It is my sole purpose to introduce you to some of the best recipes on the internet, and to share with you some of my own personally developed recipes and those of my mother, Gladys , who taught me how to cook. I also want you to know that recipes are made to be altered. Use your imagination when you cook. If one fruit or vegetable is not in season, use something that is. Keep things as fresh as you can buy at the time. Experiment with recipes. Change a spice or two. Use different meats, like substituting pork for chicken. Fry some sweet potatoes instead of white ones. Throw a handful of raisins into your gravy. Pick some nasturtiums out of your garden and toss them in your salad. Put some cranberry juice in your salad dressing. Use lots of olive oil! Raise a little hell in your kitchen! Everyone will think you know what you are doing and will go home and try it themselves. Season your food while you are cooking it. Season before, and during cooking. If you add a new ingredient that needs seasoning, season again. Food seasoned after it is cooked does not taste as good as when seasoned before and during the cooking process. Experiment with different seasonings. Sure, you are going to mess up now and then, but go lightly at first and you will find that your experimentation with seasonings will give your recipes a signature that no one else has.

    Italian Zucchini Lasagna
    Ingredients
    • 1 lb. lasagna noodles, cooked 1 16oz can(1 lb.) stewed tomatoes 3 or 4 lg. zucchini grated parmesan cheese 1/2 lb. mozzarella cheese, shredded 3/4 C. chopped onion 4 to 6 cloves garlic, chopped or minced 1 sm. can tomato paste 1/2 cup sliced mushrooms 1 lb. lean ground beef 1/2 tsp. oregano 1/4 tsp. thyme 1/4 cup fresh basil/chopped ground pepper optional: 1/4 cup red wine Cook lasagna noodles according to package directions or until tender but still firm. Drain, keep warm.
      Meanwhile, to make lasagna sauce, saute ground beef, garlic and onion is a large heavy skillet or cast iron frying pan until beef is done. Add sauce, mushrooms, oregano, thyme, basil, wine or 1/4 cup water, touch of pepper and mix well. Simmer 45 to 50 minutes.
      To prepare Zucchini, cut in half or cook whole in a large covered pot with 1 to 2 inches of water. Boil gently for about 5 minutes, drain and cut lengthwise into 1/4 inch slices.
      Grease a 9" x 13" or larger, deep sided baking pan. Arrange a first layer of noodles so the ends hang over both sides of the pan. These will be folded back-over the top on the final layer which will help to hold serving portions together when cutting. Next, add a layer of the cooked zucchini, a layer of sauce, a layer of mozzarella cheese. Repeat but this time lay the pasta lengthwise in the pan. For the top layer, fold the ends of the pasta from the first layer over the top and add more sauce. Top with parmesan cheese and cover with foil. Bake at 350 degrees for about 35 to 40 minutes, uncover and bake until brown, approximately 10 minutes. Serve this Italian food with french bread and have additional parmesan cheese at the table.

    Banana Nut Bread

    Hello everyone and welcome to Good Eats. My featured recipe this month is for Banana Nut Bread, which is a very delicious sweet bread. It is simple to make and gives us a use for those over ripe bananas. It stores well in the freezer. I keep some in the freezer and put it in the microwave to have with our afternoon coffee break. I have recipes for several sweet breads, but banana nut is very high on my list. Enjoy!

    ITALIAN BEAN SOUP
    1 cup dry navy beans
    1 8-oz can tomato sauce
    1 cup chopped onion
    1 cup chopped carrots
    1/2 cup chopped green pepper
    2 cloves garlic, minced
    2 Tbsps instant beef bouillon granules
    1 1/2 tsps each, dried crushed basil and dried crushed oregano
    1/2 cup uncooked macaroni
    Rinse beans, add 8 cups water. Boil 2 minutes. Remove from heat; cover and let stand 1 hour. (Or, soak in water overnight). Do not drain. Stir in 1 tsp salt and remaining ingrediants, except macaroni. Cover, simmer 90 minutes. Stir in macaroni, cook, uncovered 10-15 minutes. Serves 6-8.
