've been eating a super-sized fast food lunch for the last five years, resolving to have celery and water this year is setting yourself up for failure. Why not opt instead to cut those trips to the fast food joint down to once or twice a week and decide to walk there instead of drive? You're so much more likely to succeed with goals like that. Since so many New Year's resolutions involve health issues, it's important to note that it's not necessary to give up your favorite foods. However, think about how you can update them to include healthier ingredients or, if that's just not possible, reduce the amount of them that show up in your normal menu. If you love french fries, why not experiment with some of the great oven-baked recipes out there? Or, if you're really partial to the real thing, try to limit your consumption of them. Telling yourself that you will never eat another fry is not very realistic especially if they are on your list of favorite foods. Try to find ways to improve your lifestyle that won't cramp it or better yet will be fun for you to do. Going for walking break instead of a coffee break with your best friend and talking about life is so fun that it hardly even feels like something that's good for your body! Making food that's healthy for you doesn't have to be boring either. Enjoying a meal of grilled salmon tacos with fresh salsa is so tasty that you'll have to remind yourself that your meal is also healthy fuel for you.
