Benne Cakes
You will need: oil to grease a cookie sheet 1 cup finely packed brown sugar 1/4 cup butter or margarine, softened 1 egg, beaten 1/2 teaspoon vanilla extract 1 teaspoon freshly squeezed lemon juice 1/2 cup all-purpose flour 1/2 teaspoon baking powder 1/4 teaspoon salt 1 cup toasted sesame seeds Preheat the oven to 325°. Lightly oil a cookie sheet. Mix together the brown sugar and butter, and beat until they are creamy. Stir in the egg, vanilla extract, and lemon juice. Add flour, baking powder, salt, and sesame seeds. Drop by rounded teaspoons onto the cookie sheet 2 inches apart. Bake for 15 mintues or until the edges are browned. Enjoy! Benne cakes are a food from West Africa. Benne means sesame seeds. The sesame seeds are eaten for good luck. This treat is still eaten in some parts of the American South. (Serves 8) 1 cup lentils, rinsed
1 onion, chopped
2 celery stalks, sliced
4 garlic cloves, minced
1 teaspoon whole cumin seed
8 cups water
1/2 cup couscous or white basmati rice
1 cup chopped tomatoes 1-1/2 teaspoons curry powder 8 teaspoon black pepper 1 teaspoon salt Bring the lentils, onion, celery, garlic, cumin seed, and water to a simmer in a large pot over medium heat. Cover and cook until the lentils are tender, about 50 minutes.

In creating this holiday, Dr. Maulena Karenga chairmen of black studies at California State University, Long Beach, organized the observance around ancient wisdom based on six criteria of a people-history, mythology, creativity, social structure, political, grouping and economics. Kwanzaa focuses on the following seven principals or Nguzo Subu (nn-Goo-zoh SAH- bah), as they are known in Swahili.
  • Umoja [oo-MOH-JAH] (Unity)
  • Kujichagulia [koo-ji-chah-goo-LEE-ah] (Self-determination)
  • Ujima [oo-JEE-mah] (Collective work and responsibility)
  • Ujamma [oo-jah-MAH] (Cooperative economics)
  • Nia [NEE-ah] (Purpose)
  • Kuumba [koo-OO-mbah] (Creativity)
  • Imani [ee-MAH-nee] (Faith)
Kwanzaa is the African-American celebration of culture, community and family. This year in an era of heightened interest in family and community, along with the desire to share familiar and traditional experiences with family members and close friends, the annual event takes on greater meaning.

Microwave a delicious holiday meal
By ANN STEINER and CICI WILLIAMSON IN little more than a decade, the observance of Kwanzaa is rapidly gaining in popularity. It's a time when African-Americans celebrate their heritage, beginning Dec. 26 and lasting seven days. Although it has been observed for the past 31 years, it has picked up momentum in the last decade. The holiday is based on seven principles. Each evening, the celebration focuses on one of the principles, beginning with unity and ending with faith. According to Eating Well magazine, "Kwanzaa was designed as a time for introspection and a forum for reinforcing the virtues of home and community. That leaves the interpretation of these core values open to improvisation, and allows celebrants to orchestrate festivities around their individual talents." Kwanzaa is a commemoration of the first fruits of harvest. On Dec. 31, a grand feast takes place. This is a time to join with family and friends, with each person bringing a dish to share.

KWANZAA
KWANZAA is an African American cultural holiday celebrated from December 26 through January 1. The holiday was created by Maulana Karenga, Ph.D., in the midst of the 1960's Civil Rights struggle. In the East African language of Kiswahili, Kwanzaa means "the first fruits of the harvest." It is based on Kawaida, the philosophy of cultural and social change which argues that the key challenge in the life of African American's is knowing, understanding, and appreciating African cultural values. Kawaida philosophy is further defined by its commitment to an ongoing dialog with African cultures which involves using it as a resource rather than a reference. As an African first-fruits celebration, Kwanzaa is organized around five fundamental activities: (1) ingathering of the people - reinforcing the bonds between people in spite of their diversity; (2) reverence for the Creator and creation - a time of Thanksgiving for all that is in the earth; (3) commemoration of the past - a time of honoring moral obligations, and to appreciate the role as heirs and custodians of a great legacy; (4) recommitment to the highest ideals - focusing on thought and practice of the highest cultural vision and values; (5) celebration of the good - family, community, culture, friendship, the bountifulness of the earth, the wonders of the universe. Kwanzaa was created to introduce and reinforce seven basic values known as Nguzo Saba which in Swahili means the seven principles. The seven principles are listed here, first in Swahili and then in English:

The Seven Principles, "Nguzo Saba", and other Kwanzaa Information The seven principles of the Nguzo Saba are celebrated during Kwanzaa however, they can be practiced on a daily basis. Kwanzaa is not to be viewed as a "Black Christmas". Instead it is a cultural observance in which Black Americans renew and affirm the strengths and values of ourselves and our ancestors.
  • UMOJA (UNITY) - To strive for and maintain unity in the family, community, nation, and race. KUJICHAGULIA (SELF-DETERMINATION) - To define ourselves, name ourselves, and speak for ourselves instead of being defined, named, created and spoken for by others. UJIMA (COLLECTIVE WORK AND RESPONSIBILITY) - To build and maintain our community together, and make our sisters' and brothers' problems and to solve them together. UJAMAA (COOPERATIVE ECONOMICS) - To build and maintain our own shops, stores and other businesses and to profit from them together. NIA (PURPOSE) - To make our collective vocation the building and development of our community in order to restore our people to their traditional greatness.
