It is comfort food in the truest sense of the word. There is no arrogance or pretension associated with Greek gastronomy. Simply history and tradition. Greek specialties have arisen from the bounty of foods that grow on the sun-kissed land, especially olives, lemons, nuts, tomatoes, and grapes. Greek olives, of which there are many varieties, adorn salads, meat and fish dishes, and even hearty breads. Olive oil, of course, is the primary fat used in Greek cooking. Ripe lemons are used to add tang to both sweet and savory delights. Pine nuts are used particularly with pilafs, appetizers, and meats. Almonds and walnuts are used generously in desserts. Fresh tomatoes are an important part of meat and fish preparations, often used along with spinach and eggplant. Tomatoes also make perfect salads, served simply with olive oil and traditional aged red-wine vinegar. Grapes are not only used in cooking and for wine, but grape leaves are used to wrap a variety of fillings for unique appetizers.

Greeks cook with what the season offers. Depending on the time of the year you might see women in the mountains with a small knife cutting wild vegetables for stuffing pitas, the wonderful cakes, or you may see them after the rain, collecting snails in straw baskets. Only fresh ingredients of the best quality are good enough. The result ensures that each dish is a hymn to taste.

by Mirsini Lambraki Sunday morning, summer, I find myself in my bed and here comes besetting the usual question mixed with a sweet concern: "What are we going to eat today?» Then my mum’s beloved specialty storms the bedroom. It livens and emerges fresh and familiar from the depths of my childhood. A soft layer of potatoes, on top of it laid down, nonchalantly, thick slices of freshly fried eggplants in a tight embrace with sizzled lamb or beef minced meat and all these under a light, crispy, velvety veil of béchamel sauce. Cosmopolitan, common talk among friends, in some cases a bit “abused”, moussaka, for years now, has found itself in the first place of the Pantheon of so called "national dishes” of Greece and Turkey along with souvlaki (skewer), tzatziki and Greek salad. However, as is the case with all things, the essence of dishes appears to content neither the uniformity of national dishes, nor the determined biases, since it has been proved in our everyday life that cooking is a live and vibrant part of every country that develops not only in savour but also culturally as well. First of all to the big disappointment of Greeks and Turks, the word "moussaka" is of Arabic origin!!

These basic foods celebrate the quality of the primary ingredients.     PRINT PAGE EMAIL ARTICLE ) Font ( ) Font A Journey Through Greek Cooking, With Grandmother as Guide by Christopher Petkanas International Herald Tribune Friday, Aug. 9, 1991 TARNISHED, retired from use, and with the dignity of an archaeological find uncovered at some exotic dig, my grandfather's brass briki hangs from a hook in my aunt's kitchen in Glen Head, Long Island. A cylindrical pot with an open mouth and a long handle, a briki is the only acceptable vessel for making Greek coffee. According to my grandmother, who sailed to New York in 1909 at age four from Kozani in northern Greece, the thick, foamy brew may be prepared sugarless, moderately sweet or very sweet. A year ago I knew that along the Dordogne they eat lamprey in blood sauce, but rather embarrassingly for a food writer raised in a Greek-American household, I couldn't have said what a briki was. My kitchen French was good because "At Home in France," my book on eating and entertaining in private French houses, was about to be published. Vaulting from Brittany to Provence, the photographer Jean-Bernard Naudin and I had documented the culinary customs and quirks of winegrowers, poultry farmers, cheesemakers, countesses, bull ranchers and housewives. We recorded the laying of tables, the preparation of meals, as well as other aspects of the home relevant to the guest. My idea was to show that the food, the table at which it is served, and the larger setting provided by the house achieve a union that is peculiarly French. When I turned in my manuscript I could make my way up and down the family trees of the 18 people in my book, but I couldn't have found Kozani on the map.
