Pound all the fresh peppers together in a mortar with a pestle and set aside, or puree in a food processor or blender until green and soupy, about 30 seconds. Dissolve the tomato paste in 1 cup of the water and set aside. 3. Crack the eggs into the pan without breaking the yolks and cook in the sauce over medium heat until they set, about 15 minutes over a medium heat. Season with salt and serve. Spicy Minced Meat Rolls
Cevapcici This dish is actually Middle Eastern in origin, but the Croatians along with all the other South Slavs now lay claim to this tasty grilled main dish. Serves 8 to 10 1 1/2 pounds ground beef
1 teaspoon freshly ground black pepper
3 tablespoons chopped parsley
1/2 pound ground lamb
1 tablespoon salt
1 teaspoon minced garlic or garlic powder Put all of the ingredients into a large mixing bowl and knead well to bind the meats and spices together. Refrigerate for about 2 hours and then take out and knead well again.Shape into finger-length shapes (just like small sausages) and cook on a grill or in a broiler over a moderate temperature so that they stay juicy. Turn only once and do not pierce. Serve in warmed or grilled Greek-style pita bread on a bed of onions. Also good with kajmak or sour cream, fresh peppers, ajvar and tomatoes. This dessert can compete with the finest Viennese pastries! It is actually popular throughout the Balkans. It takes some effort but the results are well worth it! Serves 12 to 16 2 cups evaporated 2% milk

8 egg yolks
1 cup granulated sugar 4 teaspoons vanilla sugar (or substitute equal parts vanilla and sugar) 1 cup flour 2 tablespoons clear gelatin (Knox) 2 cups whipping cream 1 package (16 ounces) puff pastry powdered sugar for garnish strawberries for garnish (optional) Bring the evaporated milk and regular milk to a very gentle boil in a double boiler. While waiting for the milk to boil, in a separate bowl mix together the yolks, granulated sugar and vanilla sugar at medium speed with a mixer. Add flour to the yolk mixture until blended.

Duck with Mushrooms
2 ducks cut in pieces
1 small clove garlic,minced pinch thyme
4 ounces cubed ham
1 teaspoon chopped parsley
1/2 pound mushrooms
Salt and pepper
3 tablespoons butter
12 small white onions 1 tablespoon flour Brown duck in butter. Add rest of ingredients except for onions. Saute 10 minutes. Stir often. Cover 1/2 of mixture with water. Simmer about 30 minutes until done. Add onions for the last 15 minutes. I use the small pearl onions in a jar. They have a nice flavor. This recipe was sent to me by Tom Lipe "Donone" Marvelous Mallard Breasts Fresh Ducks Flour Morton's Nature Seasoning (Garlic salt, onion salt, black pepper, MSG) Cooking oil 2 eggs 1 cup of milk Filet breasts from ducks. Place on cutting board and cut across the grain in 1/2 inch strips. Beat out with a tenderizer. Beat the eggs and mix with milk. Mix Nature's seasoning, salt, pepper and flour. Dip the strips in the egg batter then dredge in the flour mixture. Drop in hot oil. Remove as soon as brown. Do not over cook. One duck serves 2 people.

Add almond, heat, sautee 10min or until start smelling wondeful. Add more oil as needd to prevent sticking. Add raisins, more oil, cook, strring for 2 minutes, then cover and let cook. Check and add oil every now and then if needed for anothee 5 min. Remove from heat Open anchovy can. Eat one. tear one in half, give 1/2 to cat. Wave other half at housemate who 'hates' anchovy then give to cat. Take 2/3 of remaining anchivies, cut into tiny pieces. Mix into nuts/raisins.   • 1/2 cup chopped onion 1 tablespoon oil 1/2 teaspoon cumin 1 teaspoon chili powder 1 1/2 teaspoons turmeric 1/2 teaspoon cayenne more for spicy curry 1/2 cup water 1/2 teaspoon salt 1 pound parsnips peeled and cubed 1/3 cup green peppers cut into thin strips 1/4 cup chopped peanuts
Saute onion in oil in a 1 1/2 quart pot for 5 to 8 minutes until golden.
Add spices and cook, stirring, for 1 minute.
Add water, salt, and parsnips, bring to a boil, cover, and simmer over low heat for 20 to 30 minutes until vegetable is tender but not mushy.
Sauce will become quite thick. Garnish with pepper strips and peanuts before serving.

