Southwestern Holiday Cooking
Desert Lil's Delicacies
A Food Feature
It's that time of year again, and for those of us so inclined, another great opportunity to spend hours in the kitchen making traditional and newly discovered holiday delights. Then there are those of us who enjoy preparing the season's gustatory delights, yet don't plan on spending a major portion of the holidays over a hot stove. With low desert temperatures becoming positively comfortable, I'd much rather be outside hiking, biking and camping instead of slaving for hours over complicated menu items, fancy sauces and greasy dishes, so let's keep the holiday menu simple and traditional. If you have a ham, turkey or roast, there's no great mystery to baking it so it's tender and moist on serving. Most important is selection of the meat/cut in the first place. Then, follow any recipe book or even the on the packaging for baking. Supplement your traditional main course with these simple, tasty recipes that will add a Southwestern flair to your holiday season.
Cranberry Salsa Santa Fe
Serves 8
  • 1 package fresh cranberries
  • 1/2 cup sugar
  • 1/ small jalapeno, seeds removed, and finely diced

  • Chicken broth and fresh herbs are a delicious butter/margarine substitute for vegetables. Toss the vegetables with sauce made from chicken broth and fresh herbs such as dill, basil, oregano, thyme, chives, lemon grass and rosemary. Just one of these fresh herbs can make a great difference in the finished dish. Add a little marmalade to the broth and you add sweetness and shine to your vegetables. Sweeten winter squash with apple juice concentrate, light syrup, all fruit preserves or maple syrup. Season with cinnamon, cloves and nutmeg.

67. Tips And Tricks For Holiday Cooking
Since cooking is such a traditional and important part of the holidays, Delegating leaves more time for you to cook your holiday favorites.

December 2004 Heidel House News Tips and Tricks for Holiday Cooking Greetings As I started to gather my thoughts for this note, a little voice was nagging: "Don't forget to bake your cookies tonight." Like many of you this time of year, I need to bake my holiday cookies to take to work, holiday parties and for my family. Since cooking is such a traditional and important part of the holidays, I sat down with our Food and Beverage Director to get some tips and tricks to make your holiday cooking a little easier. If cooking is taking away from your shopping time, visit our on-line store to purchase your gifts. Create a custom package for that special someone, or choose from a variety of other amenities and services. Pay for them all at our secure check-out and you'll be set for the season.
Happy Travels,
Loni Simplify your holiday schedule Our Food and Beverage Director, Larry London, had some wonderful advice for simplifying your holiday cooking schedule. Below, I've summarized his thoughts and hope that it will help you enjoy your holidays a little more. Larry also mentioned, "It's not about the cooking, it's about the tradition." I think that's an excellent statement to remember when we just can't seem to fit it all in. Tip 1 : Create a plan, schedule, and timeline, as early as possible. The more you spread cooking chores out over the days ahead, the more relaxed you'll be on the holiday.

december 2001 Diabetic-Lifestyle Cooking Tips features useful ways to cook with more flavor, using less fat, salt, and sugar. Diabetic-Lifestyle offers recipes, menus, medical updates, entertaining - practical information enhances life while managing diabetes on a daily basis. - Home Lower Fat Holiday Cooking It's important that we as diabetics control our fat intake to 30% or less of our daily calories. This is particularly hard to do during the holidays when we're wanting to feed our families traditional dishes of the season-most from times when fat was not considered to be that important. Why is it so today? For one thing, we've of a generation that gets less exercise than our forefathers who had to work the fields from before dawn to after dusk. And we now know the role that fat plays in the health of the heart and other body organs, possibly leading to severe complications which when added to diabetes can literally kill us. Past are the days of eating unlimited fat in the form of fudge, butter cookies, fruit cake, and other foods loaded with butter, but that doesn't mean that you're left with nothing but dull, flavorless food. Food is only food and yes, foods high in fat can taste good going down, but is it worth it in the long run? We don't think so. Instead, we cook lower fat all year long and especially during the holidays. Here are some tips. You'll not only save considerable calories, but lots of fat grams (especially saturated fat grams) and cholesterol.

71. Cooking Tips: Lowering The Fat In Your Holiday Baking

november 2002 Diabetic-Lifestyle Cooking Tips features useful ways to cook with more flavor, using less fat, salt, and sugar. Diabetic-Lifestyle offers recipes, menus, medical updates, entertaining - practical information enhances life while managing diabetes on a daily basis. - Home Lowering the Fat in Your Holiday Baking Soon we'll all be starting our holiday baking as cakes, cookies, pies, etc. all freeze well, so it's great to get the baking out of the way before we get into the daily rush of shopping, gift wrapping, decorating, and all of the myriad of other activities that make us rushed during the festive season. In order to reduce the fat in your baking, you must first identify where the fat is coming from. The main sources of fat in desserts are butter, margarine, oil, eggs, sour cream, whipping cream, chocolate, nuts, and cream cheese. Don't try to eliminate the fat entirely. Instead we suggest that you try to reduce the amount by using substitutions that will still result in an excellent dessert. Nobody's interested in eating a dry or rubbery, tasteless dessert. You can successfully reduce approximately 50 to 75 percent of the fat in a traditional dessert recipe using substitutions. But since fat is needed in dessert recipes for flavor and texture, you can't eliminate it all.

Things You'll Need
  • Marbles
  • Ground Cloves
  • Cinnamon
  • Cream of Tartar
  • Baking Soda
  • Unsweetend Cocoa
  • Shortening
  • Ceramic Tiles document.write(''); Solution 1. How many times have you been working on so many things at once your double boiler ran dry? Put a few marbles in the bottom of the pan and then fill it with water. When the water level gets too low, you'll hear the marbles banging around and know it's time to add more water. 2. Running out of something while you're baking is frustrating. Here are easy substitutions. Mix together one and a half teaspoons of both ground cloves and ground cinnamon, and you'll have a tablespoon of allspice. You can get two tablespoons of baking powder by combining a teaspoon of cream of tartar with a half a teaspoon of baking soda. Three tablespoons of unsweetened cocoa and a tablespoon of shortening is equal to a square of chocolate.
