Herb Gardening MANY of the plants we grow in our gardens such as annuals, perennials, shrubs and trees are herbs in the true sense of the word. With increased interest in recent years in continental or gourmet cooking the word "herb" is nearly always thought of by home gardeners to mean the "culinary" herb. When we started to garden we used such herbs as creeping thyme as a low plant to grow between the flagstones of our terrace for its attractive tiny foliage and aromatic odor, and we grew the familiar parsley and mint. However, culinary herbs such as dill, basil and chives were not included in our garden plans. The herbs I have grown are listed below with instructions for growing them. Perhaps inexperienced gardeners as well as those who have not yet had the pleasure of growing these interesting plants will give some thought to starting a small herb garden. Even a small plot 4 by 6 feet will grow all a small family would need. If not grown for use in cooking, herbs are worth growing for pleasant aromatic foliage and some of them for the beauty of the flowers as well. Herbs can be used fresh for garnish in salads and to perk up the flavors of bland vegetables or to add flavor to meats and stews in which case one needs only to nip off a few leaves when wanted.

Depending on who is counting, there are 40 to 60 different kinds of herbs. Each one has it's own distinct flavoring. Most are easy to grow. There are annuals, perennials and even biennials. With that many herbs, there should be lots or uses, right!?! Absolutely! Listed below are the different categories of herbs. Note, many fall into two or more categories. Aromatic- Grown for their scent, aromatics herbs are used in flower vases or dried arrangements. Their oils are used in perfumes, candles, and toiletries to name a few. The word "herb" comes from the Latin herba, which means "grass" or "green crop". Most of today's gardeners use the term to describe any plant that has medicinal or culinary properties. The ancient Chinese documented the use of herbs as far back as 2500 BC. That is proof enough of the herbs longevity and importance to gardeners and medicine alike. For today's gardeners, herbs can be combined with annuals and perennials for fragrance, included in rock gardens for colorful contrast, "snuggled" in container plantings, as well as "pocketed" into shrub borders. Their uses are limitless! LOCATION AND SOIL
When determining a site for your garden, pay close attention to how many hours of direct sun the area will receive. Consider your needs, as well as those of the plants. If the area you have chosen is away from a water source, this will impact the plants you choose. Whether they are located in full or part sun, the plants require good drainage. Native soil should be amended with 1/3 soil conditioner and 1/3 compost or manure. This mixture should be worked into the clay at a depth of 10" to 12". ENHANCING YOUR GARDEN

          Many of us do not garden because of either lack of space or time, despite our interest or the happiness it brings. Instead of traditional gardening methods, it is possible for even the busiest person, in the smallest space, to reap the joy of a low maintenance garden, using herbs and containers.
          Such Little Time, Such Little Space
          In our modern world, many of us feel as though we lack either the time or the space to garden. Living in an apartment, working 40 or more hours a week, it seems as though gardening requires too much effort and space we don't have. But with a small amount of research, resources, and time, the delight of gardening can be found for even those with a limited environment. During a single afternoon, a contained herb garden may be cultivated and created, one which requires little maintenance but brings an abundance of rewards.
          Why Choose Herbs
          The reason that joy is so easily found in herb gardening with containers is one that is different for each person. Whatever the reasons you may find, I have discovered that there are basic reasons to use herbs, regardless of one’s gardening experience or background. The scent that wafts by when the wind blows as one bends down to take a cutting or check the dryness of the soil is delightful as are the extra flowers herbs add to cooking.

Home General Information Activities/Events Recreational Opportunities ... Vermilion Co. Conservation District Foundation Herb gardening at the V.C.C.D. has been taking place since the early 1980s. The "living history" programming utilizes herbs in teaching how early pioneers used the plants in cooking or medicinal purposes. Herb gardens were maintained at Kennekuk County Park and also at the Pioneer Homestead at Forest Glen Preserve. In 1994, the Kennekuk herb garden was completely revamped with geometrically shaped raised beds and brick walkways. It has become a showcase and is the focal point of color at the Bunker Hill Historic Area. Annual flowers are mixed with the herbs to form colorful borders. Some of the most common herbs grown are basil (many types), lemon grass, borage, chives, tansy, nasturtium, oregano, thyme, sage and much more. A variety of peppers are also grown. The flowers, such as stattice and silver king, are dried and sold. An Herb Garden Open House is held each year in late summer.
The herb garden at the Pioneer Homestead has also been recently revamped. It too has raised beds and a brick walkway, but is much smaller. It serves a "kitchen garden" for the pioneer cabin. Located just outside the building. Pioneer women would grow herbs and vegetables which they would use in their everyday cooking. Both herb gardens are used as teaching tools where smell, touch, and taste is the norm.

