The Story Behind DeAngelo's
Vincent DeAngelo grew up in New York's Italian neighborhoods. His father was a chef and his mother carried on the tradition of Italian cooking at home.
Vincent is a graduate of the Culinary Institute of America, the oldest and finest culinary arts school in the country. While still on the east coast he worked at the the famous Rainbow Room and the Helmsley Place Hotel.
Vincent came to California and worked as a chef at Palermo's in San Jose and Palo Alto. He was the first person to work there that had not been born and raised in Italy. He also created his award winning dishes at Valerano's in Los Gatos. We are very fortunate to have him here in Merced, a place he feels at home where he can carry on the excitement of robust foods and fine dining.
We only use the finest and freshest ingredients available for our dishes. Fresh fish and seafood is flown from all over the country; Mussels from the East Coast, Clams from the Pacific Northwest, Sea Bass from Chilean waters, and Hawaiian Swordfish when available.
We take advantage of the abundance of fresh local produce when in season. Fresh summer tomatoes from Rogina Farms and baby lettuce and radicchio from Marchini and Son, just to name a few.

Slow Food - Master Italian Cooking Program
The Slow Food–Master Italian Cooking Program
, conducted in Jesi, Italy, since January, 2003, is an exclusive 10-week course for food industry professionals who want to learn authentic Italian food preparation techniques. The course is taught by 50 experts from Italy’s 20 regions appointed by Slow Food to teach artisanal methods of food preparation unique to their region. At the end of the 10-week course, each student has the option of remaining in Italy to perform a stage (externship) for 3, 6, 9, or 12 months in one or more restaurants selected by Slow Food.
This comprehensive program offers an intense curriculum combined with an opportunity for additional professional training, along with ingredient, product and wine tastings, gastronomic excursions, and much more, all under the guidance of the Slow Food mission – the preservation of artisanal methods of food production worldwide.
Attendance is limited to 15 professionals per session and only four sessions are conducted each year, making this a unique, personalized culinary educational program designed to reveal the rich mosaic of Italian gastronomy traditions and culture.

After his first visit to Italy, Craig Richards has returned an Italian. He meant it to happen. His stated goal has always been to cook as well as the Italian-born Lidia Bastianich, who with her son Joe owns Lidia's, the restaurant in the Strip where Richards is executive chef. He's gaining on her. His "kitchen Italian" is getting pretty good, too, he says. In the town of Friuli, the region Lidia is from, where he ended his tour and spent several days cooking, he could understand all the orders called in to him at Ristorante Al Ponte almost. As he explains it, "This wasn't a vacation but an opportunity to hone skills." Richards has put his considerable intelligence and energy into "mastering the art of Italian cooking." Although he borrows from her, it is only fair to note that Julia Child dismissed Italian food because, unlike French, it didn't require sufficient techniques. Richards was interested in such an opinion though not convinced of its validity. But I knew what Child meant and told him about my meeting with Marcella Hazan, whose cookbooks and classes have had such an impact in the States. A dozen years ago, Hazan had lunch with food writers at the Cipriani Hotel in Venice. When the subject turned to French cuisine, here's what she said:

Italian food is one of the world’s "great cuisines." In poll after poll, it is ranked as the most popular cuisine. Italian cooking is much more than pasta, pasta, pasta. Much of what is associated with French cooking came from Catherine de Medici, and the Italian chefs that followed her to France. When she married Henry II, Catherine brought her love of food with her.
