In the past in Korea, there were large families with grandparents and over four children. Each family had up to eight members in the household. Men usually worked outside of the home and made money for the family to live on. In the case of women, it was completely the opposite. Women were supposed to stay at home and do only things related to housework. In those large families, there were really strict traditional rules about men's and women's roles. The women used to manage the housework, especially the cooking. Men were not allowed in the kitchen for any reason at all; only women could be there. However, as generations have changed little by little, the relationships between men and women have changed; and this has affected cooking at home. In recent years, husbands have started doing some of the cooking at home. Why is this happening?

    A Korean-American's perspective
    Saturday, May 14th A Korean-American’s perspective It is 3:30 in the morning here, the end of a long day or perhaps the beginning of another. I am on “watch” from 3 – 5am, things are pretty quiet. Having just arrived yesterday, I am the only American here. After a very long flight to Seoul, a bus to Gimpo Airport and short flight to Ulsan, I finally arrived—only slightly weary and more anxious than anything, for what lie ahead.
    I arrived in the evening, was introduced to everyone and given a tour. If you haven’t seen photos yet of the Whale Embassy and campgrounds, you should have a look. These activists have done an amazing job, creating a home thousands of miles away from their own, in the midst of what is essentially a construction site next to several incinerators. (This part of Ulsan is an industrial mecca, you can smell the toxic fumes immediately.) The Whale Embassy is a beautiful monument, which has served to be extremely educational for the locals, as well as the hub for all campaign activity. I am glad to be hereall the faces are new yet familiar—activists from different parts of the world, with great passion and dedication for what we do, always fascinating and unique in their own way.

      1 medium cucumber, peeled and sliced into 1-inch rounds, sprinkled with a little salt
      1/4 lb bellflower roots (toraji in Korean), soaked in warm water until soft and shredded, sprinkled with a little salt *
      3 large shiitake mushrooms, shredded, sprinkled with a little salt
      2-3 t sesame oil
      1/8 lb bean sprouts (soy bean is usual), sprinkled with salt, sesame oil and a small amount of finely chopped garlic sesame seeds Red pepper paste, to taste **

    By Nancy Lewis Thursday, July 28, 2005; Page VA17 Korean restaurants in the Washington area often share the same general steakhouse architecture: lots of wood, gas grills built into the center of some tables and ventilation hoods overhead, complete with sprinkler nozzles. When the hoods are in operation, the noise can be distracting. Although barbecue is often the specialty of the house, it's more a reflection of Korean restaurant cuisine than of home cooking. Meat in Korea is expensive two or three times U.S. prices so dining at a Korean barbecue restaurant is analogous to dining at a premier U.S. steakhouse.

    One of the few ways to get a taste of North Korea, short of leaping through numerous hoops to get a visa to visit the country, is to eat cold noodles (naengmyen). Most South Korean cities and even a few American ones offer several types of North Korean-style noodle restaurants. The version often prepared in Pyongyang, North Korea's capital, is mul naengmyen, or cold noodles in broth. It is served in a large metal bowl and looks like a flowering mountain rising up from the sea. Artfully balanced atop the mound of noodles made from buckwheat flour are julienned cucumbers, several slices of beef, half a hardboiled egg, and a few pieces of crisp Korean pear. When prepared Hamhung-style named after the industrial city on North Korea's east coast noodles are made from sweet potato flour and often topped with raw skate, which has a slightly ammoniac flavor.
    The signs in the South advertising Northern-style cold noodles are a reminder of the Korean War and the division of the peninsula. After the Korean War, refugees from the conflict set up stalls in the markets of Seoul to sell the "taste of the north" to those who could no longer travel there. The recipes they brought with them to the south were sometimes the only valuables they carried. In the 1990s, a new wave of North Koreans came to the South and established naengmyen restaurants. Hailing from the North lends a certain authenticity to the preparation of the dish. Whether prepared by the refugees of the 1950s and their descendents, the defectors of the 1990s, or North Koreans themselves in Pyongyang or Hamhung, cold noodles are something that North Koreans are widely credited with doing better than South Koreans.

    Mandu Korean Dumplings/Mandu These are delicious deep-fried dumplings, much like China's Eggrolls. In Korea, the wrappers are made by hand which is very time consuming and a task that takes skill and patience. I use wonton skins which can be purchased in any supermaket in the frozen or cold sections. Choose one of the many 'dipping sauces' to compliment this dish. 1/4 pound of ground beef or ground pork
    1 cup plus 1 Tbsp. vegetable oil
    1/2 small onion, peeled and finely chopped
    3/4 cup cabbage, shredded
    1 green onion, finely chopped
    1 1/2 tsp. salt and dash of pepper
    25 wonton skins
    1 egg
  • In a large frying pan or wok, cook meat until brown, mashing with a fork to break into small pieces. (I run it through the food processor to get it really mushy.) Drain off fat and set meat aside. Have ready 1 beaten egg and a pastry brush.
    Brush all 4 edges of skin with beaten egg.
    Place about 1 Tbsp. of filling mixture just above center of skin. Fold the skin in half over the filling to form a triangle and press edges together to seal. Repeat with remaining skins.
