As the holidays approach we like to celebrate by entertaining friends and family, throwing parties, and preparing feasts. From the buffet table to the office party, food moves center stage throughout the holiday season. Be sure to keep food safe by following basic food safety steps... Clean : Wash hands and food-contact surfaces often. Bacteria can spread throughout the kitchen and get onto cutting boards, knives, sponges, and counter tops.
Separate
: Don't cross-contaminatedon't let bacteria spread from one food product to another. This is especially true for raw meat, poultry and seafood. Keep these foods and their juices away from ready-to-eat foods.
Cook
: Cook to proper temperatures . Foods are properly cooked when they are heated for a long enough time and at a high enough temperature to kill the harmful bacteria that cause foodborne illness.
Chill
: Refrigerate promptly. Refrigerate foods quickly keeps most harmful bacteria from growing and multiplying. Refrigerators should be set at 40 F and the freezer at F, and the accuracy of the settings should be checked occasionally with a thermometer.

How can I be efficient and still include the children? Since the children will be home from school for the holidays, rather than trying to find a way to keep them occupied so you can cook, make them your assistants and let each child contribute his own special dish. Here's how: Parents will be surprised how much "pressure" is lifted as you invite your budding chefs to help with turkey stuffing, cranberry dishes, potato recipes and more. It's a lot more fun to cook with company than to be enslaved by a huge meal all alone. You can ask each child to name their recipe after themselves. Encourage them to make a few changes to the standard recipe to personalize it as "theirs." My own boys have personalized our turkey stuffing and a fabulous cranberry side dish. The pride they exude when mealtime arrives and their special dish is served is so all-consuming for them, I am quite certain that they'll remember the collaborative aspect of our holiday experience for decades to come.

Roasted Fennel and Apple Soup with Persimmon and Pomegranate Salad On December 7, 1999 Chef Jennifer Cox demonstrated how to prepare Roasted Fennel and Apple Soup and Persimmon and Pomegranate Salad. Cox is the Executive Chef of Montage, Sony's hip, cyber-palace in San Francisco. Roasted Fennel and Apple Soup 1.5 lbs. of fresh fennel bulb (about 2 bulbs) sliced thin 2.25 lbs. apples (a semi tart variety works best, like a Jonathan or a Spitzenberg) cored and sliced 2" thick 1 medium yellow onion, cut in half and sliced thin 1 russet potato peeled and cubed 2 quarts vegetable stock or unsalted vegetable broth 1 cup heavy cream (optional) 1/2 cup pernod or other anise flavored liqueur (optional) 1t white pepper 2T olive oil 1/2cup fine diced apple (for garnish) 4-6 sprigs of fennel leaves or dill (for garnish) Then you're going to need about two bulbs of fennel without the tops on. If you buy them with the tops on, you'll want to have about 3 pounds of fennel about 1-1/2 pounds with just the actual bulb. We're going to cut the fennel in half lengthwise, and then slice it into very thin strips. You'll want to preheat your oven to about 375 degrees. Take your fennel and toss it in a bowl with about 1 tablespoon of olive oil, and 2 teaspoons of kosher salt. You'll want to toss that just so it's coated really evenly. Place that on a baking sheet and put that in your oven. You're going to roast that until it's just nice light brown, for about 20 to 25 minutes. I usually check it every five minutes and stir it around just to make sure that the edges aren't burning. While that's cooking, you can take one whole yellow onion and take the skin off, and slice that into nice thin slices, and then you have everything ready to make the soup.
