    2 cups nonfat dry milk, 3/4 cup sugar, 1/2 c. cocoa, 1/2 cup powdered creamer, dash salt. Combine all ingredients and blend well. Store in tightly covered container. Makes 3 3/4 cups mix. (about 15 - 6 oz. servings) For single servings mix 1/4 cup mix with 3/4 cup hot water. Grandma's 7-layer cookies
    1 cube margarine-melted, 1 cup graham cracker crumbs, 1 cup coconut, sm. pkg. choc. chips, sm. pkg. butterscotch chips, 1 1/2 cups nuts, 1 can Borden's condensed milk. Layer in order. Bake for 30 minutes at 350 degrees.

Many of our books are specifically related to holidays. Other books have material that you might want, but where to look for them isn't easy to figure out. Some of the books may sound strange, but do have the special or ethnic recipes that we might not have in a cookbook on the country or region. Some will give some cultural information and provide names that can be searched as subjects. The Art, Music and Recreation Dept. has materials on entertaining and parties. Some of their materials will also contain some cookery. The Science, Technology and Patents Department has a large collection of materials on holiday cookery. These materials can be found on terminals in our branches and on the Internet at www.lapl.org and clicking on the home page catalog button. Circulating copies can be reserved on these terminals and sent to the desired branch for pick up. Definitions from the Random House Dictionary of the English Language cook 1. to prepare (food) by the use of heat, as by boiling, baking, or roasting. Page 445

The holidays are here again-time to celebrate with family and friends and to enjoy lots of delicious, delectable delights. But wouldn't it be great if traditional holiday fare could be both good for your health and pleasing to your palate? Here are some tips and ideas to help you plan and prepare healthy, crowd-pleasing food for this holiday season.
What's Cookin'?
When you are thinking about which foods to make for your family and friends, take into consideration any special needs they may have. If possible, try to adjust some recipes to accommodate them. For example, you could leave the salt out of some dishes and let diners add their own. You could cook a small meatless version of a casserole. For tips on preparing low-sodium foods check out:

Whoever the inventor was, he or she discovered that three successive dips in oil produces the very crisp crust that makes this a deep-fried classic. 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
1 tablespoon Japanese soy sauce
1 tablespoon dry sherry
1 large egg, beaten
1/2 cup cornstarch
3 cups broccoli florets
Peanut, corn or vegetable oil for deep-frying
1/4 cup homemade or low-salt canned chicken broth
1/4 cup Japanese soy sauce
3 tablespoons dry sherry
1/4 cup sugar 1 1/2 tablespoons rice vinegar 1 tablespoon cornstarch 6 tablespoons cold water 1 tablespoon minced garlic 10 small whole dried red chilies At least 1 hour before serving, coat the chicken: Place a large wire cake rack over a jelly roll pan. Place the chicken in a medium bowl. Add the soy sauce and sherry and mix well. Add the egg and mix again until well coated. Put 1/2 cup cornstarch in a shallow bowl. A few pieces at a time, roll the chicken in the cornstarch. Place on the wire rack without the pieces touching each other. Set the bowl of cornstarch aside. Cover the chicken loosely with plastic wrap and refrigerate to set the coating, at least 30 minutes or up to 4 hours, the longer the better. Remove from the refrigerator 30 minutes before deep-frying.
  • In a large saucepan of lightly salted boiling water, cook the broccoli to set the color, about 1 minute. Using a wire mesh skimmer, transfer the broccoli to a bowl of cold water and set aside. Keep the water boiling.

    "A Great Miracle Happened There"
    T he dreidel T his is a family holiday, celebrated at home and much loved by children for its songs and games, gifts of Chanukah Gelt (foil covered chocolate coins or even real money, ) and special foods. Chanukah Gelt is the name of a short story by Sholom Alechem, a writer of Yiddish Folk tales. As the story opens, he asks: "C an you guess children, which is the best of all holidays? Why Hanukkah, of course. You don't go to school for eight days in a row, you eat latkes every day..."
    L atkes is the Yiddish word for pancakes. The tradition of eating potato pancakes which are shallow -fried in oil is from the Polish tradition, I think. My grandmother's family are from a little town in Poland that is no longer in Poland. In fact, the town of Zabeltov no longer exists, destroyed in the war. M y grandmother's latkes were a miracle of their own crunchiness and flavor. She fried them in Planters Peanut oil, and the memory of the flavor still lingers. That fragment is all I have of Zabeltov. Does anyone remember the Planters Peanut Jar, shaped like Mr. Peanut? N ormally for Chanukah, foods are fried in oil, and served with dairy foods. My grandmother served them with thick dairy sourcream, from the original Daitches Dairy on Bathgate Avenue in the Bronx. I can remember going with her to that store, where they had huge (30 lb) blocks of sweet butter that they cut chunks off with a big square knife, loaves of farmer cheese, and deep vats of pot cheese curds. I remember the warm secure feel of my Grandmother's tight grip on my hand on this busy exotic crowded city street, teeming with stores, pushcarts and flavors and the smell of the appetizing store with pickle barrels. Here was the mythic Zabeltov of my imagining, a Yiddishe homeland, but in America. Holding one of those pickles in my other hand, biting into that crunchy garlicky sour pickle! It all comes back to me as clear as day. That is what holidays are about; remembrance. I remember my Grandmother.

    Fast and easy holiday recipes: Baked eggs recipe with spinach and gruyere
    Tired of eggs sunny-side up? Want to impress your guests for brunch or just try something different? Yummy eggs with gruyere cheese and spinach recipe!
    Ingredients: 2 pounds fresh spinach 1 tablespoon butter 1/2 teaspoon salt 1/2 teaspoon pepper 1 garlic clove, peeled pinch of grated nutmeg 8 large eggs 1/2 cup grated Gruyere cheese Preparation: Preheat the broiler. Pick over the spinach and discard any tough stems or blemished leaves. Wash thoroughly. Bring 1/4 cup water to a boil and place the spinach in it. Stirring, cook for about 1 minute, or until the leaves wilt. Dain the spinach in a collander, pressing the leaves to remove all moisture. In an 11-inch non-stick frying pan, melt the butter and add the spinach, salt, 1/4 teaspoon of the pepper, garlic and nutmeg. Heat through, stirring for 1 minute. Make a small indentation in the spinach for each egg. Break the eggs over the spinach, allowing the whole yolk to settle into each indentation. Sprinkle with the cheese and 1/4 teaspoon pepper. Place the pan about 4 inches from the heat source in the broiler. Broil for 2 minutes, or until the eggs are partially cooked. The yolks should remain runny. Serves four.

    6 zucchini
    2 cloves of garlic, chopped
    oil for deep frying
    4 Tbsp. lemon juice
    2-3 Tbsp. sesame seeds salt Wash, but do not peel the zucchini. Cut each zucchini into 6 strips, and then cut each strip in half Marinate the zucchini in a little bit of the lemon juice and all the chopped garlic for 15 minutes. Fry the zucchini in hot oil in a deep pan. Once the zucchini is browned, remove from the oil and place on paper towels to absorb excess oil. Place the zucchini on a serving plate and season it with the lemon juice, salt and sesame seeds.