Like all garden plants, herbs can be categorized as annual, perennial, or biennial. Annual plants grow for only one season and so must be planted each spring. Perennials live for several years. Their foliage dies back in the fall, but the roots overwinter and resume growth the following spring. And biennials grow for two years, growing foliage the first season, overwintering, then forming seeds and dying back at the end of the second season. Herb Gardening for Bees by Heather Apple Did you know that bees are instinctive and highly skilled herbalists? Juliette de Bairacli Levy, the Master Herbalist, has found that bees are wonderful doctors in their own right and know how to dose themselves with herbs to maintain health within the hive. When I read this, I did not keep bees myself, but was very aware of the many bees that visited my garden. There was a wonderful variety ranging from tiny wild bees, to domestic honey bees, to great fat bumble bees. I realized that bees were facing incredible challenges with pollution, acid rain and especially the pesticides sprayed on crops and roadside weeds. I decided that I would combine my love of herbs with my love for bees and plant a special medicinal garden to help the bees cope with our present environment. I did some research to discover which herbs were especially beneficial to bees. These include aromatic herbs such as lavender, rosemary, thyme, sage, bee balm (bergamot), hyssop, anise-hyssop, basil and marjoram; wild herbs such as Motherwort, catnip and purple loosestrife; bitter herbs such as southernwood, wormwood and rue; nectar rich herbs such as clover and alfalfa; all the mints; the Borage family; and the rose family. I had already known that bees loved Borage and I had planted it among my squashes, cucumbers and melons in order to attract bees for pollination. Now, I planted patches all over the garden, making good use of the plants that had self-seeded from the previous year.

University of Vermont An indoor kitchen herb garden will add interest to your meals and color to your window sills...and help satisfy that urge to garden during the cold, wintry months ahead. Most culinary herbs require at least five hours of sun per day. You can use a sunny window, provided the reflected heat is not too intense. If you don't have a window with direct sunlight, put your pots of herbs in a spot with plenty of light, then move them into the sun for a few hours whenever possible. Fluorescent lights or special grow lamps also work if left on about 14 to 16 hours per day. Place the lights 12 to 18 inches above the tops of the plants. If the light source is too far away, insufficient light will reach the plants, and they won't grow. You must also consider temperature and humidity. Most herbs need daytime temperatures of 68 to 70 degrees F with 30 to 50 percent humidity. To increase humidity, place a dish of water near the plants. Pot your herbs in a potting mix of vermiculite or equal parts peat moss, garden loam, and coarse sand. Any container will do as long as it has good drainage.

Herbs do not necessarily require a bed of their own. They can be integrated into an existing vegetable garden (annual herbs) or perennial garden (either annual or perennial herbs).
Most herbs prefer a southern or western exposure. "Full sun," horticulturally speaking, is six hours or more of direct sunlight on the plant. Welcome to my Garden!
Most people are really surprised to find out I have a garden and love gardening with a passion. But then I like surprising people. :) In the months to come I will note here the progress of my organic herb and vegetable garden and offer as much basic information as possible. To start, a brief introduction: I live in Oswego County, NY (north of Syracuse), on a rocky, wooded site - not the best for gardening. But I found a small sunny spot (since enlarged) and started digging. Literally. I dug the earth up with my hands and a few simple garden tools, and took out thousands of rocks. Unfortunately they keep growing back...
One thing I decided on from the very beginning was that no chemicals would enter the garden. I didn't want to poison not only the healthy herbs and vegetables I was to grow, but also our water, pumped up from underground streams. I built the soil strength (which was pretty good to begin with, thanks to ages of natural composting in the forest) with a little pure topsoil, organic manure, and lots of my own compost. And I used only natural methods to deal with the few pest problems which developed. And it's worked! Take that, chemical corporations!

I decided to separate my herb garden from everything else - it is still adjacent to the vegetables, but has it's own little design, enclosed with paths. It's not very big (about 18 X 24 feet), but in the space I have it's all I could do for now. Still, once it grows in it should look quite nice. And, most importantly, it is filled with many wonderful herbs!
