Albrecht, Extension Food Specialist Previous Category Catalog Order Info Food stands, bake sales, bazaars and other food sales provide good opportunities for organizations to raise money, but the food you prepare and offer for sale must be safe for the consumer. When customers buy food, they have the right to expect that it will be safe and wholesome. If customers are unhappy with the products they purchase from you, they will not be back. Word-of-mouth advertisement from a bad experience may hurt future business. Sponsoring organizations are responsible for the safety of the food products they offer for sale. The Nebraska Food Service Code has rules for Temporary Food Service Establishments. Food stands, bake sales, bazaars, and community suppers could be inspected by the Department of Agriculture or Department of Health under this ruling. Bake sales and church/community suppers are not routinely inspected, but commercial food stands at county fairs and other events are. If complaints are made or if a reported illness results from food sold at an event, inspection and/or investigation may result. A "Temporary Food Service Establishment" is defined as a food service establishment that operates at a fixed location for a period of time of not more than 14 consecutive days in conjunction with a single event or celebration. If your food sale event extends beyond this definition, your event and facilities will be regulated by the appropriate agency (either the Nebraska Department of Agriculture or your local health department).

Current Situation Foodborne illness is a major health issue facing Americans. Between 6.5 million and 81 million cases of foodborne illness and as many 9,100 related deaths occur annually. Millions of illnesses and thousands of deaths in the United States can be traced to contaminated food. Illnesses from pathogenic bacteria appear to be increasing each year. The economic devastation of this disease is considerable, with an estimated $420 spent on direct medical costs and $7.3 billion attributed to lost productivity annually. Americans expect many things from their food supply. They want variety and quality; and they want nutritious, safe foods at a reasonable cost. The definition of good quality can be varied depending upon the type of food and the individual's food preference. Some of the important characteristics of quality include wholesomeness, freshness, nutritional value, texture, color, aroma and flavor. To many consumers, safe food means that there will be no danger from pathogenic microorganisms, naturally occurring toxins and other potentially harmful chemicals which may be deliberately added to foods. However, scientists generally agree that microorganisms pose a greater threat to human health than other sources of foodborne illnesses. Foods don't cause illness; bacteria and other pathogens do. However, raw foods of animal origin - meat, poultry, eggs, fish, shellfish - frequently are contaminated with bacteria common in the food chain. In other cases, healthy food handlers may contaminate food with bacteria common in the human body, or diseased food handlers may contaminate food with lesser common pathogens.

About Food Poisoning In most cases of foodborne illness (food poisoning), symptoms resemble intestinal flu and last a few hours to several days. But in cases of botulism, or when food poisoning strikes infants, the ill, the elderly, or those with compromised immune systems, life-threatening complications can result. Microscopic organisms that cause foodborne illness are everywhere-in the air, soil, water, and in human and animal digestive tracts. Most are capable of growing undetected in food because they do not produce an "off" odor, color, or texture. The only way these microbes can be prevented from causing human illness is by handling and storing food safely.

Source: Spread when contaminated food (meat, poultry, eggs) is eaten raw or undercooked. Also, when cooked food comes in contact with contaminated raw food, or when an infected person prepares food.
Symptoms (after eating) : Onset: 6-48 hours; nausea, fever, headache, abdominal cramps, diarrhea, and vomiting lasting 2-7 days. Can be fatal to infants, the elderly, the infirm, and the immune-compromised.

Food Safety for the Chronically Ill
The chronically ill, such as those undergoing cancer treatments and individuals with AIDS, diabetes or kidney disease, are more susceptible to contracting a foodborne illness because of their weakened immune systems. Once contracted, these infections, with their severe vomiting and diarrhea, can be difficult to treat, and they can come back again and again. Three types of bacteria that grow on food and cause foodborne illness are of particular concern for persons with weakened immune systems. For example, AIDS patients are 100 times more likely to become ill from salmonella , 35 times more likely from Camplobacter and also much more likely to get listeriosis (which is often fatal for AIDS patients) than the otherwise healthy person. Salmonella bacteria, the most common cause of foodborne illness, are commonly found on raw or undercooked meats (especially poultry) and can be found in eggs even before they are cracked open. Camplyobacter jejuni bacteria are also found on raw poultry, but raw milk and contaminated drinking water can also be sources.

