Sentinel staff writer And if you want to hear her steady stream-of-consciousness commentary on the good and evil of the Mexican palate, you really just have to cling to her small, sweater-clad figure as she mutters, charms, scolds and praises her way through the narrow, crowded maze. The author of five books on the regional cooking of Mexico and an internationally recognized authority on Mexican cuisine (lauded by some as "the high priestess of Mexican cooking"), Kennedy, clutching the handle of a big round basket, was on a mission. She didn’t want the little commercially grown flor de calabaza flowers for her soup. "No no!" she said to a woman standing over a pile of bright yellow flowers. "Don’t you have the big ones? You know, the calabacita India?" While keeping her eye sharp for the big, open-throated squash flowers that bloom in the Michoacan rainy season, Kennedy pointed out the natives: local cherries, mountain blackberries, wild mushrooms, apples of the Sierra Madre, chiles de huerta; and also the invaders: big flavorless tomatoes, Red Delicious apples, pesticide-laden strawberries, bland chiles.

Glossary of Mexian Cooking Tortillas: A basic part of most any Mexican meal. They are made either of wheat flour (popular in the north of the country) or ground corn, and are best served hot. When fried, they are called tostadas. Frijoles (beans): A standard Mexican dish served with just about everything. Frijoles de olla are boiled beans with seasoning; frijoles refritos are beans mashed and fried. Salsa: Hot sauce, served with most everything. It may be made of red tomatoes or green tomatoes (or both), and usually contains chili pepper, onion, salt, and other seasonings. The texture varies from liquid to chunky and relish-like. Each cook and each restaurant has their own recipe. Guacamole: Avocado mashed or blended with green tomatoes, chili peppers, onion, garlic, and other seasonings.
