There are two non-mysterious things that everyone knows about carrots. They are orange and they help prevent night blindness because they are chockful of vitamin C. Both of these facts are technically incorrect. Carrots were formerly every color but orange: red, black, yellow, white and especially purple. First cultivated in Afghanistan in the 7th century, carrots originally had purple exteriors and yellow flesh. In the Middle Ages, the Dutch developed the bright orange carrot we now know as the bearer of carotene. Once in contact with the human intestine it is converted to vitamin A. Because of this vegetable's inherent sweetness, it has been used for desserts and candies long before the ubiquitous carrot cake.The Irish and English make a carrot pudding, the French make a cream with candied slivers of carrots in it, "tzimmes" a sweet carrot stew, is traditional for the Jewish New Year and early New Englanders gave carrot cookies as Christmas gifts. Two billion pounds of carrots are grown annually in this country alone, mainly in Texas, Wisconsin, and Minnesota. Quite a few also emanate from Holtville, California which dubs itself "The Carrot Capital of the World."

    CRAWFISH WITH SPICY LOBSTER SAUCE

    Trey Yue INGREDIENTS 1/2 pound crawfish tails 4 ounces pork, finely chopped 1 tablespoon peanut oil 2 white onions, cut in 2-inch strips 3 green onions (white part cut in 2-inch slices, green fine cut for garnish) 1/2 tablespoon light soy sauce 3 tablespoons dry sherry or rice wine 1/2 cup chicken stock Crush the following five ingredients together: 1/2 teaspoon ginger, chopped 1/2 teaspoon garlic, chopped 1 teaspoon black beans, rinsed 1/2 teaspoon sugar 2 to 3 chili peppers Seasonings:
    Mix these ingredients together 1/2 teaspoon sesame seed oil 1/2 teaspoon dark soy sauce 3/4 tablespoon cornstarch 1/2 teaspoon peanut oil Salt INSTRUCTIONS Heat wok or heavy skillet until hot. Add peanut oil and pork. Saute both sides until slightly brown. Crush together garlic, ginger, chili peppers, sugar and black beans and add to oil. Add onions and stir for 10 seconds. Add crawfish and saute with wine and light soy sauce. Add chicken stock and cover. When mixture comes to a boil, add seasonings and corn starch, stir until thickened. Spread beaten egg over mixture. Reduce heat and cover for l0 seconds more. Remove to serving platter and garnish with green onions. Stop by Louisiana Foods Crawfish Market for fresh ingredients

    Spicy Chantaboon Rice Noodle Soup
      Spicy Chantaboon Rice Noodle Soup
    • 1/2 lb Chantaboon Rice Noodles (Jantaboon or similar spelling may be on pkg.)
    • 2 cups chicken or pork stock handful bean sprouts
    • 2 tbls ground pork
    • 3 prawns, shelled
    • 3 fish balls
    • 3 slices fish cake
    • 3 thin slices cooked pork loin
    • 3 thin slices BBQ pork
    • 3 tbls fish sauce (or to taste)
    • 1-2 tbls rice vinegar
    • 1 tsp sugar
    • 4-6 thin circular slices jalapeno, serrano or other hot pepper (to taste)
    • 1/4 tsp dried roasted red thai chiles
    • 1/8 tsp red chile flakes
    • 1 Tbs lime juice
    • 1/2 tbls thinly sliced scallion
    • 1 1/2 tbls coarsely chopped fresh cilantro
    • 1 1/2 tbls ground peanuts Roast the red Thai chiles in a skillet until they turn a deep, dark red color and then pound them into small flakes in a mortar. Break pkg of noodles in half horizontally. Soak noodles in cold water for 30 to 40 minutes, drain. Add bean sprouts to noodles, quickly cook in boiling water for about 10 - 20 seconds, drain. Place noodles and sprouts in a large serving bowl. Add the cilantro, scallions and peanuts on top of the noodles and bean sprouts. Boil stock, add meat ingredients, sugar, fish balls, fish sauce, sliced peppers, vinegar and dried chiles. Boil for about 1 minute, no more. Remove from heat immediately and stir in lime juice. Pour over noodles.

    Super Squid - Squid Recipes
    Squid can make a superb meal provided it is fresh and cooked correctly. Old overcooked squid can be chewier than bubble gum and more suitable for tyre retreads than the table.
    Plain Gorgeous Squid Rings
    (serves 4) This is great as a snack or an entree. 1 squid, cut into rings
    2 eggs
    1 cup dried breadcrumbs
    2-3 tablespoons of olive oil
    Freshly ground black pepper (to taste) Method Place the flour in a plastic bag, add the squid rings and, holding the top of the bag tightly closed, shake the contents. Break the eggs into a small mixing bowl, add pepper and beat. Dust off the excess flour from the rings, dip them in the beaten egg and roll in breadcrumbs. Place them on a plate and refrigerate for 15 minutes (to set the breadcrumbs). Drop the rings onto a couple of layers of absorbent kitchen towel, to remove excess oil. Serve quickly, piping hot, with quarters of lemon to squeeze on top.
    Stir Fried Squid with Herbs and Spinach
    (serves 4) This little beauty comes courtesy of the Victorian Fishing Industry Federation and is excellent with rice or noodles. The combination of sesame and olive oil used for cooking would probably suit the previous recipe as well.

    Spicy Potato Salad with Sweet Onions and Sausage Presented by Mary E. Ross on May 30, 2003
    Ingredients:

  • 2 cups green beans, rinsed, ends trimmed and cut into 1-inch pieces
  • 3 pounds Yukon Gold or thin skinned potatoes, scrubbed and cut into 1-inch pieces
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons brown sugar
  • 1 medium sized sweet onion such as a Maui, Vidalia, peeled and sliced cross wise into
  • 1-inch slices
  • ¾ pound (about 3 large) 96% to 98% fat free chicken or turkey sausages, any flavor such as Italian, sun-dried tomato, basil and garlic, etc.
  • ½ cup white or blush wine or water
  • 2 tablespoons Dijon mustard
  • 1/3 cup low fat mayonnaise (2 grams fat per serving)
  • ¼ cup balsamic vinegar
  • 1 to 2 cloves fresh pressed garlic
  • ¼ cup pitted and chopped black olives
  • ¼ cup minced regular or Italian parsley Method: Pour wine into a covered pan and add sausages. Cook sausages on medium-high simmer turning once or twice for 10 to 12 minutes total. If liquid in pan becomes low and sausages begin to brown, add more water or wine. Remove sausage from pan and set aside. Fill a 6 to 8 – cup covered stock pot or pan ¾ full with water and heat on high until boiling. Add green beans and cook until tender crisp, 1 to 3 minutes. Remove beans from water with a slotted spoon and rinse under cold water until cool, drain and set aside.
