A Highly Subjective Guide to Irish Cookbooks
The title should suggest to you that the author has strong feelings on the subject. Well, strong enough. Irish cooking is understandably afflicted with associations with Ireland, arguably one of the most beautiful and over-romanticized pieces of real estate on the planet. This causes many Irish cookbooks which we've seen in the US to become (a) pictures of beautiful landscapes gorgeous, but inedible, and casting no particular illumination on the food itself: (b) folios of lovely Irish-style calligraphy pretty enough, but typically hard to reproduce small enough to get in very many recipes: and (c) collections of misunderstood or mistranscribed "traditional" recipes which no one here has eaten for a very long time. These three factors taken together are something which, in our household, we refer to as "the leprechaun factor". Cookbooks with too high a Leprechaun Factor never make it out of the bookstore to our shelves (where at last count about 550 cookbooks of various kinds reside). The following is a list of some of the cookbooks that did make it home. We recommend them to you: the recipes work, and the writing in them is either enjoyable, or clear, and usually (thankfully) both. The vast majority of them are paperbacks. By Carole L. Philipps, Post Living editor Colcannon, boxty and Irish stew are only part of the Irish cooking lexicon. As much as one may love these simple dishes of potato, onion, cabbage or kale and lamb, younger cooks have added much in the way of sophistication to the Irish table, while still maintaining Ireland's cooking heritage. My first dinner on Irish soil was a delectable filet of sole in a decidedly French sauce. While lamb, seafood, potatoes, cabbage, kale, oatmeal and brown bread remain Irish staples, if you dine on the Emerald Isle today you are likely to find them used in clever new ways. A new cookbook, out just in time for St. Patrick's Day entertaining, draws from both the old and the new to give a clearer picture of Irish cuisine today. 'The Irish Heritage Cookbook' (Chronicle Books paperback, $18.95) by Margaret M. Johnson is a collection of traditional Irish fare with contemporary Irish recipes that are both wonderfully fresh and fittingly reminiscent of Ireland's better-known cottage cuisine. Ms. Johnson, an Irish Catholic who grew up in Massachusetts, is now a high school teacher on Long Island who regularly spends her summer vacations in Ireland. Over the years she has seen the cuisine of Ireland evolve, as one eye remains fixed on the past while the other looks steadfastly ahead.

School Links It's tasty, elegant ... and Irish By Joyce Rosencrans, Post home editor Two magnificently Irish recipe tomes I've used to help inspire Irish cooking for St. Patri ck's Day next Saturday are a contrast in styles: One cookbook is elegant. One is country. The elegant book illustrates the new Irish cuisine, sophisticated and world-respected. Much o f this cooking is generated by Ireland's fine hotel-school graduates. Irish cooking has come centuries away from watery stew, mashed potato ''champ'' and crubeens (salted pigs' feet). It now ranks among the world's best. ''Elegant Irish Cooking'' (Lebhar-Friedman Books, $35 hardcover, 2001) was compiled by Irish-born master chef Noel C. Cullen, who is professor of culinary arts at Boston University School of Hospitality. The excellent color photography is by Ron Manville. The book was released by its publisher just this month, so no recipe-testing was possible. I did find a few recipes with missing ingredients, so far, but the recipes selected here were adjusted for home cooks and the missing quantity of shallots restored to one.

    Scripps Howard News Service My first taste of authentic Irish food was the Emerald Isle's justifiably famous sweet butter, which is shipped all over Britain. I was simply having a Gatwick airport-hotel breakfast, wondering about the ubiquitous silver toast racks in that part of the world, which do nothing but look charming while offering up cold toast triangles. Then the creamy sweet butter arrived at the table, along with rashers of lean Irish bacon, soft-boiled eggs with a side of broiled tomato and a pot of bitter marmalade made from Seville oranges. I suddenly liked everything, even the cold toast, but was positively bowled over by the fresh dairy butter boldly labeled on gold wrappers as Irish. Like the triple cream poured over sherried English trifles, Irish butter seems richer somehow: butterfat taken to its ultimate creamy state with negligible water whipped into its pale yellow depths. We were seated close by the hearth where a real turf fire was burning low. There was plenty of cellar-temperature dark beer to drink and strong tea, white tea, in fact, but milk never tastes as right in tea once you leave Great Britain. Neither does Irish soda bread taste as good without the beautiful Irish countryside in view beyond the windowsill. Therefore, my baking endeavors once back home stateside are best described as Irish "in spirit," if not exactly "in recipe."

The idea I had was to survey Irish cooking in one area in this case, the Guinness-soaked neighborhood around North Station to find if not the best Irish cooking in Boston, then at least a representative sample. Several pints later, and several meals that chiefly involved sausage and some form of potato, I've decided that there are probably better places to survey Irish cooking (like, perhaps, any other neighborhood in Boston), but there's at least one fine meal to be had if you know where to look. I started not with the oldest pub in the area, but with the newest: Grand Canal, an elaborately decorated place that opened at the southeast end of Canal Street this past winter. Its look is Dublin Victorian, which means framed prints, wine-colored wallpaper, tasseled lampshades, and the overall feeling of a bordello conceived by Disney.

Only in the last decade or so has this become more commonplace, with the pace of life increasing and the standard of living rising, but it is still largely confined to the younger generation. Eating out in Dublin is not cheap, and with real estate in the city running at close to the most expensive in Europe, city centre restaurants need to make a good return on investment, resulting in very expensive restaurants being the norm. Nevertheless, there has been an explosion in the number of restaurants in Dublin in recent years and the industry is in a boom with the affluent consumer reaping the rewards. Traditional Irish Cooking Just what constitutes traditional Irish cooking is a subject of much debate - with a colonial past and an impoverished population largely confined to the land until the early part of this century, there is no wealth of cuisine to draw on. But what is considered traditional is steeped in pure natural flavors and simple preparation and, when prepared properly, is a joy to consume. Simple meat dishes and boiled root vegetables such as the ubiquitous potato, carrot, turnip and parsnip form the principle constitutents of traditional Irish cuisine.
