The Review-
Joan Nathan got it right in her foreword of Classic Italian Jewish Cooking when she declared Edda Servi Machlin a historian. In fact, Machlin's exhaustive account of her food-focused upbringing in Pitigliano, Tuscany-interspersed with gratifying anecdotes about her family's kosher oven and the matzo-making socials at the local bakery-borders academia. Unfortunately, however, Machlin's strengths reside more soundly in her cultural rather than stovetop culinary cognizance.
While appealing on the page, Machlin's chapter-divided recipes for classic Jewish fare lack precision in their instructions and flavor in their results. A recipe for cotolette di pollo e carciofi (chicken and artichoke cutlets) appeared especially promisingquintessentially both Italian and Jewish with several detailed paragraphs of artichoketrimming instructions-but generated a disappointing mishmash of unevenly pan-fried and downright bland poultry tenders and choke leaves. Not even the squeeze of lemon juice helped.
Also occupying the dinner plate was a hearty square of tagliatelle all'ebraica (noodle kugel)-Machlin's version of the classic Jewish pasta pudding with fresh fettuccini ribbons, ricotta, dark raisins, pine nuts, and a dash here and there of cinnamon, lemon zest, and grated ginger. The mainstay of any Rosh Hashana meal. But what baked up attractively in the Pyrex pan-the top layer of noodles golden and crusty with a dense, creamy center-left taste buds disenchanted and hands reaching for the salt shaker... and a nest of thinner noodles. Fresh fettuccini functions better in strands rather than en masse.

The competition is opened to amateur cooks only.
It will take place on the website www.jewisheritage.org.
The participants must enter their recipes by filling out the entry form which is available on the website.
Deadline for entries will be on Sunday 4th of September 2005 at midnight. Recipes' criteria:
Only one recipe per participant will be accepted.
Recipe must be:
  • typically Jewish (kosher style), speciality of the participant's country
  • written in local language+translation into French or English
  • accompanied with a photo of the final dish and a photo of the participant (optional)
  • traditional family recipe
    3). Voting and deliberation.
    4). Results.
    The best recipes will be announced on the website.
    The winners will be informed by email.
    5). Prize.
    The best recipes will be published on the website.

    The competition is opened to all person of 18 years old and more whatever his/her place of residence, whose real surnames, first names and email addresses must be registered on the registration form. Noodle Kugel Noodle Pudding Dessert 2 cups sour cream 4 eggs 1/2 cup (100 gr) sugar 1/2 teaspoon salt 1/2 cup (120 cc) milk 8 oz (220 gr) medium noodles 1/2 cup (110 gr) butter 1 teaspoon vanilla 1 cup (150 gr) dark raisins, soaked overnight in orange juice and drained 2 tablespoons cinnamon sugar (*) Preheat oven 350 F (190 C). Bring to a boil a pot of water to cook the noodles. Transfer the sour cream to a bowl. Add eggs, . . . . . . . . sugar, 1 teaspoon salt, and milk. Combine all the ingredients together with a spatula. . . . . . until a smooth cream is obtained. Cook the noodles until tender. In a small saucepan melt the butter. Transfer the butter to a 9 x 13 inch (22 x 35 cm) oven pan.

    Latkes
    A pancake-like structure not to be confused with anything the House of Pancakes would put out. In a latke, the oil is in the pancake. It is made with potatoes, onions, eggs and matzah meal. Latkes can be eaten with apple sauce but NEVER with maple syrup. There is a rumor that in the time of the Maccabees they lit a latke by mistake and it burned for eight days. What is certain is you will have heart burn for the same amount of time.
    Matzah
    The Egyptians' revenge for leaving slavery? It consists of a simple mix of flour and water no eggs or flavor at all. When made well, it could actually taste like cardboard. Its redeeming value, however, is that it does fill you up and stays with you for a long time. However, it is recommended that you eat a few prunes soon after.
    Kasha Varnishkes
    One of the little-known delicacies which is even more difficult to pronounce than to cook. It has nothing to do with Varnish, but is basically a mixture of buckwheat and bow-tie macaroni (noodles). Why a bow-tie? Many sages discussed this and agreed that some Jewish mother decided that "You can't come to the table without a tie" or, (God forbid) "An elbow on my table?"
    Blintzes
    Not to be confused with the German war machine. Can you imagine the NY Post 1939 headlines: "Germans drop tons of cheese and blueberry blintzes over Poland - shortage of sour cream expected." Basically this is the Jewish answer to Crepe Suzette.

    Jta Decades later, I dabbled with Indian, Greek, Japanese and Chinese cooking, cuisines I discovered in restaurants and magazines. But on Rosh Hashanah this glut of options left me spinning. Searching for culinary identity, I adopted the cuisine of my husband’s Italian Jewish family. His Israeli cousin shared her recipes, too. Like Jewish cooks throughout history, I was influenced by my environment. For thousands of years, Jews moved around the globe with their recipes, adapting to indigenous foods and local cuisine. But when Jewish stockpots met the great American melting pot, it sparked a culinary revolution. Nowhere in the world has Jewish cooking undergone the dramatic transformation that occurred in this country. Likewise, Jewish food has left its mark. Where would the average American be without his morning bagel? It seems that to be American means to savor dishes from every ethnic group. Cuisines such as Mexican and Mediterranean come and go with the seasons, and many Jews indulge in this feast of possibilities. Like Jewish eating habits, the Rosh Hashanah menu is in flux, swayed by cooking crazes.

    Evelyn Rose was a world authority on Jewish food and the foremost Jewish food writer in Britain. She was food editor of the 'Jewish Chronicle' and regularly appeared on TV and radio. In 1989 she was awarded an MBE for her services to the consumer. She died in May, 2003. A new edition bestselling 'New Complete International Jewish Cookbook' is also being published (1 86105 732 6).
