Mexican Cooking Workshop

The Baja California Language College is proud to present Mexican cooking workshops on select Saturdays throughout the year. The workshops are hosted by professional chef and Spanish instructor, Edith Alvarado. Edith is a native of the Mexican state of Oaxaca and has over 25 years experience teaching the preparation of both regional and national specialties.
Workshop participants prepare a variety of Mexican dishes from chiles rellenos to specialty soups and salsas. Students learn to make masa and prepare hand made tortillas for quesadillas, tacos, burritos or enchiladas. Menus change from week to week.
The workshop begins at 9:00 AM when participants arrive for an orientation and a light breakfast. Students are taught some fundamental Spanish vocabulary and they will determine what ingredients will be needed for the days recipes. After the lists are compiled, students break into groups and venture off to various Ensenada mercados to purchase the items needed for the days meals. Once everything has been purchased, everyone returns to the college to begin the preparation. The workshop will run until about 3:00PM.

Some recipes A look into the cooking of Mexico will lead you on a journey back to the Pre-Columbian era, through the Spanish conquest and colonization, into the kitchens of Maximilian of Hapsburg and across the country of today, peeking into bowls and sniffing the contents of terra cotta containers. Though Mexican cuisine has become diversified, it is still firmly rooted in history. We have to go back to 700 B.C… The Meso-American civilization, or "corn" civilization, was already well-established. The staple food of all the Indian tribes, corn, was the line between man and the gods, both a common bond and a source of quarrels among the tribes. Though the young ears could simply be boiled and the juicy kernels bitten off, Indian women learned other ways of using and cooking the corn. They served it as a kind of porridge, "atole," for breakfast. When simmered with meat, it became "pozole," and the women transported it in gourds to the fields to feed the workers. Ground into flour, it was made into tortillas, the flat rounds that were either soft or crunchy, or into tamales, stuffed with beans or vegetables. Corn was also part of feasts: the flour, dissolved in water, was set aside to ferment in order to make a strong beverage flavoured with chilies or chocolate.

Intensive Spanish + Mexican Cooking Course
Mexican cuisine is justifiably famous all over the world. The range of dishes and flavours is quite astonishing and you don't have to be an expert to be able to make some of the most delicious dishes at home. But you will need some help and advice - and that's what we can provide at IH Riviera Maya. What's more our kitchen is located in our beautiful garden, so there is plenty of space for everyone to work.
The first class includes a visit to a typical grocery store and a market in Playa so that students can learn the names of all basic ingredients. The cooking classes themselves start by demonstrating some of the basics of Mexican cooking - guacamole, fajitas, pico de gallo (tex-mex sauce), quesadillas, molletes, tacos, enchiladas, enfrijoladas, sopes and pambazos - and then we move on to more specialised dishes such as mole, pozole, pipian, tamales and adobo.

Hispanics have had a profound and lasting influence on American history, values and culture, and not the least of these influences is the integration of Mexican food into the American diet. Burritos, enchiladas, tacos, nachos and just about any type of the spicy, chile-laden fare are staples in restaurant, party and home cooking scenes. Dining on Mexican cuisine and sipping Margaritas often is associated with relaxation and that full, sleepy feeling that Mexican food provides. But, as much as we love to eat it, we also know that many dishes can be high in fat and not very healthy. Today's American-style, Mexican foods have resulted from the combined culinary influences of early Spanish settlers and indigenous peoples. Burritos, Chimichangas, tacos and taquitos are considered Mexico's " Northern cuisine." Basic recipes vary from region to region, but foods such as these took their strongest hold in the northern-most region of Mexico, which borders the United States. The food has become a part of the American diet, regardless of our heritage. Many of these recipes, however, are very high in fat. Studies show that obesity is on the rise. Approximately one-third of adults in this country are overweight or obese. Being overweight puts us at greater risk for diseases such as diabetes, heart disease, high blood pressure and some forms of cancer.

