Jewish cooking my style. So how could I do it otherwise? I am quite fond of most ethnic cuisine, and particularly so of Jewish cooking. It is not always easy, however, to jump from one's known frying pan into an unknown skillet, expecially when the pan is over the fire - literally speaking.

Italian Jewish Cooking
By Mira Sacerdoti As a Jewish girl growing up in Italy between the wars, Mira Sacerdoti had to endure the increasingly antagonistic climate set by the Fascists, which culminated with the enactment of the race laws in 1938. Though life was difficult, it didn't become dangerous until the Italian surrender in 1943, at which point the Nazis began deporting Italian Jews from the sections of Italy they still controlled. Mira Sacerdoti and her mother were among the fortunate; they managed to get to Korcula, an island in the Adriatic off Yugoslavia, and though German airplanes occasionally strafed their town they were otherwise left alone. After the war she returned to a changed land families were scattered and entire communities had vanished. One unexpected victim of the tragedy was Italian Jewish cooking; it was primarily family oriented, and almost entirely passed on from mother to daughter, aunt to niece. Many of the younger women establishing families had been too young to cook before the war and now had nobody to turn to. Mira, on the other hand, still had her mother to learn from and remembered the dishes prepared by her aunts and neighbors. Once her children were grown they asked her to write down the recipes they had loved in childhood. She did, under the title Italian Jewish Cooking.

Hi, my name is Elinoar but my friends call me Lior. I live in Givataim, Israel. As far back as I can remember, I sat in the kitchen watching my grandma cook. I used to dip into the pot with either a fork or a finger, to taste before the food was finished. My grandma hated it, but let me interfere anyway. The smells, the odors, the tastes....... I will never forget it. She was my mother's mother. Margot was her name, she passed away at the age of 93. This is dedicated to her. I love you, grandma. Israel is a small country. It is long and narrow and stretches just under 450 kms from north to south and, on average, is 60 kms from east to west. Israel's cosmopolitan society is reflected by the infinite range of cuisine available in the country. Any style of food from Argentinian to Zairean can be obtained in Israel. Israel is famous for its fresh fruits and vegetables. The Jaffa orange has long been a sweet symbol of the country. Many restaurants in Israel observe the Kosher (Jewish dietary) laws. When dining Kosher you cannot mix meat and dairy products. However there are many non kosher reasturants where you can found a big saucy white (refer to pig meat) steak. Bacon and eggs too can be obtained in some restaurants. Together with the country's non-jewish citizens - Muslim and Christian Arabs, Bedouin, and Druze this melting pot gives the country its exceptional cuisine flavour.

We speak of the Jewish Diaspora as if it were singular, but, in fact, there has been more than one. Like opening a large box, only to find a second, a third, a fourth, nestled one inside another, Diaspora led to Diaspora. In this complex network, Jewish cooking developed, adapting to the cuisines of countries around the world, using the foodstuffs of those countries while maintaining respect for the rules of kashrut or what so many call 'kosher.' In the land of Judah, diet was dictated by biblical commands which have been sustained through the years. We call them kosher laws and they have been maintained in every country where Jewish peoples have lived. They are complex laws, but helped to shape the way the Jewish peoples ate, even as they adapted to the available foodstuffs of every country. In biblical times, the temple evolved to be central in Jewish life. Despite the subjugation inflicted on the tribes of Judah by invaders and conquerors, we date the beginning of the Diaspora to the year 70 BC. The Jewish peoples began their wanderings and in subsequent centuries scattered north to the German states and were known as Ashkenazi Jews , as well as to Spain where they were called Sephardic Jews. In a few instances, a city might be settled by both Ashkenazi and Sephardic Jews. Venice is one example.
