Baked Ham with Mustard Glaze

Yield: 12 To 15 Servings
3 to 5 pounds cooked ham, drained 10 to 12 whole cloves 1/2 cup brown sugar 1 tbsp. prepared mustard 2 tsp. lemon juice 2 tbsp. orange juice 2 tbsp. cornstarch Score ham in diamond pattern and stud with cloves. Place in slow cooker. Combine brown sugar, mustard and lemon juice and spoon on ham. Cover and cook on high 2 hours, then on low for 6 to 7 hours or until ham is hot. Remove ham to warm serving platter. Turn slow cooker to high setting. Combine orange juice and cornstarch to form smooth paste. Stir into drippings in slow cooker. Cook stirring occasionally until sauce is thickened.

Welcome to "Cooking ala Prairie", a look back at frontier cuisine in the 1800's. Cooking was anything but easy for the early settler in the west, with no refrigerators and often long arduous journeys in a covered wagon with just a few boxes, foods either had to have long shelf life or be available wherever these families stopped to camp. No supermarkets, meat counter selections, or produce washed and shiny for these frontier folks. Although "new fangled" discoveries such as vacuum packed meats (Hormel was already making an early version of Spam!) and Borden's sweetened condensed milk were sometimes available, the settlers on the western frontier were often poor and without access to such luxuries. Most dishes were reminiscent of the "old World", with English and European flavor. Regional favorites were carried west such as Virginia ham, Louisiana Creole, Tennessee Barbecue, and Boston Baked Beans. This collection is a variety of meats, breads, soups, fruit and vegetables, desserts, and traditional Holidays dishes that would have been part of frontier life in the 1800's. The recipes are easy to print out and cut apart to add to your own file box.

Tis The Season For Sweet Potatoes
Making Sweet Potato Pie and Other Sweet Potato Recipes by Sidney Carlisle B ig baskets and boxes of newly harvested sweet potatoes begin arriving at farmers markets and grocery stores in early fall. While there are several varieties available, the most common are Beauregard and Red Garnet. Both have dark orange skin and orange-colored flesh that is moist and sweet when cooked. The potatoes are high in fiber, potassium and vitamins A and C, and are naturally sweet. Sweet potatoes are not yams, a fact that nutritionists and food writers have been trying to explain for years. A sweet potato and a yam are two completely different plant species. True yams were brought to this country from Africa and are not grown in the United States on a commercial basis. Their flesh is white and not sweet at all. Occasionally a well-stocked Latin market may have a few yams, but generally they are difficult to locate. Louisiana and East Texas growers like to call their product yams in order to distinguish their potatoes from those grown in the north, a marketing technique that is confusing. And some canned sweet potatoes may be labeled yams, further complicating the issue.

... Solutions A to Z Teaching Tradition at Holiday Time It's very important to me to give my children a sense of cultural heritage and have them understand where they come from. I am very proud of my history, and I want them to be, too! Do you have any suggestions? Holiday meals are a wonderful way to introduce your children to your family's roots. Every culture has symbolic or traditional foods that are integral to their most important celebrations. The children might not yet understand prayers, or songs in foreign languages, but they know what tastes good, and they remember these special foods from year to year, whether it's matzoh ball soup, Christmas ham, or Aunt Jean's special New Year's hoppin' John. When you serve traditional foods, explain to your children what they are. Try to involve your children in the preparation, so they'll understand what kinds of ingredients go into the meal, and why. For example, a traditional borscht may help your children understand what kinds of vegetables grow in Eastern Europe, and what the climate is like. Make a conscious effort to serve traditional foods at holiday time. You may want to innovate with a few dishes, but in general, children in particular love the holidays because they find the same foods year after year, and that helps them understand tradition and continuity.
