This week's Cookie of the Week features Hanukkah Cookies. Hanukkah is an important Jewish holiday which is celebrated in December for 8 consecutive days. Along with some history, we offer up a great bit of Jewish Cuisine A Bit of History Hanukkah Cookies
Yield: about 6 dozen What You Need:
  • 1/2 cup shortening 1 cup sugar egg 1/2 cup orange or pineapple juice 2 teaspoon baking powder 2 1/2 cup flour + extra for rolling
What You Do:
  • In bowl, add ingredients in the above order , mixing well after each addition (you can do it in a processor too). Using half of the dough roll on a floured board. Cut into holiday shapes-dreidel, star Can decorate (lion eye, dreidel lines, candle tip, etc.) with chocolate chip, raisin, sprinkles, colored sugar, etc. Bake at 325 degrees Fahrenheit for 10 minutes or so till lightly browned. They firm up a bit more as they cool.
    Freeze well, but they won't last that long.
    NOTE: If making different shapes, try and make all of one shape on a tray because the different sizes don't bake at the same rate; some will burn and others will be underbaked.

    Latkes are a traditional symbolic food served for Hanukkah. They are usually made of potatoes and sometimes cheeses and they are fried in oil. In 165 B.C. when the Jews, led by Judah the Maccabee

  • If possible, print out these directions. Read them through with your child before you begin.
  • With your child, gather everything you'll need.
  • Help your child wash and grate the potatoes, put them in a bowl.
  • Grate the onion and combine with the grated potatoes in the bowl.
  • Invite your child to add flour and eggs to the bowl. Stir.
  • Coat a frying pan with oil. Carefully drop small tablespoons of the potato mixture into hot oil.
  • Loosen the latke with the spatula to keep it from sticking.
  • Show your child how to turn over the latke to brown the other side.
  • Carefully remove the pancakes and drain them on paper towels.
  • Serve with applesauce and/or sour cream.

    [60 Minutes] Put a little spice into your holiday as you make these special cookies.
    You'll need:

  • Together, wash your hands before cooking.
  • Invite your child to help you thoroughly mix together margarine and brown sugar in a large mixing bowl, with an electric mixer.
  • Beat in honey and egg until well mixed.
  • In a second bowl, your child can help combine flour, baking soda, salt, and cinnamon. Help with with the measuring. Have him add this to the honey mixture.
  • Beat on low speed until well blended.
  • Cover the dough with plastic wrap and refrigerate at least 1 hour or up to 3 days.
  • After refrigerating the cookie dough, preheat the oven to 350 degrees F.
  • Place a portion of the dough on a flour-covered cutting board.
  • Sprinkle some flour on the rolling pin, and show your child how to roll out the cookie dough to 1/4-inch thickness.
  • Together cut out cookies using holiday cookie cutters.

    Taking the Christmas out of Hanukkah
    As American Jews, we face the challenge of preserving the Jewish ideals of Hanukkah in the midst of a commercialized Christmas-oriented society.

    The following article is reprinted with permission from Almost every year, Hanukkah falls very near to Christmas, which always leads to feel-good articles and sermons about the similarities in spirit between Judaism and Christianity. Interfaith families, especially those with children, will celebrate both as a way of bringing their families together. And the marketing, sales, and merchandising will further solidify the linking of these two holidays in the American popular consciousness. The American Jewish community, a mere 2.7 percent of the U.S. population, has watched with amusement as our minor festival has increasingly been elevated to near-equal status as Christmas. We have seen this trend as a validation of not only our buying power, but of our political and social standing in society. As generation after generation of American Jews watched America convince itself of our growing social importance, however, we failed to understand the dangers inherent in our tacit approval of the Christmasification of Hanukkah. For the sake of both Judaism and Christianity, American Jews must draw a line in the spiritual snow. The danger to both Judaism and Christianity comes from the rabid materialism of the United States, where the commercialization of our winter holidays has transformed and bastardized both.

