Submitted by: RITALINCINDY "Firm tofu, bell pepper, and red onion, all quickly stir fried in a sweet and sour sauce. A word of caution - this is VERY spicy! If you like milder dishes, decrease the amount of pepper flakes or omit them altogether." Original recipe yield: 4 servings. PRINT: EMAIL: RECIPE BOX: SHOPPING LIST:
INGREDIENTS:
  • 3 tablespoons peanut oil 1 pound firm tofu, cubed 1 red onion, sliced 1 red bell pepper, sliced 1 green chile pepper, chopped 3 cloves garlic, crushed 1/3 cup hot water 3 tablespoons white vinegar 3 tablespoons soy sauce 1 tablespoon brown sugar 1 teaspoon cornstarch 1 teaspoon crushed red pepper flakes
DIRECTIONS:
  • Heat peanut oil in a wok or large frying pan over medium-high heat. Toss the tofu into the oil, and cook until browned on all sides. Once browned, toss in onion, bell pepper, chile pepper, and garlic; cook until just tender, about 5 minutes. In a small bowl, whisk together the hot water, vinegar, soy sauce, brown sugar, cornstarch, and red pepper flakes. Pour over tofu and vegetables, toss to coat, and simmer 3 to 5 minutes, or until sauce thickens slightly.

It was pleasant, chippy aroma. The smell had nothing to indicate a bane to my taste buds lurking inside. I fished one out, said a Hail Mary, and popped it into my mouth. The taste was nothing but chip with a slight hint of what might be described as Parmesan, but tasted more like a diluted sour cream and onion flavor. At that moment, I detected only a slight hint of spice, so I proceeded to devour the bag.

    lthough most chili peppers are indigenous to South America, they are used and grown around the world. Hot peppers are used in abundance in Mexican, South American, Indonesian, African and Oriental cooking, while the milder peppers are common in European and North American recipes. And, peppers have been cultivated for thousands of years for their medicinal properties, known for lowering blood pressure and cholesterol, in addition to their culinary purposes.
    What Are Peppers?
    The word "peppers" can bring to mind several images. On one end of the spectrum is the sweet bell pepper . On the other is the hottest of the hot peppers, the habanero chili pepper . One has virtually no heat while the other will melt the taste buds off your tongue. Yet these and all those in between are peppers. (By the way, that bit about the habanero melting your taste buds, I was just kidding . . . but it's pretty near the truth!)
    The one thing that all chili peppers share is the common name "capsicum" (pronounced KAP-sih-kuhm). Capsicum, from the Greek kapto meaning "to bite," is the pepper genus. The five big species of chili peppers are:

    Select an assortment of nice fresh chilli's, firm but ripe tomatoes. Char the capsicum and removes the skin and seeds. Remove the stalk and eye from the tomatoes. Blanch the tomatoes and remove the skin and seeds. Peel and remove the seeds from the cucumber. Dice all the ingredients finely and place in a large stainless steel bowl. Add the salt, pepper, garlic, red-wine vinegar, lime juice and shredded herbs Mix well, cover, stir occasionally and leave in the fridge for 2 hours minum

Hot 'n Spicy Barbecued Chicken 1 cup catsup 1/4 cup firmly packed brown sugar 1/4 cup lemon juice 1 tablespoon Worcestershire sauce 2 teaspoons water 2 garlic cloves - crushed 1/2 teaspoon dry mustard 1/8 teaspoon hot sauce 1 teaspoon paprika 1 teaspoon pepper 1/2 teaspoon dry mustard
    8 skinned boned chicken breast halves (4-ounce) Vegetable cooking spray
    Combine first 8 ingredients in a 1-quart measure; stir well. Cover with wax paper; microwave at HIGH 3 minutes. Set aside. Combine paprika and next 3 ingredients; sprinkle over both sides of chicken breast halves, and set aside. Coat grill rack with cooking spray, and place on grill over medium-hot coals. Place chicken on rack; cook 10 minutes on each side or until done, basting occasionally with catsup mixture. Yield: 8 servings
