I love to cook. I live in the US and I can cook quite a few dishes, especially the ones that we had eaten when we were kids. Some were simple dishes but those can be the best.

Teriyaki SauceJapanese Cooking Teriyaki
is a Japanese cooking technique where fish or meat that has been cut or sliced is broiled or grilled in a sweet soy sauce marinade . The word derives from the word teri , which refers to a shine or luster given by the sauce, and yaki , which refers to the cooking method (grilling or broiling). Traditionally, teriyaki sauce is made simply by mixing and heating four ingredients: Mirin sugar soy sauce , and sake (or occasionally another alcohol). These may all be in equal quantities or varied by the recipe. After being boiled and reduced to the desired thickness, the sauce is added to the meat which is marinated and then grilled or broiled. Sometimes ginger is added, and the final dish may be garnished with green onion. In other cultures, teriyaki is often misrepresented, using the term for any dish made with a teriyaki-like sauce and adding ingredients such as garlic (which is fairly rarely used in Japanese cuisine) or sesame. Many of the bottled teriyaki sauces on the market are actually a version of the spicier Korean bulgogi sauce, which contains the aforementioned ingredients.

ITALIAN COOKING (4 classes) $40 tuition + $40 food fee
Come and enjoy some good Italian food. At the end of this course you will be able to prepare a full Italian dinner (primo piatto, main entre, side dishes and a delicious dessert) which will satisfy both your vegetarian and your non-vegetarian guests. The course is structured in four 3-hour classes. Students will take home the food they have prepared. Class will meet every other Monday beginning September 26. Class is limited to 20 students.

ume paste canned tuna hot dog pieces chopped, cooked vegetables Figure A Preparation: Season the rice with salt and sesame seeds. Wet hands and shape a small handful of rice into a ball or triangle (figure A) . Make an indentation in the rice, then place your choice of filling in the indentation and shape the rice around the filling. Hand Roll Using the rice and fillings from Onigiri, or Rice Balls (above), place some rice and your choice of filling at one end of a nori sheet and roll the sheet into a cone. Insert some thinly sliced fresh veggies such as carrots, onions or squash. Simple Ponzu Sauce Ingredients: 1 part lemon juice 1 part soy sauce 10 percent sugar sesame seeds Preparation: Combine all ingredients and use as a dipping sauce for Rice Balls or Shabu Shabu (see recipe below).

Japanese Cooking Lesson
Last night, we were invited to the house of Jun and Tomoko Kurata. Jun works for Lamuz , a Tokyo company which the team at AirEight has known for many years now. Tomoko is his lovely wife. On my last trip to Tokyo, Jun took me out to a wonderful tempura restaurant atop the Odakyu department store at Shinjuku station. Diners sit at a bar not unlike that in a sushi restaurant, but instead of cutting fish, the chefs are frying small batches of treats and serving them immediately. Lemon juice and four types of salt are provided for seasoning purposes. One of the types of salt was made using green tea and was called, logically enough, shio macha (salt green tea). I found it quite tasty. Later during that trip, I went looking for it at one of Tokyo's best food halls, Mitsukoshi in Ginza, and they looked at me as if I was from another planet. Me: "Shio macha arimas-ka?" Mitsukoshi employee: This guy is clearly from another planet. Last Friday, Jun offered to take Bill and me to dinner, and when Bill heard about the tempura restaurant, we couldn't resist a return trip. Over dinner, I told Jun about my unsuccessful shio macha search. I also talked about my recent and clumsy attempt to make