  • 1 tsp vegetable oil 1 onion diced 1 lb sauerkraut 1 tsp caraway seeds 4 turnips sliced 1/4 c spicy brown mustard
Steam the turnip slices until tender-crisp.
Preheat oven to 350 degrees F. In a large skillet, saute onions in oil.
Grease a 2-quart casserole dish = and make a layer of sauerkraut and caraway seeds.
Add turnips and mustard in another layer.
Top mixture with sauteed onions.
Bake, uncovered, for 30 minutes.
Stir before serving.

CHICKEN SANDWICHES WITH CHIVE BUTTER
Garnish each plate with pickles, cherry tomatoes and radishes. Start with a steaming mug of potato soup, and end with wedges of apple cake.
3 tablespoons butter, room temperature
1 1/2 tablespoons minced fresh chives or green onion tops
1/2 teaspoon Dijon mustard Pinch of cayenne pepper 4 large slices whole wheat sandwiches bread 8 ounces purchased roast chicken, thinly sliced 1 small bunch watercress, thick stems trimmed Combine butter, chives, mustard and cayenne in small bowl; blend well. Season to taste with salt and pepper. (Butter can be made 1 day ahead. Cover; chill. Bring to room temperature before continuing.) Spread chive butter on 1 side of each bread slice. Place chicken on buttered side of 2 bread slices. Top chicken with some watercress. Press remaining 2 bread slices, buttered side down, onto watercress. Cut each sandwich into 4 pieces. Arrange any remaining watercress on 2 plates. Top with sandwiches. 2 servings; Can be doubled.

  • 1 6 lb. roasting chicken
  • 1 32 oz can chicken stock
  • 1 cup coarsley chopped celery (Save all veggie trimmings for stock)
  • 1 cup diced red bell pepper
  • 1 cup sliced carrots
  • 2 medium onions coarsely chopped
  • 1 cup corn kernels
  • 1 16 oz can diced tomato
  • 1 cup chipotles in adobo sauce
  • 1/2 tsp thyme
  • cracked black pepper to taste
  • salt to taste (I use heavy chinese soy sauce) Roast chicken in oven till done, cool overnight. In a large stock pot add bones and carcass as well as veggie peelings, carrot butts and onion skins etc and cover with cold water. Bring to a boil, then simmer for 2 to 3 hours, skimming and stirring occasionally. Strain through a collander and add stock back to pot. Add celery, bell pepper, corn, onions and carrots as well as the canned stock and bring to a simmer. Cook until veggies begin to turn tender. Add chicken and canned tomato. This makes a big old pot full which would probably serve 20 or 25 people. Good for freezing and serving at a later time.

To make the salad, Mary uses leftovers from a roast chicken and adds giardiniera, Italian-style pickled vegetables.
2 1/2 cups diced cooked chicken (from purchased roast chicken)
1 cup chopped drained spicy giardiniera from jar
1/2 cup mayonnaise
1/4 cup (packed) chopped fresh basil 1 tablespoon giardiniera juices 1 teaspoon dried salad herbs 8 slices egg bread, toasted 4 Boston lettuce leaves Combine chicken and next 5 ingredients in medium bowl; stir to blend well. Season salad with salt and pepper. Place 1 bread slice on each of 4 plates. Top each slice with 1/4 of chicken salad, lettuce leaf and second bread slice. Makes 4 sandwiches. Too Busy To Cook? Jerk Marinade
  • 1 onion minced
  • 2 sprigs fresh thyme
  • 4 sprigs cilantro

  • 12 tablespoons "Taste of Thai" spicy peanut salad dressing mix 6 tablespoons plus 2 teaspoons fresh lime juice 4 teaspoons dijon mustard 1-1/3 cups vegetable oil 1/2 cup unsalted peanuts, roughly chopped
Preparation Preheat the broiler. Mix all dressing ingredients together and set aside. Arrange the Norwegian cod fillets in a baking dish. Brush each fillet with 1 tablespoon of dressing. Cooking Broil the Norwegian cod fillets, without turning, until they are done. While fish is cooking, put 1 cup of salad greens on each of the 12 plates. Divide the cilantro leaves, sweet pepper and cucumber slices evenly among the plates. Dress each plate of greens with 1 tablespoon of dressing. Set the cooked cod fillet on the greens. Dress each fillet with 1/2 tablespoon of dressing. Sprinkle the salads with crushed peanuts and serve. Back to Top
