Nutrition is the process of consuming, absorbing, and using nutrients needed by the body for growth, development, and maintenance of life. To receive adequate, appropriate nutrition, people need to consume a healthy diet, which consists of a variety of nutrients (the chemical substances in foods that nourish the body). A healthy diet enables people to maintain a desirable body weight and composition (the percentage of fat and muscle in the body) and to perform their daily physical and mental activities. Generally, nutrients are divided into two classes: macronutrients and micronutrients. Macronutrients are required daily in large quantities. They include proteins, fats, carbohydrates, some minerals, and water. Water is required in amounts of 1 milliliter for each calorie of energy expended or about 2.6 quarts (2,500 milliliters) a day. Micronutrients are required daily in small quantitiesin milligrams (one thousandth of a gram) to micrograms (one millionth of a gram). They include vitamins and trace minerals that enable the body to use macronutrients.

The Center for Nutrition Policy and Promotion is the focal point within the USDA where scientific research is linked with the nutritional needs of the American public. This site includes "The Interactive Health Eating Index (IHEI)," an online dietary assessment tool that includes nutrition messages. After providing a day's worth of dietary information, you will receive a "score" on the overall quality of your diet for that day. This "score" looks at the types and amounts of food you ate as compared to those recommended by the Food Guide Pyramid. It also tells you how much total fat, saturated fat, cholesterol and sodium you have in your diet. Also included are recipes and tips for healthy, thrifty meals. Healthy eating is associated with reduced risk for many diseases, including the three leading causes of death: heart disease, cancer, and stroke. Healthy eating in childhood and adolescence is important for proper growth and development and can prevent health problems such as obesity, dental caries, and iron deficiency anemia. Most young people are not following the recommendations set forth in the Dietary Guidelines for Americans: of U.S. youth aged 6-19, 67% exceed dietary guidelines recommendations for fat intake, 72% exceed recommendations for saturated fat intake. In 2003, only 22% of high school students reported eating the recommended five daily servings of fruits and vegetables (when fried potatoes and potato chips are excluded) during the past 7 days. Health and Nutrition Modules* Acknowledgements Overview This is a short technical training course in the Sphere Minimum Standards and Key Indicators for health and nutrition. Practicing health and nutrition specialists have written this course, which is designed to build technical capacity in mid-level technical specialists. This course consists of two modules, each broken down into session plans that are 1-2.5 hours in length. Each session plan emphasises a priority Minimum Standard or Key Indicator from the Sphere handbook. The group of specialists who produced the modules have agreed that the material covered is priority knowledge for the target audience. All together, including the Sphere Project Training Module 1 and the case study, this course would last 4.5 days. It is a worthwhile investment for field staff.