Mexican Tomatillo Soup Shows Regional Flavor

Food in the Yucatan reflects influences of the ancient Mayan culture. The Mayans, as well as Aztecs, the ancient native culture most associated with Mexico, were fond of tomatillos, also called tomate verde. They are a cousin of the tomato, which Mexicans call jitomate or tomate, depending on the region of the country. This dish also calls for fresh tuna, typical of use of the excellent seafood from local waters in Yucatan cooking. Tomatillos are most commonly used in salsa verde cruda, the green table sauce, and salsa verde, the lightly cooked sauce used for enchiladas and chilaquiles. Both these loose, green sauces often call for lightly-boiled tomatillos, because cooking eliminates their raw taste and rounds out the lemony, clean flavor we enjoy in most dishes featuring this Mexican native.

Veg-Mex Meatless Mexican cooking for the holidays By Yovanna Bieberich I LOVE MEAT. I'd be a failure as a vegetarian. Now, don't get me wrong. It's not as if everywhere I eat, a cow must die. I just happen to enjoy an occasional slab of medium-rare juicy joy. A couple weeks ago, when I obtained a copy of Nancy Zaslavsky's Meatless Mexican Home Cooking (St. Martin's Griffin; $15.95), I eyed it rather skeptically. Zaslavsky's first book, A Cook's Tour of Mexico , was nominated for the 1996 James Beard Award, and for good reason: her recipes are authentic culinary recordings of the flavorful heritage of Mexico. From Nov. 11 to 13, Zaslavsky will be participating in a three-day series of workshops and seminars on traditional Mexican cooking methods and recipes at the Culinary Institute of America at Greystone. On Nov. 16, she brings a special presentation of Mexican-style holiday dishes to Ramekins, the Sonoma Valley culinary school. "Mexico, of course, doesn't have a Thanksgiving celebration, but I've chosen some recipes used during the holidays in Mexico to suggest people try out," she says. The recipes include both meat and meatless dishes.

This spiked eggnog with the funny name (rohm-POH-peh) is so popular in Mexico that a pasteurized version is sold in liquor stores. You can enjoy it, mostly as an after-dinner drink, any time of year. As an alternative to brandy, you can substitute rum.
Preparation time: 25 minutes, plus chilling
Yield: 8 to 10 servings (7 cups)

6½ cups milk
1½ cups sugar
2 whole allspice berries
2 small cinnamon sticks
2 whole cloves
5 egg yolks
1 cup brandy Combine 6 cups of the milk, 1 cup of the sugar, allspice, cinnamon, and cloves in a saucepan and bring to a boil. Simmer, stirring occasionally, for about 15 minutes. In a bowl, combine the egg yolks with the remaining ½ cup milk and the remaining ½ cup sugar and whisk until smooth. Slowly pour a few cups of the warm milk mixture into the bowl and whisk.

A Day of Appetizers
Salas Silva, Tlaxcala, Mexico, August 22nd, 2000
Night had fallen by the time we arrived at the double doors that front Salas Silva , the hacienda-style home of Jon Jarvis and Dona Estela. Jon opened one of the double doors that front his home and invited us inside. We entered a small candlelit porch and followed our host into an antechamber that was similarly illuminated by candlelight and was graced by a small fountain that tinkled a cheerful welcome. We then went through a doorway and suddenly found ourselves in a large, open room, once again candlelit, where we were accomodated on comfortable sofas and refreshed with Margeritas. It was an enchanting end to what had been a long day's journey from Mexico City via the lovely city of Tlaxcala. The next morning we were able to discover the layout and situation of the hacienda more exactly. The hacienda stands on open ground close to a lake. In the distance and in three different directions, the volcanoes Popocatepetl, Ixtaccihuatl and La Malinche can be seen. Later that morning we gathered in the kitchen where our lesson in preparing Mexican appetizers was to be conducted by Dona Estela and her brother. In no time at all we found ourselves chopping, slicing, mixing and so forth under the careful guidance of our teachers and by the end of the morning we had prepared the following dishes:
