Zuppa Toscana - Tuscan Soup: Recipes from Italy's Tuscany central region!
Italian recipes from Tuscany, from soups to main dishes to dessert!
T his site is dedicated to Italian recipes from the central region of Tuscany , which is probably the best known region outside of Italy for its beauty, history and charm. Everyone who has ever been to Italy has fallen in love with its history, landscapes, art, architecture, and, of course, its FOOD ! Even those who have never been to Italy already know Italian food in some shape, taste and form - who has never eaten pizza or spaghetti pasta? Actual visitors to Italy, however, will have discovered that the Italian food they know from back home does not taste, and sometimes even look , the same in Italy. First, each region has its own culinary specialties and own versions of a common Italian dish. Something as commonplace as a pizza is made differently in Naples, Rome, Florence and Milan! And second, once you've tasted some of the regional dishes in Italy, you'll want to discover what makes them particularly good, or different, from what you've tasted before so that you can recreate that dish once you're back home. With this site, I hope to share some of the more traditional

148. Lasagna Recipe - Italian Baked Lasagna
A traditional recipe with easy to follow cooking directions.
http://www.cooking-italian-food.com/lasagna.htm
Lasagna Recipe
Italian Baked Lasagna
Recipe Ingredients
  • 1 lb. Lasagna pasta noodles, cooked 2-16 oz. jars meatless sauce 1 lb. Ricotta cheese 1/2 C. grated Parmesan cheese 1 lb. Mozzarella cheese, sliced thin 3/4 C. chopped onion 2 cloves garlic, chopped or minced 2 tsp. salt 2 eggs, beaten 2 lbs. ground beef 1 tsp. Italian seasoning
Cooking Directions
  • Cook lasagna noodles according to package directions or until tender but still firm. Drain, keep warm.
Meanwhile, saute the ground beef, garlic and onion is a large heavy skillet or saucepan until beef is done. Add sauce, salt, and Italian seasoning and mix well. Simmer on low heat 12 to 15 minutes. In a separate bowl, combine eggs and ricotta cheese.
Grease a 9" x 12" or larger, deep sided baking pan. Arrange a first layer of noodles across the pan so the ends hang over the sides. (The ends will be laid back-over the top for the final layer. This helps to hold lasagne together when cutting servings) Then add a layer of the cooked beef lasagna sauce, ricotta cheese and mozzarella cheese. Add a second alternating layer of pasta (lengthwise in the pan), the meat sauce and cheese mixture. Repeat until pan is almost full then fold over the ends of the first layer of noodles and top with more lasagna sauce. Sprinkle with parmesan cheese and bake at 350 degrees for 40 to 45 minutes, or till cheese is bubbly.
Allow to set for 5 to 10 minutes before cutting. This recipe can be modified to suit individual preferences.

Rustico cooking explores the diversity of italian regional cuisine through recipes, cooking lessons, culinary tours, and articles.
http://www.rusticocooking.com/micolbio.htm
About Micol
Everything you find on this site and in my cookbooks is the fruit of my experiences in Italy: I was born in Milan, moved to Canada when I was nine, graduated from culinary school, and ran my own catering company; I moved to New York in 1996, where I teach and write about Italian cooking. But not a year has passed since I left Italy that I haven't returned. I travel up and down the country with my husband, getting to know local cooks and homemakers, taking photos and collecting recipes, and gathering the knowledge to write " Rustico " (Clarkson Potter 2002, nominated for a 2003 James Beard Award) and " The Italian Grill " (Clarkson Potter, May 2005). The more I learn about Italian food, the more passionate I become about it; the more I know, the more I realize that there is always another tradition, another aspect to uncover: in fact, there are so many treasures waiting to be discovered in every corner of the country that I start planning my next trip to Italy as soon as I step on the plane for New York. And since the best way to learn about something is to teach others (after all, to teach, you have to keep refreshing your knowledge of your subject), I spend much of my time

Saute garlic in olive oil and add boiling stock.

What's your favorite meal? Perhaps you and your friends and/or family exchange recipes. I happen to be one of those who finds recipes in the newspaper, in magazines, etc. Any time I really enjoy a dish, I ask the cook/chef for their recipe. (they don't always want to share and SOME people actually give you the wrong measurements for ingredients! can you imagine?) I'm not an exceptional cook but I've found some excellent recipes and resources. I decided to share them with you! This part of my website will be growing. You'll find great bargains on a wide variety of cookbooks too! (Yes, I also own more cookbooks than are strictly necessary. I love James Beard. Who's your favorite cook?)
