This was a real find of a cookbook. I am looking to expand my repetoire of Jewish recipes and want them to be healthy as well. The introduction is a treat to read as well as the personal entries at the top of each recipe. The recipes I have made thus far have all turned out terrific and inspire me to want to cook more out of this book. I'd eat in this author's kitchen any day! Rating: 5/5 - Healthy Jewish Cooking Once again noted cookbook author, Steve Raichlen has hit a homerun. His adaptations of time honored Jewish comfort foods to suit the modern , healthy life style is phenomonal. Cabbage soup is as good as my bubbe's and it is completely vegetarion. From blintzes to borscht; from chopped liver to chicken fricasse, Raichlen runs the gamut of Jewish cooking perfectly. I am taking it upon myself to help out all you frantic housewives out there, with wonderful menus that will lead your children to a healthy, happy, and loving family unit as I knew it in my childhood. So get out your wooden matches, light the pilot light, get out the volgar holtz (wooden bowl), hock the tzibbeles (onions) and knubble (garlic), and we're Jewish again. It has been suggested, for example, that the major role played by garlic, leek and onions in Jewish cooking is due to these influences. Arab and Moorish cooking had an equal influence on the Jewish cuisine.

Jeffrey Nathan has pioneered the concept "New Jewish Cuisine," an updated fresh version of kosher cooking. Consider Stuffed Cabbage, this time made with Sweet and Sour Cranberry Sauce. Sacrilege? Just try it.
Several of the recipes in the book come from Abigail's restaurant. Abigails, says Jeffrey Nathan, was designed "…not as a kosher restaurant but as a great restaurant that just happens to be kosher." The recipe for Abigail's Balsamic Vinaigrette salad dressing, for example, is now mine. Simple enough, it contains just the ingredients that my salad dressing was missing. Chocolate Mousse Flowerpots, the signature dessert at Abigails, appears here with detailed instructions and photos. Not your standard Eastern European concept, this dessert is served in small terra-cotta pots topped with "dirt" made from cookie crumbs.

During the course of two thousand years of life in the Diaspora, Jews have created a rich culinary tradition. Jewish food encompasses a plethora of tastes and flavors reflecting the particular traditions of the many Jewish communities worldwide. Everywhere traditional Jewish food is prepared according to the rules of kashrut (the Jewish dietary laws), such as the prohibition against consuming certain animals, the adherence to specific ways of preparing the meat for consumption, the prohibition against cooking or heating food on the Sabbath, and the prohibition against mixing meat and dairy products.

In all Diaspora communities, traditional Jewish recipes make use of local cooking practices and customs. Jews used locally available products, absorbed various traditions from their non-Jewish neighbors and interpreted them creatively in keeping with the laws of kashrut. Sometimes the term "Jewish food" is mistakenly understood as referring to the cooking traditions of the Eastern and Central European Jews. However, the cuisine of the Ashkenazi Jews of Eastern and Central Europe, itself composed of many regional culinary forms, is only one of several of Jewish cooking styles.

Adapted From: Jewish Cooking For Dummies Jews celebrate Rosh Hashanah, the Jewish New Year, for two days in September or October. They are the first two days of the Jewish calendar, which is lunar (based on the phases of the moon). Rosh Hashanah is both solemn and joyful. At the synagogue, people pray to be forgiven for misdeeds. The theme of repentance is echoed even more vigorously on Yom Kippur, which occurs ten days later. A variety of foods on the festive New Year dinners symbolize the hope for a good year.
Ensure good fortune year-round
The Jewish New Year menu is replete with sweet dishes. Fruit, sweet vegetables, and honey appear even in some main dishes and give the holiday meals their unique character. Sometimes, it seems that the menus must have been designed with children in mind, especially in some Ashkenazic homes. To ensure mellow meals and prevent a bitter future, some people avoid sour foods like vinegar and lemon juice. Others tone down peppery dishes, using fewer chiles than usual or omitting them. Some say the Israelites adopted the idea of celebrating the new year with something sweet from the Persians. In ancient Persia, it was customary to eat sweet foods for the new year. Legend relates that one of the biblical prophets introduced this tradition to the Israelites. The sweet custom remains central to Rosh Hashanah festivities to this day.