WHAT IS FOODBORNE ILLNESS?
Foodborne illness often shows itself as flu-like symptoms such as nausea, vomiting, diarrhea or fever. Often people may not recognize that the illness is caused by bacteria or other pathogens on food. Thousands of types of bacteria are naturally present in our environment. Not all bacteria cause disease in humans. For example, some bacteria are used beneficially in making cheese and yogurt. Bacteria that cause disease are called "pathogens." When certain pathogens enter the food supply, they can cause foodborne illness. Only a few types cause millions of cases of foodborne illness each year. Most cases of foodborne illness can be prevented. Proper cooking or processing of food controls bacteria. They can grow in just about any food but are fond of protein foods, such as meat, poultry, seafood, eggs and dairy products, as well as high-protein vegetables such as beans and grains.

Bacteria may be present on products when you purchase them. Raw meat, poultry, seafood, and eggs are not sterile. Neither is produce such as lettuce, tomatoes and melons.

By Umut Newbury and Megan Phelps Ideas about the importance of local and organic food that took root in the 1970s have blossomed into a Real Food Revival that now supports large numbers of small-scale farmers and growers on the local level. One reason for this growth is that consumers are beginning to voice their concerns about the food they buy in the supermarket. Declining freshness and flavor, factory farm pollution, inhumane treatment of animals, pesticide residues and an overabundance of processed food are all pressing consumers to look for better food choices. These days, more and more customers are getting on board. The Organic Trade Association estimates that the organic industry has been growing at a whopping 21 percent a year since 1997, as compared with a 3-percent growth rate in total U.S. food sales. Another significant influence has been Slow Food International, which was founded in 1986 in Turin, Italy, and works with farmers and food lovers worldwide to preserve traditional and regional foods, from wines and cheeses to rare vegetables and meat. In fact, the Real Food Revival is deeply rooted in traditional farming practices, and its momentum is the result of the efforts of individual farmers, ranchers, restaurant owners and community leaders who are working to promote the healthy, sustainably produced food that is the hallmark of such traditional farms.

Omega-3 fatty acids are a type of polyunsaturated fat that are best known for their heart protective and proposed anti-inflammatory effects. Fatty fish and cold water fish are excellent sources of omega-3 fatty acids. These include: salmon sardines tuna mackerel trout herring , and swordfish Walnuts canola or soybean oil ground flaxseed products , and omega-3 enriched eggs are also good sources of omega-3 fatty acids. I have high cholesterol. Can I eat eggs?
Studies show that for most healthy people, it's the total fat, especially saturated fat (found in fatty meat, chicken skin, full-fat dairy products and coconut and palm oil) and trans fats (found in processed foods and many snack foods) that have the greatest effect on blood cholesterol levels. When total fat and saturated fat are reduced, dietary cholesterol will be reduced as well. A large egg contains about 70 calories, 6g of protein, 5g of fat (of which less than 2g is saturated fat), and about 210 mg of cholesterol. Compared to the egg white, the yolk portion of an egg contains most of the vitamins and minerals - and cholesterol - found in the egg.

Plus there are so many really cheap dry foods that say Complete and Balanced on the label...why not pick up a 50 pound bag of dry for $8.75? And somehow it doesn't seem to get stale, either. But are these three parameters (cheap, convenient and preserved) reasonable factors upon which to make such an important decision as the nourishment of our pet dogs and cats? Cheap, convenient and preserved may actually be unfavorable attributes... Should conscientious parents feed their children bags of corn chips and boxes of cereal simply because these foods are convenient, cheap and preserved? And Complete and Balanced written on a bag of pet food tells you absolutely nothing about the real quality of the ingredients. It simply means that if the pet eats a specific amount of the food the contents will keep a pet alive for a period of time. And price...should a pet owner make health-impacting decisions based solely on the fact that the food is inexpensive? There is a reason those corn-based dry foods are so cheap. Take a look at the price per pound of a bag of corn... not much different from that generic bag of pet food, is it?
