It doesn't matter whether great grandmother came by ship from Norway or grandfather was a boat person from Vietnam. When March 17 rolls around, everyone no matter where he or she comes from is a little bit Irish! And, being a little bit Irish means dishing up some good Irish food corned beef and cabbage, potatoes, shamrock rolls, Irish soda bread, Irish lamb stew and green beer.
Lowly cabbage isn't so lowly any more
The lowly cabbage the plainest of plain vegetables now gets rave reviews from the nutrition world. Cabbage is a good source of vitamin C (one cup raw coarsely shredded or sliced supplies around 33 milligrams). It's low in calories with one cup amounting to only 15 calories. Vegetables contain dietary fiber, often called roughage. Cabbage contains insoluble fiber in the form of cellulose. It is not digested by humans and does not dissolve in water. Research suggests that this insoluble fiber increases bulk and speeds up the movement of body wastes though the intestines and the colon. The outer leaves of cabbage are nutrient-rich, so choose a head without loose or wilting outer leaves that would be discarded. Look for a solid, compact head that is heavy for its size and shows no discoloration. Cabbage keeps best when wrapped in plastic and placed in the refrigerator crisper.

Elegant perfectly describes this well-produced book that is much more than a cookbook although to be sure you'll find lots of great gourmet recipes here. The introduction reads like a culinary travelogue of the Emerald Isle including recent changes in Irish cuisine, popular ingredients, dishes, and potables, regional cuisine and important Irish chefs and restaurants. The author, an Irish native who now calls Boston home, is one of only 52 Certified Master Chefs in the US. His mixing of both cultures has resulted in a fabulous ethnic cuisine cookbook with American sensibilities. While this is first class gourmet cuisine, the recipes are straightforward and easy to understand much less intimidating to actually make than the gorgeous full color photographs of the completed dishes would have you believe.

When Americans envision an Irish supper, most think of potatoes, cabbage, and corned beef all boiled too long, salty, and greasy. Noel Cullen, an SHA associate professor of hospitality administration, plans to change that. Noel Cullen.
Photo by Kalman Zabarsky His new cookbook, Elegant Irish Cooking (Lebhar-Friedman, 2001), contains almost 200 sophisticated recipes that will shake preconceptions about Irish food, which in the United States are based on the pedestrian dishes brought here by poor immigrants fleeing the 19th-century potato famine. "People sometimes say to me that Irish cuisine sounds like an oxymoron," says Cullen, a jovial man who speaks with the accent of his native Dublin. "To which I say, 'Lord, forgive them. They know not what they do.' In Ireland, there has been absolutely wonderful food before and since the famine."

The Food of Ireland

I started out this feature asking my dad what he remembered about the meals in Ireland when he was there in the 1950's. He didn't have a lot of time there since he was on leave from the Army but he did remember this: "What I recall having for breakfast at my Aunt Lily's was fried eggs, (the yoke was hard), scones and tea. Uncle Fred and Aunt Lily took me out to lunch and I ordered liver and onions, the other choice was tripe, they were the specials that day." After talking with him I did more research and looked through many recipes. The ones I chose are traditional farm recipes. If you visit Ireland now you will find a wide variety of dishes to rival those any where in the world-especially the fresh seafood dishes. However, I thought the frugal recipes from long ago when Irish homemakers used what was available to them were so much more interesting. You will find mostly ingredients such as pork, potatoes, cabbage and herbs. Cows were used primarily for milk, and pigs were raised for food. Pork can be smoked, salted and brined-every part of the pig was used.Some farms raised sheep, and so you'll also see mutton used in Irish cooking as well. Dairy products are used a lot too, again because it was available to families. Buttermilk was used in recipes and for a beverage. Seafood was used when it was readily available to those that fished or could buy it inexpensively. Smoked fish and good aged cheese served on a nice brown bread was a nice treat to start meals.
