Pack your bags, sunscreen, and shades and let's go South of the Border! Mexican food seems to be America's new favorite cuisine - right up there with pizza - and sunny months like this beckon for the warm spices, tangy salsas, and savory snacks of old Mexico and its brethren, the Southwestern states north of the border. But there's a new rage sweeping the United States, one that takes the palate way, way, way south of the border - into Latin American countries like Argentina, Brazil, and Chile. Specialty restaurants featuring sausages, steaks and other meats grilled gaucho-style are popping up coast to coast, while recipes for pungent Argentine chimichurri sauce, Cuban picadillo, and Puerto Rican papayas are popping up in mainstream cooking magazines. This month, I'm, feeling playful - get me out of the kitchen and into the great outdoors! But not without a few excellent Latin meals served alfresco. Summer to me means salsas and salads, grilling sauces, and crunchy late-afternoon snacks. Come with me to the open air and see how well the sunny flavors from Santa Fe to Santiago whip up into easy outdoor meals.

Colombia stretches over approximately 1,140,000 sq. km, roughly equal to the area of Portugal, Spain, and France put together. Colombia occupies the northwestern end of South America, and is the only country there with coasts on both the Pacific (1350 km long), and the Atlantic (over 1600 km.) Three Andean ranges run north and south through the western half of the country (about 45% of the total territory.) The eastern part is a vast lowland which can be generally divided into two regions: a huge open savannah on the north, and the amazon in the south (400,000 sq. km aprox.)

Buena Vista Social Club. Much like Ry Cooder went to Cuba for a stripped down experience of origins of Cuban music, I went to Latin America to commune with the local cooks in each country I visited…to learn the base secrets of the traditions of each cuisine in order to share them in this book. How do you see your book being used?
An increasingly Latin American population in North America has given us unprecedented exposure to various Latin American cuisines and their ingredients. My hope is that this book will serve as a roadmap for taking this new context and making great Latin-influenced food at home. What is your favorite food region? Why?

American food - that's burgers, steaks and piles of doughnuts, right? Er, no, not really, and certainly not at armadillo. Brazilian born chef/owner Rogerio David takes his culinary inspiration from throughout Latin America, from Mexico to Argentina, Brazil and beyond; and there is not a burger bun in sight. Instead the menu is spiked with South American ingredients such as spicy poblano chillies, cassava and various punchy salsas. This isn't the place to come if you're after some plain meat and potatoes. The genius of David's cooking is that, as peculiar as the ingredients or combinations may at first seem, the way that they translate on the plate is always thoroughly convincing, thanks to the chef's well-considered balances of hot, sweet, earthy and spicy. The Latin American experience is a beginning-to-end affair at Armadillo, starting with Margaritas, Pisco sours, and Mexican beers, and finishing with say, Mexican coffee flavored with cinnamon, or a drink favored by South American called mate, a kind of tea made from a dried herb. The wine list is dedicated mainly to Chilean and Argentinean wines and, like the food is attractively priced. This is the sort of cooking that Londoners deserve more of.

Latin American Heritage Camp in Colorado is one of the few camps of its kind in the country, designed specifically for families with children adopted from Central and South America, as well as those of Latino heritage adopted within the United States. It is one of ten camps facilitated by the highly respected Colorado Heritage Camps, Inc. Latin American Heritage Camp is a family camp with programming for each member of the family. Campers from toddlers to grandparents participate in classes and workshops taught primarily by Latino Americans who enthusiastically share their expertise with adoptive families.
Latino American counselors serve as role models and mentors to the children as they participate with them in cultural classes while adult family members attend cultural and adoption related workshops ranging from Latino cooking and customs to the blessings and challenges inherent in our adoptive families. LAHC also encourages young adult Latino adoptees to join us as counselors to gain a deeper understanding of their culture while sharing their own adoption stories with each other and their younger counterparts.

Yucca, also known as manioc or cassava, is a white, starchy tropical vegetable that was originally grown by the indigenous peoples who resided in the countries now known as Columbia, Venezuela, and Brazil. These people used yucca as a dietary staple, typically milling the yucca into flour or making a paste from it. Today, yucca is grown on plantations throughout many Latin American countries including Costa Rica and Cuba. As yucca grows, it is cultivated into a bush-like plant, whose fibrous root is the edible part. An important aspect to growing yucca properly is knowing when to harvest it. If harvested too late, damages to the root can occur, such as root rot or the root turning into a wood-like state. Both types of damages make the yucca unacceptable for consumption and can destroy a crop's worth. Thus, yucca farmers take care to ensure that their yucca plants are grown according to proven methods. This ensures that the yucca develops properly and that the farmers can consistently sell their crops. Because yucca is a versatile vegetable, its usage has spread to many non-Latin populations. For example, 10.5 million lbs. of yucca were sold last year in the United States alone. Additionally, every day more people are becoming aware of its use in cooking. This is because it can easily be substituted for potatoes in soups and stews and it contains a high amount of vitamin C and carbohydrates. Yucca is also a good source of dietary fiber and contains approximately 120 calories per 3.5-ounce serving.
