  • Paprika
Hungarians use an amazing amount of Paprika. If you are going to make Hungarian dishes you must buy imported Paprika. Do not use the paprika in the little jars in the supermarket. It is not the same quality as imported. Paprika comes in six categories: exquisite delicate, delicate, noble sweet, semi-sweet, rose, and hot. I usually buy Szeged brand Paprika "Sweet Delicacy". It is not spicy but has excellent flavor. If you want fiery hot, then look for paprika labeled "Eros" which means hot. Any Paprika labeled "Sweet" or "Edesmes" has a lack of spiciness.
  • Lard and butter
Many of these recipes call for lard. If it is a pastry do not omit lard. It gives the dough a flakiness and crispness characteristic of a lot of Hungarian pastry. If a recipe calls for butter, use butter. Do not use margarine. It will not give the best results and flavor. In frying recipes such as doughnuts, Listys etc. Lard can stand a much higher temperature than Oil, but never let it get so hot that it smokes.
  • Eggs
If a recipe calls 24 egg yolks, use 24 egg yolks, not 12 whole eggs. It will not work.

by Randall Price Hungarian cooking has retained its identity perhaps better than any other cuisine in Eastern Europe, yet its pleasures remain unknown or underrated in the West, outside of our pale interpretations of "goulash" (although I'm starting to notice Hungarian inspired dishes on some top restaurant menus, notably David Bouley's Danube in New York City). In the late '80s, I was lucky enough to work a two-year stint as the chef to the U.S. ambassador in Budapest. Despite the challenges of getting ingredients in what was then a Communist bloc country, I gradually discovered many of the secrets of Hungarian cooking, and I became a passionate convert to the Joys of Paprika (see Pick a pack of paprika Soup of the Bakony Outlaws Hungarian cooking is not light and lean by any means, but I find these rich and complex dishes perfect for entertaining during the cold months of winter. Sour cream is the favored dairy product to lighten paradoxically and refine a dish. I think you'll find that the small amount of sour cream in the chicken dish doesn't make it feel overly "creamy," but rather gives tang and body to the sauce, which becomes a deeply flavored, deeply colored glossy coating.

And what MIGHT be the best part of any trip to Budapest...
THE FOOD! I must say that I don't think I had anything bad the whole time I was there. We ate in a variety of places, both upscale and out-of-the way, and the food was consistently good. In some of the places the service was fashionably slow (some Americans would say excruciatingly slow) but the food was always worth the wait. The one meal that especially stands out was begun with a chopped tomato soup and topped off with whole trout wrapped in bacon (which was really more of a prosciutto). Everywhere we went seemed to have excellent soup, which I must have had in some variety every single day. I picked up a cookbook in a local bookstore (yes... in English) which is a reprint of a book first published in 1934. The author, Karoly Gundel, was a famous Hungarian chef of the early 20th century, who in addition to relating list of ingredients seemed interested in preserving the authentic local cooking traditions. So, the recipes do not just list ingredients and measures, they have wonderful descriptions of the cooking techniques and preferences of the various Hungarian culinary traditions (For example, he spends a whole page on how to brown onions and add the paprika!). The following recipe is my version of one that is quite typical of the region (and that I have had good success with). Sorry that I don't have the descriptive flair or knowledge of a Chef Gundel, but I love to eat and I know what I like! The following recipe is based on the book but adapted... (I personally don't follow the original instructions of frying the onions in 80 grams of fine lard!) Add a little hot bread and this makes a fine meal.

The Bottom Line Rich sauces, heavy in paprika, Hungarian food is definately different to typical food from neighbouring countries. Give it a try - it is certainly interesting!
PAPRIKA PAPRIKA PAPRIKA!
"PAPRIKA" is really the biggest thing you need to know about Hungarian cuisine!
If you go into Budapest's huge market, you will see stalls selling huge rings of sausage, and ground paprika ....... (incidentally, they also sell huge bags of dried mushrooms (Cepes, Penny Buns and Chanterelles, amongst others), for £3-£4 a bag - the bargain of my holiday!
However, one look at any traditional restaurant menu will also tell you that demand is also huge.... Paprika sausage, Gulyas soup, chicken in Lesco, even the salads have peppers in them, and the list is endless - the country is Paprika mad!
And what do these meals taste like? Well, you often get a meat based stew, with an exceptionally rich, tasty, sweetish, peppery sauce (this isn't particularly hot), with either fried potato wedges, potatoes with diced parsley, dumplings, or a kind of pasta, with which to mop up the excess sauce. Vegetables can be a little rare in Hungary! Although, the basic taste is similar, Hungarian chefs achieve different taste combinations with paprika by also adding other flavourings such as garlic, black pepper, caraway seeds, marjoram, tomatoes, sour cream, parsley and mustard in different combinations and permutations.
