by Diana Farrell Serbe St. Patrick's Day is a holiday unique to itself. There is no single personage, such as jolly old Saint Nick, to celebrate. The good Saint Patrick is overlooked in favor of the celebration of an entire nation of people and their descendants. Instead of hiring someone to dress up like Santa, we outfit ourselves in green, and celebrate whatever claim to Irish blood we have. Green derbies with shamrocks, worn by people who have no Irish roots, replace artificial beards and red stocking caps. It is also a holiday that has specified only corned beef and cabbage for its celebratory meal. As much as we love this classic, we think there may be other dishes to taste. Irish cooking reflects the temperament of the people. The Irish are a lyric group, so poetic by nature that they have a saying: 'Never harm a poet, never love a poet, and never be a poet." The Irish have given us the finest poets and writers, and their instinct toward the music inherent in language spices their food.

click for Irish recipes Editor's Note: If you travel in Ireland, you will be offered a hearty Irish breakfast. It will be served on the best china with the finest linen and lace. Eat hearty, lads and lassies, Ireland invites walking... If you are heading out for a walk under the drizzle that Ireland calls rain, you need a breakfast that will sustain you, and an Irish breakfast is substantial. You will be offered farm fresh eggs with the sunniest of yolks along with sausage, eggs, bacon, grilled tomatoes, black pudding, white pudding. On the side is Irish brown bread served with sweet Irish butter and the famous Irish preserves. Top off breakfast with a cup of Irish breakfast tea, a medium rich tea, and put in lots of milk. Bacon in Ireland is back bacon, a meatier bacon than is sold in the United States, its closest equivalent being what is called Canadian bacon in the US. And then there are the puddings, sold in packages the size of salami. Black pudding is really a blood pudding which is a staple across the European continent. The French call theirs 'boudin noir,' the Spanish 'morcilla,' the Germans 'blutwurst,' and the Italians 'sanguinaccio.' The Italians even make a sweet pudding for dessert from blood pudding.

That's why I enrolled in a three-day course called Winter Wonders at the legendary Belle Isle School of Cookery in this charming Northern Ireland town.
Under the guidance of our affable instructor Liz Moore, I and nine other students were taught everything from how to sharpen knives to prepare delicious, hearty dishes using Moore's recipe for success: local, simple and fresh food.
Moore is a natural teacher and entertainer. While she's on a mission to get people off "rubbish," she also believes that cooking should be fun.
She pours batter into a smoking hot pan and starts cavorting like a disco dancer while swirling the pan to create an ultra-thin crepe. Next thing I know my partner Alison and I are gyrating and giggling as we attempt to produce a stack of paper-thin pancakes.
"It's amazing how many people watch Food TV with frozen dinners on their laps," she scoffs. "You must be aware of what you're eating."

Despite the constant stereotyping, Irish cooking or baking does NOT consist of adding whiskey to a recipe. There are a great many traditional and modern Irish recipes that go beyond "corned beef and cabbage" (a combination invented in the US by Irish immigrants because that was the cheapest cut of meat available to them.). By all means try all of the recipes in these books but remember to show your children some of the dishes made in the 19th century so the tradition can be carried on. with Food Network Kitchens on Irish Cooking Q: The Irish are famous for their potatoes. Do you use a lot of potatoes in your Irish cooking? A: Most definitely! Preferably, at every meal. They are made in a different way, of course, but that was a basic staple of Ireland. They would even make biscuits with oatmeal or oats, and potatoes; they would make these wonderful oat biscuits. Some of our favorite Irish potato recipes are the simplest, like when potatoes are just simply cooked, wrapped up in foil, and put into the fire, like in the hearth. They get a wonderful smoky flavor from being cooked in the ashes. Then, you take them out, and drizzle them with lots of fresh butter. If your potatoes turn black after they are boiled, you may be using an aluminum or reactive pot, so it's important to use a pot that's non-reactive.
