The man grinned at me from the lounge at Kanaka's as he expertly strummed a ukulele. He looked like a real kamaaina , an Island local. I listened to his cheerful notes and took in the dining room. Table coverings with Polynesian tapa cloth designs. Potted tropical plants like my mother once had in a garden. Prints and photographs of beaches where I learned to surf. I smiled at the memories of sun and sand and my hapless attempts to master the instrument the man played so well. For a moment, I was a boy again in Hawai'i, a kanaka . "Kanaka" means man, person, group or humanity in general. It's an inclusive sort of word, the perfect name for a restaurant that serves the authentic food of Hawai'i, a state whose people speak more than 50 languages and dialects. One test of skilled Hawaiian cooking is the quality of fish courses. Kanaka's chef superbly prepared the ocean's bounty. Cubes of ahi seared in a forceful soy sauce ($8.95) were so tender they were like tiny pillows on the tongue. Mahi mahi broiled over coals and brushed with a garlic-butter huli sauce ($14.95) was silky without losing firmness.

The scenery of Hawaii has gone through a dazzling transformation over the past decade and a Texas gal is behind it all. No, she didn't wave a magic wand over the landscape. Hawaii remains a tropical Eden, rimmed by miles of ivory beaches and crystal blue waters, and dotted with towering volcanos. She helped give birth to the country's hot new food scene: Hawaiian regional cuisine. Hers is a love story. Gannon followed the love of her life from Dallas to Maui in the 1980s and her beloved catering business blossomed in this garden paradise. Her heartfelt cooking found a home at the Hali'imaile General Store, a historic company store in the middle of a thousand-acre pineapple plantation on the slopes of Mount Haleakala. There, she envisioned setting up headquarters for her catering business with a simple specialty takeout deli counter, but her fans had other ideas. Soon hordes of customers were jamming their way inside wanting to be fed, and the general store evolved into one of Hawaii's most lauded restaurants. With her husband and oldest daughter now managing the business and running the bar, and her second daughter (now one of the island's top pastry chefs) creating the desserts, the restaurant has grown into a family affair.

by Leilehua Yuen Aloha! I live and work on Ka Moku Hawai`i (Hawai`i Island), the largest island in the Hawaiian Archipelago. My home is in Hilo [HEE-low], the capitol of my island. The easiest way to reach it is to fly to Honolulu [HOH-noh-LOO-loo], the capitol city of the State of Hawai`i. Honolulu is located on Ka Moku O`ahu [oh-AH-hoo]. From Honolulu take a commuter flight to Hilo, my home town. Hawai`i is the name of both my island and the state. So, to avoid confusion, I will refer to the island as Ka Moku [kah MOH-koo] - The Island. We have eight "main islands." Starting with the oldest, they are: Ni`ihau [nee-ee-HAH-OO], Kaua`i [ka-oo-AH-ee], Lana`i [lah-NAH-ee], Moloka`i [moh-loh-KAH-ee], O`ahu, Maui [MOW-ee], Kaho`olawe [kah-HOH-oh-LAH-veh], and the youngest, Hawai`i. We are the most isolated landmass on earth, and so we are home to some of its rarest species. We have wingless flies, yellow blackberries, and singing snails.

It is the profound respect we have for Hawaii and the care we take to protect our Islands. Aina means that the land is the source of our food. In that sense, then, the land is what gives us sustenance; it is Hawaii that sustains us. We who live in the Islands walk upon its earth, breathe its air, drink its water, and eat the food it provides. Hawaii is within us, a part of us. If we defile Hawaii, it is as if we defile ourselves. Aloha Aina is shared with visitors so they, too, will respect Hawaii and treat the islands with care.

When you think about dining in Hawaii , the first images that usually come to mind are the standard luau staples: poi, laulau, kalua pig and lomi salmon. Think again. In 1991, a dozen of Hawaii’s most talented chefs got together and pioneered a new regional cuisine—Hawaii Regional Cuisine—that put the Aloha State on the national and international fine dining map.
Hawaii Regional Cuisine utilizes Hawaii’s freshest ingredients of all varieties and incorporates them into wonderfully creative and beautifully presented dishes. Not only has Hawaii Regional Cuisine taken Island dining to the highest possible level, it’s also established Hawai‘i-grown products as among the finest in the world.
Previously, Hawaii’s food scene entailed sliced pineapple on a pizza. In her cookbook, The New Cuisine of Hawaii , noted food writer Janice Wald Henderson wrote, "Visitors had their choice of dining in pricey restaurants on frozen, shipped-in, picked-before-it’s-ripe food, or in tourist establishments that distorted traditional Hawaiian cooking for Western tastes. Small wonder that Hawaii had long been regarded as a paradise for beaches but a wasteland for food."
