East India West India ... cooking >North India >Snacks Hara Bhara Kabab Serves Preperation Time 30 Minutes Contents Green Vegetables Ingredients 3-4 medium sized boiled potatoes ¾ cup of boiled green peas 100 gms spinach 1 tblspn chopped green chillies 2 tblspns chopped green coriander 1 tblspn chopped ginger 1 tspn chaat masala Salt to taste 2 tblspns cornflour (cornstarch) Oil for deep-frying Recipe Peel and grate boiled potatoes. Mash boiled green peas. Blanch spinach leaves in plenty of salted boiling water, refresh in cold water and squeeze out excess water. Finely chop. Mix grated potatoes, peas and spinach. Add chopped green chillies, chopped green coriander, chopped ginger, chaat masala and salt. Add cornflour for binding. Divide the mixture into twenty five equal portions. Shape each portion into a ball and then press it in between your palms to give it a flat tikki shape. Heat oil in a kadai. Deep-fry the tikkis in hot oil for three to four minutes. Chef’s Tip : You may also shallow fry hara bhara kabab on a griddle plate or a tawa. It is recommended that you do not use colour in this recipe. If you feel you may increase the quantity of spinach leaves to give a dark green colour. In that case add a little more cornflour/cornstarch for binding.

Tandoori Chicken on a Stick
Tandoor is a clay oven. Tandoori chicken is probably the best known Indian dish world wide. In this recipe we will use skinless boneless chicken breast or chicken tenders, use typical Chicken Tandoori spices and bake in the conventional oven.
Ingredients
1. Onions Finely Chopped: 1 Cups
2. Garlic crushed: 4 Cloves
3. Coriander Powder: 1 Tablespoons
4. Cumin Powder: 1 Tablespoons
5. Turmeric powder: 1/2 teaspoon
6. Fenugreek powder: 1/4 teaspoon 7. Ginger powder: 1/2 teaspoon 8. Hungarian Paprika: 1 teaspoon 9. Bay Leaves: 2 10. Cinnamon powder: 1/2 teaspoon 11. Cloves powder: 1/4 teaspoon 12. Yogurt: 1 Cup 13. Tomato Puree: 1/4 Cup 14. Salt: 1 Tablespoon 15. Cayenne Pepper powder: 1 teaspoon 16. Chicken Skin less Boneless Breast: 2 Pounds 17. Bamboo Skewers: 16 Method Step 1: In a stainless steal, or plastic or glass bowl. Mix Items 1 through 15. Whisk. You should have a red/orange color paste. Don NOT add any water. This is the marinate. Step 2: Cut chicken breast in to about 1/4" thick, 4" to 5" long, 1" to 2" wide strips. You should have about 16 strips. Pierce every strip with fork. Put the chicken in the marinate. Marinate for about 3 hours at room temperature or for about six to twelve hours in the refrigerator.

Kerala cuisine is very hot and spicy.(Guess, one would expect that in the spice capital of the world!).Like most places in india, food is traditionally eaten by the hand and served on a banana leaf. Unlike the west, where food is consumed by courses, along with the appropriate wines, most indian dishes do not follow courses and do not go along with any alcohol, with the exception of beer. As with many aspects of keralan culture, the cuisine has been influenced by numerous tradition. It is a creative anddelectable combination of vegetables , meats and seafood flavoured with a variety of spices and almost always cooked in coconut milk. The result is delicately prepared dishes, which are healthy and exciting. Some believe the cuisine of Kerala has been influenced by Ayurvedic philosophies, which prescribed combination of ingredients with the particular purpose of promoting health and vitality.
