Among the Kanaks, dance has developed into a high art form. The traditional pilou dance tells the stories of births, marriages, cyclones or preparations for battle, although colonial authorities banned pilous in in 1951 for the high-energy and trance-like state they induced in the dances. Music is a fundamental element of every traditional ceremony, and the range of instruments includes conch shells, rhythm instruments and bamboo flutes. The Caldoches, or white New Caledonians, are mostly descended from French convicts and have forged their own culture, more akin to that of rural Australians or rural Americans than the metropolitan French. New Caledonia's traditional staples are fish, coconut, banana, taro, sweet potato and yam. Lobster, coconut crab, dugong and turtle are also traditional food sources, as is roussette, the local flying fox. Unfortunately, much traditional fare is being superseded by canned and processed goods, although you will still come across the bougna, a delicious combination of taro, yam, sweet potato, banana, and pieces of chicken, crab or lobster wrapped in banana leaves and cooked in a ground oven. Many restaurants serve standard French fare with all its eccentricities, although the Vietnamese, Chinese and Indonesian restaurants generally serve up better value. The French, of course, take both their coffee and their wine seriously, and both are excellent.

It became a French Overseas Territory in 1946. From time to time, attempts have been made by the indigenous population to free themselves from French rule. The most serious of these was the Kanak Revolt of 1878, which was only subdued after a guerrilla campaign lasting for more than a year. In recent years, intermittent conflicts have flared up between the Melanesians and the French, reflecting the widely differing attitudes that exist towards the various plans for self-government. The majority of Kanaks (Melanesians) now support the Front de Liberation Nationale Kanak et Socialiste (National Kanak Socialist Liberation Front, FLNKS) created in 1984 and led, until his assassination in 1989, by the charismatic Jean-Marie Tjibaou. The Front is the largest party backing independence, which remains the overriding political issue in the territory.

Airlines: Air New Zealand and Aircalin from Auckland; Qantas and Aircalin from Sydney; Aircalin and Qantas from Brisbane. Air Caledonie operates domestic services from Grande Terre to the Loyalty Islands or the Isle of Pines.
Airport: Tontouta International Airport, 45km northwest of Noumea. Coach companies, public buses and taxis operate regular transfers between Tontouta and Noumea.
Banking: Bank hours are 7.30am-3.45pm Monday to Friday. Most bank branches can be found on Av de la Victoire. The Banque Caledonienne d'Investissement (BCI) is open Saturday mornings. American Express on the ground floor of Center Voyages, on Av du Marechal Foch, changes travellers cheques and cash.
Business Hours: Shops and offices open from 7.30-11.30am and 1.30-6.30pm Monday to Friday, closing for lunch from 11.30am-1.30pm. Some shops open on Saturday and supermarkets are usually open Saturday and Sunday mornings. The Noumea Market, with its fresh local produce, is held daily at the Baie de la Moselle. It opens from 5am to 11am daily, and is closed the third Monday of the month.
Communication: Mail, telephone and internet services are available in most areas. Post Offices are open 7.30am-3.45pm weekdays. The main post office is at 9 Rue Eugene Porcheron in Noumea. International direct dial is available via a modern satellite communication system. T©l© Nouvelle Cal©donie broadcasts French programmes. Radio stations include the private Radio Rythme Bleu and the government-owned Radio Nouvelle Caledonie and Radio Djiido. The daily newspaper is Les Nouvelles Caledoniennes. The only English paper is the International Herald Tribune.
