USDA Says Use "Thermy™" For Holiday Cooking Safety
WASHINGTON, Nov. 2, 2000 No matter how you slice it, holiday meat will be done safely and turn out better if cooks use a food thermometer. To educate cooks on food safety and encourage the use of a food thermometer, USDA's Food Safety and Inspection Service (FSIS) created "Thermy™," a new food safety messenger. Thermy™ is a characterization of a digital food thermometer. Using a food thermometer is the only way to tell if food has reached a high enough temperature to destroy harmful bacteria and that it is the desired doneness. Unfortunately not all cooks use a food thermometer and thousands of Americans could fall victim to foodborne illnesses this holiday season after consuming food that isn’t cooked to a safe temperature. Susan Conley, director of Food Safety Education for FSIS, says, "We're using Thermy™ to encourage consumers to use food thermometers throughout the year, but it's very important at holiday time. Thermy™'s message is, ‘It's safe to bite when the temperature's right.’ That means if a food has reached a high enough temperature to kill harmful bacteria, it is safe to eat. It will also be a tastier, more juicy product because it’s not overcooked!"

USDA Teaches Turkey Basics for Safe Holiday Cooking
WASHINGTON, Nov. 8, 2001 - A large crowd to cook for, a big bird to roast, and to many cooks in the kitchen can lead to foodborne illness from holiday dining. But handling and cooking a turkey needn’t be an illness waiting to happen. "Following basic USDA recommendations will help ensure safe, confident cooking and prevent foodborne illness for diners," says Susan Conley, director of Food Safety Education Staff for the U.S. Department of Agriculture. "We get a lot of calls to the USDA Meat & Poultry Hotline around the holidays because people are preparing turkeys and other meats sometimes for the first time. And often they’re preparing food for larger numbers of folks, so we give them the basics." A whole turkey is a large bird to handle; however, the basics of thawing, handling, and roasting it to a safe temperature are easy things to do.
Safe Thawing
For thawing in cold water, allow about 30 minutes per pound. Be sure the turkey is in leak-proof packaging and submerge it in cold tap water. Change the water every 30 minutes until the turkey thaws.

The first of our gourmet cooking workshops begins in December. It is scheduled at the same time as a number of terrific annual events activities that our guests can participate in while in Sedona. Here are the details:

    • When baking, set the oven dial at the exact temperature you intend to use. The oven won't heat up any faster at a higher setting. Don't preheat the oven unless the recipe calls for it specifically. Don't open the oven door unnecessarily. Every time you do, the temperature drops about 25-30 degrees, and more energy is used to generate the desired level of heat. Don't preheat your oven for long cooking foods, and turn off the oven 15 minutes prior to completion. Use the lowest possible heat setting to cook foods on top of the range. Match the pot to the size of the burner. When you can, use the range top or microwave oven because they use less energy than a conventional oven. Use lids on pots and pans on the stove to prevent heat loss. When baking, fill the oven with as many items as can be cooked at one time. Bake double or triple batches of recipes at one time to save energy. Use glass baking dishes in the oven when possible. Glass retains heat better than other materials, so it helps food cook faster, and you can reduce oven temperature by about 25 degrees.
