1 onion, chopped in large pieces
1/2 cup canola oil
1 clove garlic, chopped
1/4 cup parsley, diced in small pieces
1/4 cup fresh dill, diced in small pieces
1 cup chicken broth
3 large tomatoes, cut in small chunks,
seeds removed
2 zucchini, cut in large chunks
8 new potatoes, skinned, cut in1/2" slices
2 large carrots, cut in 1/2" slices 1 green pepper, seeds removed, cut in 1/4" slices 3 stalks celery cut in 1/4" slices 10oz. Frozen peas, thawed salt and pepper to taste Directions: Saute onion in hot oil in your pressure cooker for 2 minutes. Stir in garlic, parsley and dill and cook for 1 minute. Stir in broth, vegetables and salt and pepper. Close lid and bring to high pressure. Lower heat to medium and cook for 5 minutes. Release the pressure, remove the lid and stir vegetables. Drain any excess liquid.

This long cooking oven recipe calls for chuck roast, carrots and potatoes.

Six Hour Stew - 3 pounds cubed chuck roast 1 can cream of mushroom soup 1 soup can of water 3 stalks celery 8 carrots, thickly sliced 4 large potatoes, quartered 1 envelope dry onion soup 3 onions, sliced 1 large can whole tomatoes 1 tsp basil 4 tbsp tapioca Place all ingredients in a heavy roaster with a tight fitting lid and bake at 275 degrees for 6 hours. DO NOT OPEN THE OVEN DOOR DURING COOKING TIME! Notes: I use 4-5 onions and 2 quart sized jars of canned tomatoes. I have also made this stew using chicken (deboned thighs) and it was great. It is good without meat as well.

Below is a short discussion on cooking, handling and seasoning of meats. For the most part this is a short meat safety course! Cooking meats properly is of great importance. Uncooked and undercooked meats can cause many health problems so follow the guidelines. The most important guideline to stamp on your forehead is; Cook all meats to the proper internal temperature. Many people become frustrated when attempting to cook in the microwave because they do not realize that most recipes for microwave ovens are written for the 700-watt oven (the industry standard). Don't be discouraged if your first attempt is not a glowing success. It takes time to learn how to cook in your microwave oven. Now for the few recipes that I have. One of the first things I did when I started cooking in my microwave, was to buy a microwave cooking book and followed it exactly, until I was comfortable with using the microwave. The second thing I did and this very important, I kept a notebook beside the microwave and as I experimented with different recipes, I marked down the time it took to cook that recipe. Then there was no more guessing! There is no set conversion from conventional to microwave cooking. Remember when you are converting a recipe, use less liquid (almost 1/4 less) because there is less evaporation; and you can almost eliminate using salt. Foods containing liquid, sugar and fat cook faster. So reduce the cooking time by 1/4 of conventional cooking and then gradually increase until you obtain the desired result. Beef Beef is USDA graded as follows (from best downward): Prime, Choice and Select. (Remember PCS). Choice and Select are normally found in your local grocery. Prime is sometimes found in specialty meat markets but usually reserved for restaurants. There are lower grades but you'll not usually find them in your grocery! Un-graded meat is also available and many stores carry it. Is it a good grade? Most probably so, but, you must know that up front so you can modify the way you cook it to compensate for the lower quality!

MEXICAN PORK CHOPS (Chuletas de Puerco con Chile Verde) Recipe by: Bruce McKay; modified from recipe by Amalia Ruiz Clark Serves: 4 Ingredients: 4 pork chops, 3/4" to 1" thick pinch salt and pepper 1/4 cup flour 1 Tbsp cooking oil 3/4 cup onion, finely chopped 1 cup diced green chiles (a 7 oz can) 2 cups Mexican style sliced stewed tomatoes, (a 14.5 oz can) 2 tsp dried oregano, crushed 2 tsp onion powder 1/2 tsp garlic powder 1 oven bag, 14" X 20" Preheat oven to 275F. Sprinkle pork chops with salt and pepper; dredge in flour to coat. Heat oil in skillet and lightly brown pork chops on both sides. Place baking bag on 11"x15" baking tray or in shallow baking dish of the same size. Lay pork chops at the closed end of the baking bag and roll the top of the baking bag back to expose the chops; spoon chopped onion and diced green chiles onto the top of each of the pork chops, covering evenly. Sprinkle covered chops with oregano, onion powder, and garlic powder. Spoon stewed tomatoes into spaces between covered pork chops. Elevate open end of baking bag, gradually pour liquid from stewed tomatoes into bag, then secure open end of bag with nylon tie. Puncture top of baking bag with four small holes. Place tray or dish with baking bag and contents in oven and bake at 275F for three hours. Spoon sliced tomatoes and liquid from baking bag onto tops of pork chops when serving. Broiling Cooking in liquid Pan-frying Soup-making ... Pressure Cooking Roasting : Season meat with salt and pepper, if desired. Insert meat thermometer so that tip reaches the center of the largest muscle. (Tip should not rest in fat or on bone.) Place roast fat side up, on rack in an open roasting pan. Meat will brown as it roasts. Do not cover, do not add water, do not baste. Roast in slow oven (325') until done. See oven chart or recipes for roasting time. Broiling : Preheat broiler or not, according to directions for your range. Place the meat on rack of broiler pan. For thin steaks, place near heat; not so close for thicker ones. See range booklet for specific directions. Broil top side till nicely browned. Season with salt and pepper. Turn; broil second side till brown and meat is done the way you like it. (One turning is all it takes.) Season; serve at once.
