Why do so many people automatically assume that Mexican food is better suited to beer than wine? Well, you're probably thinking, Mexican food is spicy, and beer is refreshing case closed. There's just one problem with that assumption: It's not exactly true. Mexican dishes aren't so much hot as they are bold and complex. A couple of years ago, more than 400 people attended the Culinary Institute of America's Worlds of Flavor Conference, devoted to the regional cuisines of Mexico. In a session on pairing wine with Mexican dishes, participants tasted wines from around the world along with a variety of Mexican sauces as they debated the often-startlingly delicious combinations. "Wine is the human race's most refined beverage," declared conference chairman Rick Bayless, acclaimed expert on Mexican cooking and the chef/owner of Chicago's Frontera Grill and Topolobampo, considered by many the best Mexican restaurant in the United States. "Wine tastes of the earth; it has the finesse of nature. So I'm committed to pairing it with real Mexican food, which is both sophisticated and elegant." The key, according to Bayless: salsas. They are the foundation of real Mexican cooking. Most salsas contain no meat or dairy products, but they do boast piquant and often-powerful flavors thanks to chiles, roasted garlic, lime, cilantro, and other bold seasonings.

Scientists believe people living in central Mexico developed corn at least 7000 years ago. It is actually a type of grass. The original corn did not look like the corn we know today. The kernels were spaced farther apart and were differently shaped. Now, corn kernels are tightly packed and similarly shaped. The most common type of corn you will most likely find on dinner tables around the country is known as sweet corn and is shown in the picture. It had arrived via email from Edelman, the New York public relations firm who handles the SECTUR (Secretaría de Turismo) account in the United States. I thought it was terrific that I had finally been included as a worthy member of the travel media, but traveling with a group? That’s something I’ve never been very good at or fond of. It sounded way too organized and, well, tediously friendly for one who isn’t always either. But there, right in my face, in the itinerary was the hook – Copper Canyon. The one place in Mexico I, embarrassingly, had never been. Since it’s not on the way to a warm water beach, I have avoided it for thirty years. Big mistake – because Barancas del Cobre is as wild and magical a place as I have ever seen, even though I experienced it as a tour geek traveling unaccustomedly in first class.
