Ingredients: 10 Very thin slices firm white sandwich bread
2tbs. Unsalted butter, melted
3 1/2 oz. Caviar (preferably osetra) Special equipment: a 2-inch ring mold
Method:
  • Brush bread with melted butter and cut out 40 discs
  • Arrange, buttered sides up, on a large baking sheet and bake in middle of oven until pale golden, about 10 minutes
  • Cool completely
  • Serve toasts topped with sour cream and caviar (Makes 40 hors D'oeuvres)
    Chive Infused Salmon Caviar Mousse in Endive
    Ingredients: 2 8-ounce containers whipped cream cheese 3 tbs. Whole milk 4 oz. Thinly sliced smoked salmon, cut into 1/2-inch pieces 2 tbs. Chopped fresh chives 2 Heads of Endive 1 2-ounce jar red salmon caviar Method:
  • Using rubber spatula, mash whipped cream cheese and milk in medium bowl to blend
  • Fold in salmon and chives
  • Season with pepper to taste
  • Cover and refrigerate 2 hours to blend flavors (can be made one day ahead)
  • Peel and wash endive leaves
  • Pat dry and place 1 tsp of room temperature salmon mixture onto the larger, sturdier end of the leaf

Fortunately dining at home costs considerably less than dining out, so your budget doesn't have to be stretched too far. Mix and Match for More Fun Although ritual may be rewarding in that it connects us to tradition, I am suggesting that you break out of your routine this year. Instead of giving an extravagant formal seated supper, with all of the attendant performance anxiety, why not have a casual buffet and serve an assortment of plates that can be mixed and matched easily. Your guests will be more relaxed, and so will you. As opposed to formal plated service, the buffet format allows people to eat as little or as much as they like. If they don't eat meat, there still will be enough interesting items for them to try. Yes, eating healthy is important, but this is a once a year indulgence, so a bit of dietary lenience is probably justified. Planning Makes Perfect Plan the menu well ahead of time What follows are some delicious and not too difficult dishes. Most can be prepared ahead of time and hold well in the refrigerator. Just remember to bring "cold" food to room temperature for maximum flavor and to cook or warm "hot" food sufficiently for it to heat through. But mum's chicken curry was special -she would slip in some kaffir lime leaves along with ground up prawn powder, tumeric, chili paste, and the taste was something you secretly inquired after, when papa was not listening. When can we have it again mum? She would smile and ask if you liked it, and the next time papa was away it would inevitably be served again. Mum's magic was in how simple and magical she made cooking. Slicing things up with a whir of her big cleaver, pairing east and west in tastes that would linger in your thoughts for days after, and fast, was she ever so fast! She did so many things, I don't know how it all fit into the 24 years I've had to watch her.

Like much American cooking , New England has produced a local cuisine that exercises frugality and simplicity in the face of seemingly unending abundance of the New World. For better or worse, English cooking was the model boiled meats, casseroles, and puddings heavy, filling foods that combat the cold and don't offend God by being too fussy and decadent. Native Americans also had an influence on colonial cuisine, both in the ingredients they introduced, such as corn, beans, and maple sugars, and the methods they used. Their frequent use of maple syrup to flavor foods, nearly as often as we now use salt , may be why American food so tends towards the sweet: yams, honey-roasted ham, sweet relishes with roasted meats. Despite its meager, rocky soil, New England proffered a bounty of raw ingredients, fish of all kinds especially cod, which was salted for the winter and shellfish. One colonial diarist moans that he is forced to eat lobster for every meal: lobster lobster lobster!

When I married, I found out those were also a tradition in my husbands home as he grew up. Soooo, for the past 35 years they have been a New Years tradition in our home. We vary the recipe a little from year to year and we try to use the flat head cabbage. It seems we get a few more whole leaves from this variety. Cabbage rolls freeze very well and we really like them so we make a big recipe, but, it can be reduced to make enough for one meal. This recipe is not written in stone. Vary it to your own taste. New Years Cabbage Rolls; Large recipe 2 tablespoons oil
    3 to 4 cups chopped onion
    2 cups chopped celery
    1 cup chopped bell pepper
    6 pounds ground beef
    6 pounds ground pork
    4 cups cooked rice
    4 eggs
    1 10 ounce can diced tomato with green chilies
    Salt and Pepper to taste
    Cayenne pepper to taste (optional) 4 cans diced tomato 2 to 3 heads cabbage In a 12 inch heavy skillet add the oil, onion, celery, and bell pepper.

    New Years Eve 2002 Dinner
    Connie put me in charge the night before, so I was more than a little nervous. Finally decided to do Southwest as a theme because I just couldn't get pumped about Greek. We use the Pasqual cookbook. It's a terrific restaurant in Santa Fe. We had an incredible menu thanks to the efforts of Phil, me, 'Rents, Jennie and Bob. Can you believe it, we were the main cooks.     My mouth is watering looking at this New Years meal. With just two weeks to another New Years I'll be checking the mail for my invitation. I'm just hooking up my new home theater. I got my Samsung 50" DLP last week and happened on your blog while trying to find out about the Comcast Motorola PVR. It led me to check with Comcast where I got the expected "we know nothing" answer. I did find out that the DVI connection on my 5100 isn't activated. The Samsung has an input so I hope they get this thing cooking soon (there I am thinking about food again). Anyway, thanks for the information. I appreciated the list of Seattle area hi def stations. They really make watching television a different experience.
