Imu - Hawaiian Underground Oven

Anyone who has experienced a contemporary Hawaiian lu'au (feast) will find kalua pig a main part of the menu. Traditionally, the pig was cooked in an underground pit and served in plaited baskets made of coconut fronds or on large banana leaves. The shredded pork was just as tender and moist as a pork butt roasted in an electric or gas oven. The word kalua refers to the process of cooking in an earth oven (ka, the; lua, hole). Throughout Polynesia, Melanesia, Micronesia, and even the Americas, traditional underground ovens have been utilized to cook and steam food. The Hawaiians used a pit oven, called an imu, to steam whole pigs, breadfruit, bananas, sweet potatoes, taro, chicken, and fish. The imu was essentially an underground pressure cooker. Due to the amount of time and labor to prepare the imu, most earth oven cooking was done for group meals, festivities, or religious ceremonies. Since the cooking process requires steam and not dry heat, green plant materials are needed to create the steam. The Hawaiians utilized grass and leaves for their imu cooking. Some of the traditional plants were banana stumps, ti leaves, honohono grass, banana leaves, and coconut palm leaf (see the section on "Modern Adaptations on Imu Cooking" for plant substitutes). The common term used today to describe the green vegetation material and its use is hali'i, which is used to mean "to spread like the mat covering the floor". Preparation is an important process to ensure a successful cooking. While the stones are being heated in the pit, gather and prepare any plant material you will need. If you'll be using banana stumps, they will have to be cut into sections smaller than the diameter of the pit. The sections are sliced lengthwise, either in half or quartered, depending on the size of the trunk. Then, the sliced stumps are pounded with a rock to break up the fibers and to release the moisture in the stumps. If a whole pig is going to be cooked, the skin and the inside cavity area are rubbed with a small amount of rock salt. When the stones are about ready, place all your food and vegetation materials near the pit. Also, lay your covering material next to the imu. Traditionally, the covering material before the final dirt cover were old lauhala mats or worn tapa cloth (see the section on "Modern Adaptations on Imu Cooking" for contemporary covering materials).

    15 lbs. 10 oz. fish fillets, fresh or frozen, thawed
    1/4 cup canola oil
    2 bunches green onions, minced (reserve green part for garnish)
    2 tbsp. fresh ginger root, grated
    1 No. 10 can pineapple chunks, unsweetened, drained (reserve juice for sauce)
    3 tbsp. salt-reduced soy sauce
    1 qt. 1 cup pineapple juice, unsweetened
    1 1/4 cup apple juice concentrate, thawed 1/3-1/2 cup apple cider vinegar 1/4-1/4 cup honey 1/3 cu cornstarch dissolved in a little water pepper to taste Preheat oven to 425 degrees F. Arrange fillets in a single layer on baking pans. In a medium-sized saucepan or large skillet, heat Canola Oil and cook minced white part of onions and grated ginger for 2 minutes. Add pineapple chunks and soy sauce and cook 2 minutes more. Spread this mixture over fillets. Bake for 10 to 15 minutes or until fish flakes when probed with a fork at thickest part. While fish bakes, in a heavy saucepan, heat pineapple juice, apple juice concentrate and smaller amounts of vinegar and honey. Bring to a boil. Taste for the proper balance of sweet and sour, and add more honey or vinegar as necessary. Whisk in cornstarch paste and cook, stirring constantly, until sauce thickens. Add pepper to taste. Serve sauce over fish and garnish with green minced onions. Makes 50 servings.

    Whole Pig Cooked Hawaiian (Polonesian) Style
    Here's the recipe for whole pig cooked in the ground Hawaiian-style by Bill Adams (in our recipe list)... Do you know any Hawaiians in your local area? Your greatest source of information would be a Hawaiian in this case since underground pig roast is a Polynesian thing. Below I refer to the pit at imu. Imu is oven in Hawaiian.
    Considering the pig is with its head, scrapped not skinned, here is the way to do it properly:
    1. Dig imu (hole) in well compacted and drained soil 3 feet deep, three feet longer than the pig, and three feet wider than the pig.
    2. Using stones a bit smaller than a football and well worn smooth creek stones, preferably porous lava but definitely not limestone or any other stone that will burst or crack when heated.
    3. Line the bottom and sides of the imu (hole) with these stones.
    4. Take ten or twelve more stones and interlace/stack them with hard fire wood (oak, hickory, etc) in the center of the imu. I use kiawe (mesquite wood) here in the islands. It gives any meat a particular delicious flavor.

    1/3 cup lemon juice
    2 tablespoons vegetable oil
    2 tablespoons shredded onion
    1/4 teaspoon garlic powder
    1/4 teaspoon salt
    1 teaspoon ginger
    1 1/2 teaspoons curry powder
    1/2 cup pineapple juice Place pork loin in a shallow pan. Combine remaining ingredients and pour
    over loin. Cover and marinate in the refrigerator for at least 30 minutes
    or up to 24 hours. Broil or grill the loin for 15 to 20 minutes on each side, placing meat 4 to 6 inches from heat element. Pork is done when an internal temperature of 170ºF is reached. Baste with marinade twice during grilling. This meat is tasty as a leftover.     Hawaiian Kalua Pig
    The brined turkey was juicy and wonderful, but what really made the Thanksgiving feast memorable was the kalua pig. No, not Kahlua pig (there’s no coffee liqueur in this dish, and if one more person says that to me....) Kalua pig, as in ka lua (literally, the pit in Hawaiian—this refers to the method of cooking the pork in an underground earthen oven called an imu .) Since we are now city dwellers who don’t have a yard, a crockpot is one way to replicate this traditional dish. I used to think crockpot cooking was lazy cooking—the dump a can of soup and meat and you’ve got a meal kind of cooking. But after biting into this succulent dish, I’m forever changed.

The UC Irvine Hawaii Club, Na 'Opio O Ka 'Aina (Hawaiian for youth of the land), will hold its 12th annual Hawaiian lu'au, a dinner and show, at the Bren Events Center on Saturday. "The purpose of the lu'au is to teach the UCI community, and the actual members of the club, about the different aspects of Hawaiian culture," said Michelle Soriano, a graduating senior in psychology and social behavior, who, as a 2 1/2-year member of the club, is co-chairing the lu'au with Julie Kobayashi. "And it's a way to bring the club members closer together," added Kobayashi, a graduating senior in economics who has been with the Hawaii Club for four years.
