You may not realize that the Jewish holiday of Hanukkah celebrates, among other things, freedom from religious and ideological persecution, freedom of belief, and the right to worship in a 'temple' or sacred space of one's choosing. It also celebrates a very special miracle that occurred in 167 BC. A Lotta Latkes!
To recall the miracle of oil, Jewish people eat foods cooked in oil, such as latkes, for all 8 days of Hanukkah. Give your party guests a treat and make a variety of tasty latkes using vegetables that they might not expect, like zucchini, sweet potato and carrots!
Latke making can be a long process because it is necessary to fry every pancake. To keep all of the latkes hot and crisp, keep your already-fried latkes warm in a 200 degrees F (100 degrees C) oven while you finish frying up the rest of the pancakes! Another possibility (if you would rather spend time with your guests than fry latkes throughout the entire party) is to make the latkes well in advance latkes freeze beautifully when layered (in an airtight container) between parchment or wax paper! You can freeze the latkes up to two weeks before the holiday and pop them (on a baking sheet) into a preheated 350 degrees F (175 degrees C) oven for 15 minutes, or when hot and sizzling be careful not to burn them! When reheated this way, the latkes are slightly less greasy as some of the grease has been baked off!

The Eight-Day Festival of Hanukkah When the Greeks ransacked the temple in Jerusalem (165 BC) and put up idols, the Jewish people rebelled. The Jews under Judah Maccabee gathered an army of farmers and shepherds. They fought back Antiochus the Greek leader. When the Jews regained the temple, they only found one small container of oil. There was only enough oil to light the menorah for one day. The oil miraculously lasted for eight days and nights. Lighting a menorah, playing with dreidels and eating potato pancakes and donuts are traditional ways to commemorate the miracle of Hanukkah. Every night, Jews light a candle on a nine-branched menorah. People light one candle on the first night and an additional candle each following night. Fried foods like potato pancakes (latkes) and doughnuts are special treats this time of year. Parents give presents or traditionally coins and nuts to children. Children play the dreidel game with Hebrew letters on a spinning top.

Mrs. Polakoff's Hanukkah Cookies Recipe

Makes 4 dozen large cookies
RECIPE INGREDIENTS
2 1/2 cups all purpose flour
1 cup sugar
1 tablespoon baking powder 1/2 cup vegetable oil 3 large egg s 1 teaspoon vanilla extract RECIPE METHOD Sift flour, sugar and baking powder in medium bowl. Line large rimmed baking sheet with parchment paper. Blend oil, eggs and vanilla in food processor. With machine running, slowly add sifted ingredients. Using on/off turns, pulse until dough begins to form a ball. A humid or rainy day may require additional flour. Add no more than 1/4 cup. Transfer dough to floured work surface; form ball. Divide dough into 3 equal pieces. Let rest 10 minutes. Preheat oven to 325 degrees F. Roll out 1 dough piece on a lightly floured surface to 1/4 inch thickness. Using assorted cookie cutters, cut dough. Transfer cookies to prepared baking sheet, spacing 1 inch apart. Bake until cookies are golden brown around edges, about 12 minutes. NOTE: If you wish to decorate the cookies with colored sugar or sprinkles, press them into the dough with a flat spatula or brush the tops with an egg wash, then decorate the cookies and bake them. To prepare an egg wash, mix 1 egg plus a teaspoon of cold water together in a one-cup measure. Remove and cool on a baking rack. Store in an airtight container.

This usually corresponds to the month of December. This festive occasion usually lasts for about eight days, and each one is filled with songs, games, food, and the lighting of the Hanukkah candles. Hanukkah reminds people of the miracle which took place in Israel over 2,000 years ago.
THE STORY OF HANUKKAH A story to read King Antiochus of Syria was not a Jew, and he was very cruel and unkind to the Jewish people. He wanted the Jews to worship the Greek god Zeus, and wouldn't let them worship their own god at their temple in Jerusalem. This made the Jews very angry, and they decided to fight the Syrian King. Even though they were greatly outnumbered they won their battle. When they returned to their temple, they found that the army had made a terrible mess. So they had to clean it in order to make it holy once again. They did this by re-lighting the temple's candle called a Menorah. This candle was really meant to burn all the time. They could only find one jar of oil to light the flame, and this they thought would only last for one day. But instead it kept the lamp burning for eight days and nights. And so Hanukkah celebrates this miracle.

Hanukkah Doughnuts Presented by Becky Low on December 14, 1998
"Hanukkah celebrates the time in Jewish history when there was enough oil to light the temple lamp for 1 day, but miraculously the lamp stayed lit for 8 days. The miracle is remembered by lighting the Menorah for 8 days and the symbolic use of oil in the family meals. Other than latkes and doughnuts few foods are associated with Hanukkah. Following are 2 variations of Hanukkah doughnuts. " Variation 1: Jelly Filled Doughnuts Ingredients:

  • 3/4 cup milk
  • 2 tablespoons butter
  • 1/4 cup sugar
  • 2 tablespoons active dry yeast
  • 2 eggs
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 3 cups flour
  • 1/2 cup jam, or preserves
  • oil, for frying
  • powdered sugar Method: Scald milk by heating almost to a boil. Add butter and sugar. Cool to lukewarm. Add yeast and stir to dissolve. Beat in eggs, salt, cinnamon, and 1 cup flour. Stir in enough more flour to make a soft dough. Knead dough on a slightly floured surface until smooth and elastic. Cover and let rise until double in size. Knead out excess air. On a lightly floured surface roll dough to 1/8 inch thick. Cut into circles 2 inches in diameter. Allow to rise slightly (about 15 minutes). Heat 2 inches of oil to 375 degrees. Place 1 teaspoon jam or preserves on each circle of dough and shape the dough around the jam, completely sealing jam inside. Carefully place doughnuts into hot oil, brown on both sides. Drain on a paper towel, then sprinkle with powder sugar. CAUTION: Jam inside doughnut will remain hot! Makes 24

I start making latkes potato pancakes a week before the first night of Hanukkah, the Festival of Lights. We decorate our house with white and blue streamers and take out the menorah a nine-branched candleholder on the first night. As soon as everyone is home each evening of the festival, we gather around our menorah. We sing the blessings and everyone gets a turn to light a candle. Like Jewish people around the world, on the first night we light one candle (and the Shamash, the helper candle) and every night we add another one. On the last night, we light eight candles. We play a spinning top game of dreidel, in which we win pennies or buttons.

    Secondary Subjects - Science, Language Arts Grade Level - 3-5 Materials: The Borrowed Hanukkah Latkes by Linda Glaser, Latke recipe (and ingredients for Latke recipe - see below), hot plate, large bowl, large non-stick skillet, spatula Lesson 1. Before reading the book, ask your students if any of them know what Latkes are. Give students time to guess or explain. 2. Read the story The Borrowed Hanukkah Latkes by Linda Glaser to the students. 3. Explain to the students that they are going to be making Latkes of their own today. 4. Begin cooking lesson by giving everyone a copy of the Latke recipe. (see below) 5. Assign tasks to everyone (4 people peel potatoes, onions, 4 people grate the potatoes, etc...)
