Ingredients needed:
  • 4 pounds fresh tomatoes, quartered
  • 10 cloves of garlic
  • 1 small carrot, peeled and finely chopped
  • 2 tablespoons olive oil
  • Salt
  • Freshly ground black pepper
  • 1/2 cup minced shallots
  • 2 tablespoons grated fresh horseradish
  • 1/4 cup chopped fresh parsley leaves
  • 3 cups V-8 juice
  • 2 tablespoons Worcestershire sauce
  • Juice of  2 lemons
  • 1 pint of yellow tear drop tomatoes
  • 1/2 cup thinly sliced red onions
  • 1/4 cup small fresh basil leaves
  • 1/4 cup small fresh tarragon leaves
  • 1/4 cup small fresh chervil leaves
  • 1/4 cup small fresh flat leaf parsley
  • Drizzle of extra-virgin olive oil

Garnish each soup with the tomato and herb salad.
Yields: 6 to 8 servings

1 tablespoon ground cumin

In the past, this dish was prepared only for grand celebrations and weddings, but as people became more health-conscious they began serving it more frequently. Goat meat is one of the healthier meats because it is so low in fat. Yield 4 to 5 servings
1 to 1½ hours (not including marinating) Ingredients:
  • 3 pounds / 1.5 kg goat, cut into 1-inch / 2.5-cm cubes 1 lime 1 large onion, sliced 6 cloves garlic, finely chopped (about 3 tablespoons / 45 mL) 2 teaspoons / 10 mL salt 1 teaspoon / 5 mL black pepper 1 teaspoon / 5 mL thyme leaves ¼ teaspoon / 1 mL finely chopped Scotch bonnet pepper 2 tablespoons / 25 mL canola or vegetable oil 1 teaspoon / 5 mL sugar 5 green onions, chopped (about 1 cup / 250 mL) 2 teaspoons / 10 mL curry powder 2 potatoes, peeled and cut into ½-inch / 1-cm cubes
Method:
Squeeze the lime juice over the goat; let it sit for a couple of minutes and then rinse with cold water. Drain off excess water. Place the goat in a sealable container and add the onion, garlic, salt, black pepper, thyme, and Scotch bonnet pepper. Wearing rubber gloves, rub the spices into the goat with your hands. Marinate, covered and refrigerated, for 1 to 2 hours.

  • 3 garlic cloves, minced
  • 1/2 cup chopped sweet white onion, like Vidalia or Maui
  • 8 ears of fresh corn, grated (about 3 1/2 cups)
  • 2 1/2 cups milk
  • 1/4 cup cream
  • 1 1/2 teaspoons salt
  • Minced cilantro and diced tomato for garnish (optional) Red
  • Pepper Garnish (optional)
  • 1 red bell pepper, roasted
  • 1 red jalapeno, stemmed and seeded (see note)
  • 1 garlic clove
  • Pinch salt
  • 1 to 2 teaspoons water Cilantro Cream Garnish (optional)
  • 1/2 cup cilantro leaves
  • 1 garlic clove
  • 1/2 cup sour cream
  • Pinch salt INSTRUCTIONS:
    Melt the butter in a heavy 3- quart pot. Add the garlic and onion and gently cook until softened, about 5 minutes. Do not brown. Stir in the grated corn, any corn juices from the bottom of the bowl, and the milk. Simmer very gently, stirring frequently, for 15 minutes. Add the cream and salt. Garnish with cilantro and tomato. Or drizzle with the Red Pepper Puree and/or Cilantro Cream for a special occasion. (Place the purees in plastic squeeze bottles for easy drizzling.) Red Pepper Puree: Roast the bell pepper over a gas burner until blackened. Place in a small paper bag, twist shut and let steam for 10 minutes. Remove the pepper and scrape off the blackened skin. Core and seed the pepper. Puree in a blender with the jalapeno, garlic, salt and water. Cilantro Cream: Combine the cilantro, garlic, sour cream and salt in a blender and puree.

Ways to cook Bass
There is only one way to cook bass in my opinion and that is as follows:-
Heat a small amount of oil in a large frying pan and place a filletted side of Bass skin side down into the hot oil.Then just watch as the flesh changes colour going pinkish to a bright white.When all the flesh has turned white dish the fish up and you will have a fantastic tasting fish with a delicous crispy skin.You can have this fish with any thing you choose salad,vegetables,chips etc or just crusty bread.

Keep your bass whole after gutting, fill the cavity with finely chopped red,yellow and green peppers, finely chop two small cloves of garlic, and add with the peppers. take two ounces of extra virgin olive oil and add some oregano and chives, mix together and coat both sides of the bass, put a little inside with the peppers, and keep the rest for basting during grilling. put the bass on some tin foil, add salt and pepper to taste, and put under a medium heat grill for ten minutes each side, baste at regular intervals. serve with a green salad and crusty french bread. enjoy!!!!
