I’ll be the first to admit that I purchased this book on pure whim. I knew as much about Japanese cooking as I did about brain surgery. However, Japanese Cooking took care of that in just a few short reading sessions. When I purchased this book, I was mainly looking for an idea of what foods were out there in the Japanese style of cuisine. With every other Japanese cookbook that I have looked at, I always ran into the same problem - most of the ingredients that were used in the book were either practically impossible to find or quite expensive. I also didn’t have most of the utensils that they required. Japanese Cooking changed all that, with its simple foods and easy to prepare dishes, presented with authenticity and taste. You can’t ask for anything more, when it comes to a cookbook.

    Braised Shiitake Mushrooms
    Ingredients:
    Eight large dried shiitake mushrooms
    2 cups warm water
    3 tablespoons soy sauce
    1 tablespoon sugar
    Directions:
    Set oven control to broil.
    In saucepan, soak mushrooms in warm water for about two hours, until soft. Trim off stems. Add soy sauce and sugar; bring to a boil, then simmer about 30 minutes, uncovered. Let cool. Place two mushrooms on each of four small plates.
    Green Beans with Miso and Sesame
    Ingredients:
    1/2 pound long beans or French beans, cleaned and trimmed to 3-inch lengths 2 tablespoons miso paste 1 tablespoon sugar 3 tablespoons warm water 2 tablespoons white sesame seeds Directions: Bring medium saucepan half filled with cold water to a boil. Add beans and cook 60 to 90 seconds until cooked but crisp. Drain and cool. In bowl, mix miso paste and sugar gradually with 3-tablespoons water until smooth. On each of four small plates, place small bundle of beans, nap with sauce and garnish with sesame seeds.

    For the most part, Americans enjoy consuming and experimenting with foreign foods, but Japanese dishes have not caught our attention much at all. The Japanese have been a part of America for more than 150 years, yet we never incorporated their cuisine into our food ways much. Perhaps we should learn some of their dishes, as they can be very healthy as well as incorporating a large variety of foods.
    Ancient Japanese wisdom says that you use eight colors to serve a meal. They also felt you should eat thirty different foods every day for a well balanced diet. Here in America we have a hard time incorporating five different food groups into our diets.
    The main rule of thumb in serving Japanese food is that the dish must be as pleasing to the eye as it is to the palate. For instance, salads are small and mounded in the center of a dish to allow the beauty of the cook's work to shine through. Sushi, one item that has caught on here in America supposedly represents the movement of the sea. The tea ceremony in Japan has been elevated to a centuries-old ritual intended for recognition of the importance of the mundane.
    Japanese cuisine is a nice change of pace for our diets and can be fun to create if one enjoys cooking. Why not try your hand at it? Following is a list of some of ingredients you will need to have on hand if you are going to delve into some of the dishes presented here.

A contestant, usually a famous chef from Japan or elsewhere, is pitted against one of the show's four "Iron Chefs". Each of the Iron Chefs is an expert in a different cuisine, either Japanese, Chinese, French, or Italian. Almost all battles require the opponents to cook a multicourse meal in which a special theme ingredient plays a starring role. The chefs have one hour to complete their dishes. At the end of the hour, a panel of celebrities tastes and rates the dishes and crown a victor. The winner is said to be the chef who best expresses the unique qualities of the theme ingredient. Many theme ingredients reflect the Japanese nature of the show, for example, River Eel, Tofu, udon, and others. Ingredients more familiar in the west, like green peppers, summer corn, or peaches are commonly spotlighted as well.     marriage of late-summer and early-autumn beauties
    Autumn is my most favorite season of all, and summer, the least. So it is a sign of relief when it starts getting a little less hot and humid at the end of August, although we do have summer-like days even in September. And it happens to be the time when we get busy stuffing ourselves with fruits of both summer and autumn, and this is one of such things that I made at the end of last month.
