Secrets of the Silk Road
Elaine Hallgarten meets a grandmother in north London who continues the Jewish cooking traditions handed down by her forebears in Uzbekistan. Photographs by Arthur Meehan. Little did I realise, when I went to Finchley, in north London, to talk to Miriam Abramoff, that I would be transported, gastronomically speaking, along the road to Samarkand. As I discovered, her reputation as an inspired cook is well founded. Miriam's forebears were part of the Jewish community of Bukhara, Samarkand and Tashkent, in the area that is now the republic of Uzbekistan. In 1922, her parents emigrated to Palestine, from where she came to London, 50 years ago, to marry her second cousin, Jack. "I remember that he looked like Tyrone Power," she says, with a twinkle in her eye. Sitting at her kitchen table, talking with Miriam and her daughter Lilian about the food she cooks, I can almost imagine we are in Bukhara. The location may be very different but, in many ways, the rhythm of Miriam's life is similar to that of her mother and grandmother. Her weekly cooking routine is bound up in this tradition, because it is geared towards the Sabbath. Orthodox Jews may not work on Saturdays, but food may be put into the oven to be ready for lunch on return from the synagogue. Preparation starts on Thursday, when Miriam invariably makes sholeh, a heavy risotto-type dish. Rice is a staple of Bukharan cuisine, which was influenced by the surrounding cultures of Russia, Persia and Afghanistan, and different varieties of rice are used for different dishes. Miriam makes sholeh with pudding rice, vegetables, turmeric, and either chicken or red meat. It is a good way to use up bits and pieces in the fridge, so that she can start afresh for the cookery marathon on Friday.

Far from being a burden, Passover gives you the opportunity to enjoy traditional holiday foods like matzah brei (a sort of matzah French toast), matzah balls (dumplings served in chicken soup), and all manner of matzah meal desserts, like sponge cake. This flintstone block house, built around 1720, is adjacent to Route 9W, about twelve miles north of Newburgh, New York, in the Hudson Highlands. The house, part of a trading station, was built by Luis Moses Gomez Gomez Gomez the Indians Inside are two open-hearth fireplaces, which kept Gomez Gomez fished for his trout. Ceramic crocks in the kitchen were probably used for the pickling of tongues and beef that were eaten by the early Jewish settlers. No doubt Mr. Gomez , like many of his Sephardic brethren, slaughtered his own beef, lamb, and chickens, since it was impossible to hire a schochet in this remote area. Recipe Archive Succulent Sukkot Recipes by Judy Bart Kancigor, courtesy of the Jewish Journal In Sicily, ingesting eggplant was once thought to lead to insanity. What a difference a decade makes. In fall 1992, my husband and I visited Israel during what now seems such innocent times. Only once did our tour guide announce a change in itinerary when a particular site was deemed unsafe. We visited friends in Jerusalem and sat leisurely sipping cafe hafuch in front of a cafe on Ben Yehuda Street, which I later recognized on Fox News reduced to bloodied shards. We even rode a city bus into Jaffa one day, soaking up "local color," with nothing on our minds but shopping. We could not have picked a better season to be there. Leaving Los Angeles the day after Yom Kippur, we found Jerusalem bustling with preparations for Sukkot. The terrace of every apartment sported a sukkah, and we ate breakfast each day under fruit-laden branches, our lavish Israeli buffet feast mirrored in the sukkah above. Truly we had reached the Promised Land at its most lush and bountiful season. Sukkot, also known as the Feast of Tabernacles, is the harvest festival mentioned in the Torah (Leviticus 23:34-39). Immediately following the fast of Yom Kippur, Jews the world over begin constructing sukkot in preparation for the joyous feast that begins four days later.

We have Shabbat, a holiday every single week. The holidays and the weekly Sabbath have meant a great deal to Jewish people throughout history. They are a means of binding families and community. And food plays a major part in each one, given the importance of the dietary laws and the table-centered rituals involved in Judaism. In addition to the weekly Sabbath, the three major seasonal harvest festivals include Passover, beginning the barley harvest in ancient times. Passover is the one holiday the overwhelming majority of American Jews celebrate. At Shavuot, a second harvest festival in the late spring, when there is an abundance of cheese and milk products, dairy dishes like cheesecakes and blintzes are served. And at Sukkot, celebrating the grain harvest at the commencement of autumn, all kinds of stuffed vegetables and stews are eaten. As signs of the plentiful harvest, meals are served in huts open to the sky, reminding us of the temporary shelters in the desert thousands of years ago.