    • 6 medium-sized russet potatoes peeled
    • 2 carrots peeled
    • 1 onion
    • 1 clove garlic minced
    • 2 eggs beaten
    • 3 tablespoons vegetable oil
    • 2 teaspoons salt
    • 1/4 cup whole-grain bread crumbs
    • 3/4 cup powdered non-fat milk
    TOPPING:
    • 1 cup cheddar cheese grated
    • 1 cup plain yogurt or sour cream
    • fresh chives for garnish, optional
    Directions: Grate vegetables; drain off liquid. Stir in remaining ingredients except topping, adding powdered milk gradually to avoid any lumps. Spread into greased 7-in. x 11-in. baking pan. (Can also use 9-in. square pan with additional baking time.) Bake at 350° for 40-60 minutes. When kugel is nearly done it will test dry like a cake and the edges will be brown. Add grated cheese and return to oven for 5 more minutes until cheese melts. Remove from oven; cut into 2-in. squares. Top each square with about 2 tablespoons yogurt or sour cream. Garnish with fresh chives, if desired.

    What's Cooking for Hanukkah by William S. "Sandy" Kaplan So I'm a Jewish kid growing up in the heart of Catholic country and all my friends are talking about what they're having for Christmas dinner-Roast Turkey with Cornbread Dressing, Baked Sweet Potato's with Marshmallows, Pecan Pie and the like. When it comes around to me I'm talking about Potato Latkes (potato pancakes), Kugel (baked noodles with raisins, walnuts, brown sugar), Roast Chicken, Smoked Salmon and Hamantaschen (yeast dough cookies with fruit or poppy seed filling). There are a lot of similarities in ethnic cooking, your own Momma or Grandma was the best that ever was, whether you're Jewish, Italian, Irish, Cajun or whatever and her kitchen always smelled wonderful. The most amazing thing is that you always knew what you were eating, if it had chicken in it, it looked like chicken, it smelled like chicken and it tasted like chicken, no fancy-shmancy exotic stuff was to be found. There was no nouvelle anything, just good solid stick-to-your-ribs food. With Jewish food you know what you're eating, it's very simple fare, it's tasty and there is always plenty of it, and it always, always makes you happy. Sometimes it even makes you well when you're sick, as in the case Chicken and Matzo Ball Soup!

    Potato Latkes
    A delicious traditional Hanukkah dish.
    Children can help with the preparation but

    Ingredients:
    2 cups peeled and shredded potatoes 1 tablespoon grated onion 3 eggs, beaten 2 tablespoons all-purpose flour 1 1/2 teaspoons salt 1/2 cup cooking oil Cooking Instructions: After grating the potatoes, drain as much of the liquid as possible. A salad spinner works well. In a medium bowl stir the potatoes, onion, eggs, flour and salt together. In a large heavy-bottomed skillet over medium-high heat, heat the oil until hot.     A Low-Fat Celebration of Oil
    By Joan Nathan Hanukkah starts this year at sundown on November 29. It's a celebration of religious freedom, but also a celebration of oil and the miracle that provided light for the Jews for eight days instead of just one. It is the oil, not the commonly eaten potato latkes (pancakes) or soufganiyot (jelly doughnuts) that is symbolic at this celebration of freedom and festival of lights. The Importance of Oil Celebrating oil as a symbol of religious freedom dates back only twenty-two centuries, to 165 B.C., just after the Syrians had raided and damaged the Temple in Jerusalem. The Maccabees, the small Jewish army that had miraculously defeated the large Syrian one, returned to the Temple to repair it. According to the traditional story of Hanukkah, the Maccabees found only enough sacred oil, olive oil specifically, to light the menorah for one day. But, somehow, one day's oil supply lasted eight, and thus the oil is now symbolic of the cleansing and rededication of the Temple in Jerusalem. Hanukkah is celebrated for eight nights to commemorate this miracle. A Celebration of Light Each night at sundown a candle placed in a menorah, from right to left, and lit by the shammas (helper candle), from left to right, until the eighth night when the eight-candled menorah is aglow. Many Jews rejoice in their freedom to be able to celebrate without fear of persecution by giving gifts and eating foods fried in oil such as latkes and jelly doughnuts. Were there jelly doughnuts in ancient Israel? Were there potatoes? Of course not. Jelly is a modern ingredient and potatoes did not even hit the holy land until the latter half of the eighteenth or nineteenth century.
