How to Stock Your Pantry for Italian Cooking
Have the joy of Italian kitchen cooking at your fingertips - stock your pantry now, reap the benefits later. Steps: Have a melange of Italian herbs handy. Include basil, oregano, rosemary, thyme, red pepper flakes, salt and pepper. Invest in a nice pepper mill and whole peppercorns. Store plenty of pastas, Arborio rice (for risotto), gnocchi and polenta - these are the basis for many a meal. Always, always keep onions and some garlic laying around. Almost every Itailan dish includes these. Buy canned tomato paste, Roma (plum) tomatoes and, for a pinch, premade sauces. But with some garlic, onions, and canned tomatoes, you can make your own sauce easily. Lay in a good supply of wine, for both cooking and drinking. Pick dry white wines for cooking, tasty chianti for drinking. Store canned broths, frozen stocks and/or boullion cubes for Italian stews and braises.

Th e Master Class in Italian Cooking: Class Facts
This class is designed for the serious amateur, as well as beginners or professionals with a desire to learn the basics of Italian cookery.
Students meet for three evening classes from 5:30 p.m. to 10:30 p.m. Class size is limited to 15 students.
Classes are held in The FCI's International Culinary Theater. The menu for each class is provided that evening (Marcella likes it to be a surprise!) Every evening ends with students joining Marcella and Victor around the table to enjoy the meal they've just prepared.
The French Culinary Institute provides tools for students for the duration of each class. Students will be given a specially designed apron to use and keep.

Anna Maria’s Italian Menus THE ITALIAN MENU - cont. Bread is always present at the table, and the Italian menu always includes fresh fruit as the most common dessert. Wine is generally served at dinner. Espresso coffee is served at the end of the meal. Italy is a very diverse country and it is difficult if not impossible to define an Italian cooking style, but we can correlate consistency in spite of variety in the Italians’ approach toward food. All Italians eat with gusto . Everywhere their pantries are filled with the same basic products: cheese, sausage, ham, bread, and wine. Vegetables are of high quality and Italians value full natural flavor — everybody is willing to walk the extra distance to buy better and fresher products. Sauces are the essence and the soul of Italian cooking dishes; usually they are inseparable from the process of dish making. The spices added to the preparations mean to enhance the taste of the dishes and not to cover it. Contrary to common belief Italian don’t use excessive amounts of garlic, or other herbs to their food. Italian cooking has evolved for centuries and continues to evolve today; it is informal, it lacks rigid rules, and is adaptive and versatile. Instead of being invented by professional chefs, millions of everyday cooks improvise Italian cooking daily in their kitchens.

You have to let your own taste buds be your guide here. When you toss this together, add the smaller amounts of vinegar and oil, a little salt and pepper and a dash of Tabasco if you like. Taste and go from there. Ingredients (makes about 8 cups) 6 medium to large California tomatoes, cut into large chunks 1 small garlic clove, minced 1 Tbsp. minced shallot 1/2 medium onion, chopped 3 Tbsp. coarsely chopped fresh basil 3 to 4 Tbsp. balsamic vinegar 6 to 8 Tbsp. olive oil Salt and black pepper to taste Tabasco sauce to taste (optional) Drain off and discard any liquid from the California tomatoes. Mix the California tomatoes with all the remaining ingredients. Let the mixture stand at room temperature for about 20 minutes. Toss with hot pasta and top with grated Romano or Parmesan cheese.

    by Brad Edmonds I wrote recently of one of my best recipes (making no claims that my bests are better than anyone else’s), one I call walnut chili. If you graze through my archive, you’ll find plenty of articles extolling, in one way or another, Italian – pronounced Eye-talian, please – cooking. Cooking is not necessarily isomorphic with culture, by the way; Italians once were so cultured that J. S. Bach himself composed often "in the Italian style," Italian opera was the center of the musical universe, and Italian painters and scientists were at the forefront of human artisanship and technology. Alas, much of that high culture faded away before Italian cooking became everything it is. The tomato, after all, didn’t find it’s way into Mama’s recipes much before the 19 th century. But of course, the roots of Italian culinary supremacy reach back 500 years, to the beginnings of Parmesan cheese; and another 500 years, to the beginnings of balsamic vinegar.

    At the end of the course, the Institute will present the SLOW FOOD - MASTER ITALIAN COOKING CERTIFICATE to all those attendees who have completed the program with merit.
    Regional cooking is the fruit of centuries-old traditions and experience built by layers over time. In Italy, aromas and tastes differ from region to region, with the mountains, the sea, the sun-drenched hills and the mild Mediterranean climate providing an infinite variety of dishes.
