A Potted Herb Garden

You can plant an entire herb garden in clay pots and arrange them on your deck, patio or balcony. For an extra touch, paint the rims of the pots with latex paint and then paint the names of the herbs on the pots.
If your garden is confined to a deck, you can still grow herbs. In fact, putting potted herbs close to your kitchen makes incorporating fresh herbs into your cooking a breeze. Running to the deck for a few snips of chives and parsley can make your whipped potatoes extra-special. You'll need different sized pots for the various herbs.
  • Small growing herbsthyme, oregano, cilantro and marjoramgrow well in 6-inch -diameter pots.
  • Chives, parsley, basil and mint grow a little larger and need an 8-inch pot.
  • Large-growing herbs like rosemary, sage and lavender need plenty of room to grow a 10- or 12-inch pot.
Use a loose, well-drained potting soil. Soak the pots in water for an hour before planting to prevent the pot from absorbing water that the transplants need. To keep soil from washing out of the hole in the bottom of the pot, put a piece of coffee filter over the drainage hole.

    You can grow this herb garden on your patio or place it inside on a windowsill. To make the herb garden, select a container and your choice of herbs. You will also need some good-quality potting soil a professional growers' mix to ensure good drainage. Make sure the planter has at least one drainage hole in the bottom drainage is very important for growing fresh herbs. Place a little potting soil in the container. To remove herbs from their individual pots, turn each upside down and carefully squeeze the container ( figure A ) to loosen the root ball. Remove plants from pots and separate the roots slightly, especially if they look potbound. Once you have all the plants repotted, fill in any spaces with potting soil ( figure B ) and then water it thoroughly the correct way is to add water until it runs out the bottom of the pot. Tips: Oregano makes a nice trailing plant.

Woodruff History of Herbs Herbs have played an important part in man's life for countless years in his politics, romance, love, religion, health, and superstition. Celery was used by the Abyssinians for stuffing pillows. Ancient Greeks and Romans crowned their heroes with dill and laurel. Dill also was used by the Romans to purify the air in their banquet halls. Some herbs were given magical properties, probably because of their medicinal uses. The early Chinese considered artemisia to have special charms. In France during the Middle Ages, babies were rubbed with artemisia juices to protect them from the cold.     Cooking with herbs is like icing a cake: it makes the dish complete. It may seem daunting at first. There are so many herbs and so many recipes to choose from. And, while using recipes that include herbs is a good way to get started, the excitement comes when the unique flavor of each herb is understood and can be used to create your own special dish. Here are three tips to get you started. Take a clean leaf of the herb and chew but don't swallow. Experience your herbs like you would a fine wine; check the fragrant bouquet, let the leaf meet the tongue and chew thoughtfully. It is not necessary to swallow. Learning about the flavor of the herb this way will help you to decide if it will make the perfect pot roast or sorbet. Add fresh chopped herbs (one at a time) to something bland yet familiar, like butter or sour cream or potatoes. This allows the intensity of the herb to stand on its own and helps you to know how much of the herb to add. Just start playing; add a little Rosemary or Tarragon to the potatoes or the chicken; sprinkle some Oregano on your pizza or pasta; lay sprigs of Thyme on your roast. Keep notes, at least at first of what was pleasing, how much was used and what didn’t work. Note whether the herbs were fresh or dried or a combination of both. You will find this invaluable, especially when you start blending herbs together to get more complex flavors

    Little wonder that herbs have earned a place in American gardens. Freshly harvested herbs have pungent and aromatic qualities that far exceed those of their commercially obtained counterpartswhether fresh or dried. Even after the outdoor growing season is over, you can still enjoy dried herbs in fragrant potpourris and sachets. You can also grow herbs indoors in pots on sunny windowsills, and use them for culinary purposes, either fresh, dried, or frozen. You will enjoy growing herbs because their culture is easy. They require little care and space, have very few insect and disease problems, and generally require only moderate fertility levels. Above all, herbs provide you with a continuing and satisfying hobby.
    CHOOSING A SITE
    Herbs flourish under the same conditions that you provide for your flower or vegetable garden. Although most herbs will grow in partial shade, it is better if the herb garden receives at least 4 to 6 hours of sunlight a day. A majority of herbs will grow well under a wide range of soil conditions, with the exception of extremely wet, poorly drained soils. Note, however, that sage, rosemary, and thyme require a well-drained but moderately moist soil. If the garden soil is poorly drained, you can improve the situation by modifying or amending it. Even more effective would be the use of raised beds. To improve soil fertility and tilth, add several bushels of compost per 100 square feet of soil before planting. Spade it into the soil thoroughly.

    The Cloister and Garden Themselves

    This cloister dates from the late thirteenth or early fourteenth century, containing capitals and some columns from the Cistercian abbey at Bonnefont-en-Comminges and other local religious foundations in the south of France. The simplicity of these capitals reflects the strict asceticism embodied by the Cistercian monastic order, shunning any decoration which might distract monks from the contemplation of God. The naturalistic floral patterns decorating the double capitals in this cloister are a reaction in form to the robust, grotesque figures of Romanesque cloister carvings. The individual raised planting beds, wattle fences, and central wellhead of the garden are all characteristics typically found in medieval monastic gardens. The herb garden in the Bonnefont cloister contains more than 250 species of plants which were grown during the Middle Ages. Its design is typical of a medieval monastery garden plan, but no attempt was made to replicate any one monastic garden in particular. Many medieval sources were referenced to ensure that the choice of plants was historically accurate. The raised beds, wattle fences, and central wellhead are features of a medieval garden. Even the fruit trees outside the south wall are in character, because monasteries were often surrounded by orchards. Plants not hardy in New York City's climate, such as aloe, lemon, and bay, are grown in decorative pots which can be moved inside in the winter, a common gardening practice in northern Europe throughout the late Middle Ages. The plants are all labeled according to their uses.
