Holiday cooking
I'm going to start my Thanksgiving cooking this weekend and I'll begin it with my favorite cranberry sauce in the world. Couldn't be easier. Take a 12 ounce bag of fresh cranberries and whiz them in the food processor with two fresh jalepeno or serrano peppers, 2 cups of sugar and about 1/4 cup of orange juice. Adjust the peppers to your taste. But this year I'm going to replace the sugar in my recipes with Splenda for Baking, assuming I like it after I try it. I've got a recipe for fudge that uses it and is only 1 Weight Watchers point per piece. I'll try the Splenda and also something called Equal Sugar Lite in both the cranberry sauce and the fudge and I'lllet you know how they turn out. What do you substitute for fat in your recipes? I often use buttermilk, but I've mentioned this to a few people lately and no one has ever heard of that. Have you? Anyway, it seems to work for me. Someone suggested yogurt, and there's always applesauce, of course. Get Ready for Holiday Cooking and Eating
At this time of year more than any other, the kitchen becomes the focus of frenzied activity. It's also a time when it's important to take deep breaths, relax, and have fun. Here are a few tips to help you do just that.
  • Before you cook even one holiday recipe, remove kitchen clutter, making as much room as you can for holiday preparations. Cast a cold, hard eye on those kitchen counters. Pack away the chicken-shaped egg timer you haven't used since last Easter, or consolidate the four crocks of whisks and wooden spoons into one. Get out a large cardboard box and fill it with all the things you won't need, and stash the box in the attic or basement.
  • Attack the refrigerator. Discard everything that's past its prime, especially containers full of science experiments. Make space to chill bowls of cookie dough, batches of eggnog, and perishable food gifts you may receive.
  • Read recipes carefully and think through every special meal you'll cook. Organize your work area. Pay special attention to pan sizes and the space you will need for such activities as rolling dough and combining several bowls of ingredients.
  • Check to make sure you have plenty of plastic wrap, waxed paper, aluminum foil, and lock-top plastic bags or whatever you use most often for storing leftovers. If you use glass or plastic containers with snap-on lids, organize them so they're easy to find and that includes the lids that fit them.

May 10, 2005 White Asparagus
My sister came to stay with me last week and as a surprise she brought me four pounds of white asparagus! It was the best thing she could have brought me and it made me realise how much I miss the asparagus season (early May until early June - of course this is weather dependant!) And what better occasion of having the asparagus with friends and neighbours at a big BBQ in our garden on the Bankholiday-Monday? We decided to have it as salad, so I peeled the asparagus, cooked it in boiling water (with salt, sugar and butter) and my sister made a simple vinaigrette (oil, vinegar, salt, sugar, pepper and chopped chives) for it. There is just no better way to enjoy white asparagus!

December 26, 2004 Gingerbread Stuffing
Oh, the saga of this stuffing. Christmas Eve day, Antoine headed to the shops to get what I needed to make various things for that evening's meal and Christmas Day. I was very keen to make Nigella's gingerbread stuffing , even though Antoine's mother was making chestnut stuffing, just because it sounded good. I was conscious of the fact that the loaf of gingerbread I needed - like a loaf of gingerbread cake, not like a stack of gingerbread men - might not be easy to come by, but I was hopeful. Very long story made somewhat shorter, I didn't get that gingerbread cake. When Antoine's mother called to talk about something else, I pouted to her on the phone about not being able to bring the anticipated gingerbread stuffing. She, of course, did not mind in the slightest. But, being the kind soul she is, immediately went and found a recipe for gingerbread cake - and made the cake for me, right that second, so that I could make the stuffing. "Found it's easy - making gb now" read the text message that arrived on my mobile phone. I at once felt ashamed for whinging and grateful for having such a star shining on me.

Instead of whole milk, substitute skim milk, soy milk, rice milk or almond milk.
Instead of cream, try plain yogurt or evaporated skim milk
When making sandwiches or wraps, use an eggless mayonnaise with healthy, non-hydrogenated oil in it.
Also look for vegetable spreads made from non-hydrogenated oils to use instead of butter.
Applesauce can replace oil in a cake recipe.
Instead of fat-and-caffeine-laden-chocolate, try making carob brownies, or carob-chip cookies.
In baking recipes that call for eggs, use an egg replacer to reduce cholesterol and fat.
Avoid too much sugar by using alternative sweeteners like Stevia, Xylitol, and honey.
On top of that hot apple strudel put a scoop of non-fat frozen yogurt (or soy frozen yogurt), and leave the ice cream in the freezer (or at the store).
