Ground into meal, it is used in Mexico to prepare the corn pancakes known as tortillas. Tortillas provide a variety of other Mexican specialties. Enchiladas are tortillas dipped in sauce, then rolled up with a filling of pork or chicken and baked or broiled. Tostadas are tortillas fried crisp and sprinkled with onion, chili peppers, grated cheese, or meat. Quesadillas are tortillas folded over a filling of meat, beans, cheese, or vegetables. Corn is also used in tamales, which are steamed, filled corn husks. Chili peppers are widely used to season Latin American dishes. Brazil's national dish, the feijoada completa, c onsists of a bed of rice with black beans, sausages, beef tongue, spareribs, and dried beef, sprinkled with toasted manioc meal, and garnished with orange slices. In Argentina, empanadas are beef-filled turnovers. A favourite Latin American dessert is flan, or caramel custard.

http://www.superseeds.com/latinamer.htm
I spent 6 months in Mexico and Central America in 1972 and '73. My tastebuds remember the experience vividly. I haven't been able to find seed for everything I came to enjoy in that part of the world, in fact some of the vegetables I remember keenly, I still haven't been able to identify and doubtless there are some that we would have difficulty growing. Here is a smattering of vegetables that may be kind of hard to find and are indispensable to the cuisine of the region. Buy Description Price Beans W520. BLACK TURTLE BEAN (Bush) (95 days)
These small black beans are used throughout Mexico and Central America in refritos, refried beans, as well as soups, stews, etc. Grown as regular bush beans, they also make an acceptable snap bean. Flavor is rich. 2 ounce package Herbs W554. CILANTRO-LARGE LEAF
Cilantro and coriander are the same plant. However, the primary use of coriander is the seeds so your standard US coriander is bred to bolt quickly and set lots of seed. The primary use of cilantro in Latin American cooking, on the other hand, is the leaves. Now we have a special variety that is bred to maximize foliage production and not to bolt. In our trials, this variety produced three times the yield of regular coriander and over a much longer period. It is often used in combination with tomatillo, tomatoes, and chiles, creating unforgettable sauces. It is also known as Mexican parsley or Chinese parsley. 150 seeds W557. EPAZOTE

    Food, in general
My mother says she believes my interest in food stems from an incident in my youth...right before she gave birth to me, she ate a doughnut, and thus began my interest in food. I am not an excellent cook, nor a particularly inspired cook, but I'm a good cook. Creative and experimental with a touch of native ability handed down from my grandmothers. I collect interesting recipes, so don't hesitate to pass along interesting recipes.
    Cookbooks in particular
This page primarily existed to give me a means to carry this list with me everywhere. However with the acquisition of a PalmPilot (later replaced by the TRGPro using the same OS and data) a robust, full-figured, but slender palmtop computer. The Pilot and an excellent database program created for the Palm called JFile , by the excellent John Lehett, I have allowed me to bypass this wide webbish world and carry my library comfortably in my purse. As such, I'm not sure what there is to do with this page. Technically it's no longer needed, but I've gotten so many comments on it and people who were interested in the list of the books and in finding them for me, I will leave it and continue to update it. Note: Not even a week after I put this new information up, I received intelligence that this list was being handed out some sort of authoritative collection. It isn't. In this intelligence was a request to add dates to the information I include. I willingly comply.

Facts and links Spain and Latin America offer the hungry visitor a rich selection of foods based on culture and tradition, with a wealth of regional variations and local specialities. The now international paella is originally from the Valencian region, on the Eastern coast. This is usually seasoned with a distinctive Spanish spice, , saffron, giving food its rich orange colour. Madrid has , a vegetable stew with chickpeas and pork, while in the Basque Country, there is bacalao al pil-pil gazpacho la tortilla , thick potato omelette. Many of today's Latin American staples were originally waste food, made from scraps to be eaten by slaves. Tamales are a good example, popular in most Spanish speaking countries. They are made of corn flour with bits of chicken or meat and egg, steamed and then wrapped in banana or other leaves. El arroz , rice, is also a common staple in Latin American countries, along with los frijoles , beans, and , corn, which is used to make las tortillas , flat breads, very different from the egg-based Spanish dish. In a typical Latin American meal the main course will consist of one or more of these staples served with a side portion of meat or fish, according to the area. Each country has its distinctive ingredients and specialities. Argentina, one of the world's largest exporters of beef, favours a 'meat with everything' diet, spicing up cuts of beef with
