Cooking Hawaiian Style Rising 1st to 3rd graders in the fall of 2005 Cooking Hawaiian Style will integrate cooking education and fun. Each day, campers will cook at least one sweet or savory food from Hawaii. They will learn a bit of geography, tradition, and culture about Hawaii while preparing Hawaiian food. Campers will make dishes such as sweet and sour meatballs, pineapple salsa, Hawaiian pizza, frosty strawberry pie, and homemade tropical punch. Each day campers will explore different herbs, spices, exotic vegetables and fruits. They will also learn about kitchen equipment and its proper use, such as how to grate cheese and measure ingredients. Outings will include shopping for supplies and ingredients. Dates: Session 1 (June 20-24) and Session 6 (August 22-26) Fees: $325.00

IT COULD STAND FOR Hair Replacement Center, and probably does, somewhere. But in this corner of the world, it means Hawaii Regional Cuisine and that stands for No More Frozen Fish. Those of us who live and breathe fine dining see this weekend as the second coming. It marks the 10-year reunion of the founding of the HRC movement, a gathering of the 12 founding chefs for an evening of what ought to be spectacular dining. All told, though, only about 1,000 people counting paying guests, chefs and their support staff will partake on Saturday night. That leaves a huge chunk of the state of Hawaii wondering what all the fuss is about.

Hawaiian Food and Luau Recipes
Prior to the arrival of the white man to the Hawaiian Islands, the food was similar to that found on other Polynesian islands, particularly Samoa, Tonga and Tahiti, and included native fruits and other plant life and fish. Hawaiian Food With the arrival of other cultures, Hawaiian food changed drastically, fusing together the cooking styles of cultures from all over the world. Modern island cuisine now incorporates Polynesian, Asian and European cultures, their cooking techniques, and flavors. If you've ever been to a luau, you can see the whole spectrum of foods that blend these cooking styles and cultures. Even a typical dinner in Hawaii easily draws from each of these and might consist of teriyaki chicken, steamed or fried rice, chilled bean sprout or green salad, and fresh sweet pineapple. The Hawaiian Luau The Hawaiian luau was a traditional feast where accomplishments were celebrated, people were honored, and great events were remembered. Along with the large amounts of food, people sang and danced, typically for days.

A spaghetti dinner that saves time and energy
Twenty-five Minute Spaghetti
1 pound ground beef or poultry
1/4 cup chopped onion
1/4 cup chopped green pepper
1/2 cup diced celery
1 quart tomato juice
1 can (6 ounces) tomato paste
1 bay leaf
1/4 teaspoon hot pepper sauce
1/2 teaspoon garlic salt
dash of pepper
1 package (8 ounces) spaghetti Grated Parmesan cheese In a large sauce pot, brown meat; drain oil. Add onion, green pepper, celery, tomato juice, tomato paste, and seasonings. Bring to a boil; add spaghetti. Cover and simmer for 25 minutes. Stir well before serving; sprinkle with cheese. Makes 6 servings. Approximate nutrient analysis per serving (excluding parmesan cheese): 360 calories, 13 g total fat, 5 g saturated fat, 45 mg cholesterol, greater than 1020 mg sodium, 42 g carbohydrate, 3 g fiber, 8 g sugar, 20 g protein

Sweet Hawaiian Baby Burgers
    1 lb. ground beef chuck 4 tsp. Worcestershire sauce 4 canned pineapple slices salt 12 Hawaiian sweet or small dinner rolls, split lettuce
Sauce:
    1/4 cup barbecue sauce 1/4 cup pineapple preserves 1 Tbsp. packed brown sugar
Combine ground beef and Worcestershire sauce in medium bowl, mix in lightly but thoroughly. Shape into twelve 1/2-inch thick mini patties. Combine sauce ingredients in small saucepan; bring to a boil, stirring frequently. Remove from heat. Place pineapple slices on rack in broiler pan so surface of pineapple is 3 to 4 inches from heat. Broil 3 to 4 minutes, turning once and brushing with sauce. Remove pineapple; keep warm. Place patties in broiler pan so surface of beef is 3 to 4 inches from heat. Broil 7 to 8 minutes to medium (160 degrees Farenheit) doneness, until not pink in center and juices show no pink color, turning halfway through and brushing with sauce. Season with salt, as desired. Cut each pineapple slice into thirds. Line bottom of each roll with lettuce; top with burger, then with a pineapple piece. Close sandwiches. Serves 4, or appetizers for about 8.

For the Luau, we cooked a pig the traditional style: in an imu pit. Here are a couple of photos to show how this is done. First of all, you need a pit in the ground. Sounds easy, butit isn't always so easy in Hawaii, because the ground is - well - lava (which means: rock). That is: unless you are someplace with a thick layer of topsoil. Then you need wood to burn and a large number of nice, round stones. These lava rocks come from the beach. One group of folks collected them and piled them up near the road. The other group transported them to BellyAcres, whenever they came by. The next ingredient you need is chopped up banana trees (they are not trees, I know, I just cannot think of the right word right now so give me a break or send me email with the correct word). And you need the whole thing! Leaves, stems and such. An imu pit is essentially a steam cooker. And you need some way to generate steam. That's where the banana trees come in see further below.
