'Freedom food' falafel fits into Hanukkah
By JOAN NATHAN Posted: Dec. 4, 2004 Several years ago, Natan Sharansky, the former refusenik who was in Soviet prisons for eight years and is now part of the Israeli government, told me he considers falafel the food of freedom. "The first day I came to Israel a journalist asked, 'Do you like falafel?' When I told the reporter that I had never heard of falafel in the Soviet Union, the next day a big bag of falafel appeared at my doorstep from a neighbor who was a falafel man." Advertisement
I am often reminded of that story of falafel, the crisp deep-fried patty or ball, when I plan my menus for Hanukkah, the Jewish holiday that starts Tuesday evening. First I try to unravel layers and layers of history.

Dear Friends, The High Holy Days are relatively late this year which gives all of us a little more time between the beginning of the school season and the planning and preparation for the Holidays.  This year many of us have been pre-occupied with the lives of our fellow Americans devastated by Hurricane Katrina.  Here, in Dallas, we are exposed directly to the emotional and financial toll it has taken on many.  For me, it has been heart-wrenching as well as heart-warming to be able to give a hug to an evacuee, listen to their stories that they repeat hoping that one recounting might make sense to them,  or help them search through the vast piles of food and clothing generously donated by Dallas citizens of all backgrounds.  The rapid response of Dallasites opened many questions about the slow response at the beginning of this tragedy in New Orleans.  But the true meaning of Tikkun Olam –repairing the world- has been exercised here as well as all regions of our country making me very proud to be a Jewish- American. During the holidays when we are surrounded by those we love, let us thank God for all our blessings and pray that this year more people will be written in the book life and spared from tragedy here and abroad.

Here’s a do-it-yourself party for Hanukkah
By PHYLLIS GLAZER Associated Press TEL AVIV, Israel (AP) — On the evening of December 7, Jewish people all over the world will celebrate Hanukkah, the Jewish Festival of Lights, commemorating a miracle that occurred in Jerusalem back in the winter of 165 B.C. An eight-day holiday, Hanukkah recalls the time when the Syrian-Greek king Antiochus set out to destroy the religious and ethnic identity of the Jewish people under his control. He plundered the Great Temple in Jerusalem, and ordered pig sacrifices (which of course were forbidden to the Jewish people) all over the country. But in the outskirts of Jerusalem, the priest Mattathias vowed never to submit. He escaped to the hills with his five sons and 800 volunteers, to wage war for religious freedom. Despite their relatively small number and the hardships of winter, the guerrilla warriors, known as Maccabees (their name is an acrostic of the Hebrew “Mi Kamocha B’Elim Adonai” — “Who among the mighty is like you, God?”), proved victorious and succeeded in liberating Jerusalem from the despot.

    2 potatoes peeled
    1 small onion peeled
    2 eggs
    3 tbsp. milk
    2 tbsp. melted butter
    1/4 cup flour
    1/2 tsp. salt
    black pepper
    butter, for frying
    sour cream and/or applesauce Directions:
  • Grate potatoes and onions into a medium-sized mixing bowl. In another bowl add eggs, milk and melted butter and blend. Then add flour, salt and pepper and process to mix.

    Pot Roast with Savory Vegetable Gravy
    (makes 8 servings)
    olive oil cooking spray 4-pound (1.9 kg) rump roast large onions, 1 pound (480 g) total, sliced garlic cloves, peeled whole clove bay leaves, broken in half teaspoon (5 ml) crushed dried thyme carrot, 2 ounces (60 g), peeled and sliced rib of celery, 2 ounces (60 g), chopped cups (720 ml) fat-free low-sodium beef broth freshly ground pepper Preheat oven to 325°F (160°C). Lightly spray an oven-proof covered roasting pan with cooking spray. Brown the roast on all sides over medium-high heat. Surround the roast with the onion and garlic. Add the whole clove, bay leaves, thyme, carrot, celery, and beef broth. Bring to a simmer on top of the stove. Cover and place pan in the oven. Roast until the beef is fork tender, about 3 1/2 hours. Remove the roast and let stand on a carving board, covered with a sheet of aluminum foil for 15 minutes before slicing. Transfer the vegetables and pan juices to a large strainer; discard the clove and bay leaves. Using the back of a large spoon, force the vegetables through the strainer to thicken the pan juices to make a gravy. Remember to incorporate the brown caramel colored bits around the sides of the roaster. Remove and discard any visible fat. Place the gravy in a saucepan and heat, stirring until thickened and smooth. Season to taste with pepper. To serve, slice the pot roast into thin slices against the grain and nap with the gravy.

"Hanukkah is one of our more minor holidays," said Raye Coffey, Monroeville. "Potato latkes are the featured dish on most Jewish menus at this time."
